Who comes to mind when you hear Taps or you see an American flag folded? For me, today, it was my Dad and grandparents.

Veterans Day is not a passive holiday for those of us who have known a man or woman that’s served the country. Whether or not they were deployed, they offered a sacrifice beyond what many of us will ever understand. Serving something much bigger than yourself is incredibly honorable. Behind God, our country is the most noble of causes to serve. Every freedom, every privilege we take for granted comes on the backs of men and women who ran toward danger with duty and selflessness. Thank you for your service. One day isn’t enough to give you the honor you deserve.

Happy fall! One of my favorite things is homemade hot chocolate and I’ve got a few tricks of my own…
-Espresso/instant coffee to boost the chocolate flavor
-Whole milk or heavy cream to add smoothness
-Add flavors like mint, peanut or caramel to elevate the flavor (coffee syrups are great for this)

Friends, you may notice I’ve been missing from your morning show. I’ve had some serious health challenges recently and I made the difficult decision to leave KY3. They have been incredibly supportive during this difficult time and I have nothing but gratitude for each person I worked with. I hope you’ll continue to trust them for your news and early morning entertainment 🙂.

In the meantime, I will be home, focusing on my health. It’s possible you may see me again someday. Right now I’m just staying positive, looking forward and taking care of me. Thank you for your support these last 2 years in Springfield.

Pumpkin spice season is upon us. I made homemade pumpkin pop tarts (that are really more of a strudel) yesterday. Here’s the recipe:

2 sheets puff pastry
Put an egg wash around the edges of the sheets

Mix 1/2 can pumpkin puree
Tsp vanilla extract
Brown sugar (I mixed a few tbsp brown sugar with a few tbsp Stevia)
Pumpkin spices (allspice)

Spread the pumpkin mix on a pastry sheet, cover with the other sheet, use a fork to press the edges

Bake based on the pastry sheet instructions (I did about 12 min at 450)

Make a frosting of butter, powdered sugar, vanilla and allspice
