Piña Colada Jello Shot Recipe:
🍍 1 cup pineapple juice
🥥 1 cup cream of coconut
🍍 1/4 cup condensed milk
🥥 1 cup white rum
🍍 2 packets unflavored gelatin (0.25 oz each packet)
🥥 Jar of Maraschino cherries
🍍 Coconut cooking spray or avocado oil
🥥 Whipped cream
🍍 Mini shot cups
🥥 Mini Puerto Rican flags
🍍 Palm tree umbrellas
Directions:
Chill the rum for a few hours before making your shots. Add all the liquids except for the rum to a bowl and mix well. Sprinkle in the unflavored gelatin and mix well. Heat the mixture in the microwave for 1 minute. The mixture should be warm enough to dissolve the gelatin but not boiling. You can also do this on the stovetop over low heat (just make sure it doesn’t boil). Add the chilled rum and mix well. Pour the mixture into the cups and chill for 3-4 hours. Top with whipped cream, a cherry, and flag/palm tree umbrellas!

Pro Tip: You may be asking, “How do you eat these?” You can either use the toothpick of the flag/palm tree umbrella to loosen the sides, or spray the inside of the cups with coconut oil, and the jello slides right out.

Yields 18-24, depending on the size of the cups you use.

Mix 1 cup boiling water with 1 cup of Don Q rum (any flavor jello or alcohol you prefer). I found this guava gelatin at Walmart! For the festive poinsettia, fill the mold with red chocolate , freeze for 15 minutes, pop them out, and paint the center with edible gold luster dust! Coconut Jello Shots Recipe

Ingredients:
- 1 box (3oz) coconut jello https://mavely.app.link/e/EgacA1pc5Yb
- 1 tsp unflavored gelatin
- 1 ½ cups boiling coconut milk
- 1 cup of rum (choose from coconut-flavored, white, or dark rum)
- 2 tsp ground cinnamon
- 1 tsp pumpkin pie spice (this replaces the traditional tea in Coquito, but won't impart a pumpkin flavor; it includes a blend of spices like cinnamon, nutmeg, allspice, cloves, and ginger)
- 1 tsp vanilla extract
- Whipped cream for topping
- Cinnamon sticks for decoration

Instructions:
1. In a mixing bowl, combine the coconut jello with the unflavored gelatin, mix together.
2. Pour in the boiling coconut milk and stir until the jello dissolves completely; add the cinnamon and pumpkin spice and mix again. The mixture may appear slightly chunky at this stage.
3. Allow the mixture to cool for about 10 minutes before incorporating the rum, then stir thoroughly to combine.
4. Distribute the mixture into mini cups and refrigerate for at least 4 hours until set.
5. When ready to serve, top each jello cup with whipped cream, a sprinkle of cinnamon, and a cinnamon stick cut in half for garnish. Enjoy your delicious treat!
