We used a recipe from @kingarthurbaking, resting the bread overnight in the sourdough bowls to proof, and then turning them out and baking them the next morning in our Dutch ovens.

Love the bread mats that I used from @rosehillsourdough, made transferring the bread from proofing to the Dutch oven so much easier! Loved the crispy crust we got on the bottom (though they were a little deformed, weโll work that out next batch.

Heather and Ray from Foodie McFooderton Club had been talking up Sushi Yama Travelers Rest for ages and we finally snagged a coveted sushi bar seat for four.

Here, we got to interact with the head sushi chef, Jason; the "sauce boss", Chris (who you see making our Iron Wonton Cups about halfway through the video); and spoke more with the owner's son, Brian, who helps manage the restaurant.

We didn't have an "official" omakase experience, as most folks that do are regulars and work up to something like that, akin to their infamous "Tuna cutting" events. However, since Heather and Ray come so often, we did get to sample some special, off-the-menu omakase treats. Some of the pictures in the video include their Waygu beef rolls; Sushi with ginger two ways (pickled & shaved fresh); and we ended with a Japanese strawberry (a hard-to-find item for this time of year).

This was absolutely to die for and we loved the whole experience!! Would love to come back again for a true omakase, to try their new(-ish) yakitori stand next door at The Community Tap, or get some more sake or ramen to mix it up.

When I was a kid, one of my favorite memories was spending time at the @bostonchildrensmuseum with my godparents, my two cousins, and little sister. We would spend hours climbing in and out of giant anatomical body parts, play with PBS characters, and explore life-size interactive exhibits. Getting to tour inside of The Childrenโs Museum of the Upstate was like stepping back into my childhood! ๐ฅฐ

The newest big exhibit this year, called Wings ๐ชฝ in The Air, allows little ones to take a journey in an airplane, pilot and play in a cockpit, help build circuits, test out the jobs associated with flight, and dress up as different airport jobs. The current destination is Columbia, where kids can learn about the culture, the money, and the people. Flight destinations where the exhibit goes to plan to change annually! The exhibit officially opens Saturday, May 25th, and thereโs a QR code to scan where you can win two free tickets to Avelo Airlines. ๐

Lastly, I included the pieces we brought home this year from @sarahroselyons (a Greenville native) and a cool shelf from @studio_of_steve_uren (from a Grand Rapids, MI). Weโve already started framing Sarahโs prints and theyโll be in matching frames as soon as we finish the set! The shelf is already hung in Jamieโs office.

10 medjool dates
1 cup toasted coconut flakes
Hu Dark Chocolate Gems (it took ~1/4 cup)

We made it our own by using: โจ๐ซ Enjoy Life Allergy-Friendly Dark chocolate chips (we couldnโt find Hu Gems at our grocery store in the OBX over Easter weekend)โจ๐ด Five more dates, as ours were a little smaller than the Medjool dates called for in the recipeโจ...
DIRECTIONS:
1๏ธโฃ Pit your dates (if not pitted already) and soak them in warm water for a couple minutes to soften.
2๏ธโฃ Process the dates in a food processor or small immersion blender (we used a Ninja Nutribullet blender after a few failed chopped attemps lol). Add the water you used to soak the soaks in while processing and scape down the sides until the mixture is smooth.
3๏ธโฃ Stir in the toasted coconut. Roll the mixture into balls and place them on a lined baking sheet. Flatten with a spoon, then poke holes in the center (optional).
4๏ธโฃ Place the cookies in the freezer while you melt your chocolate. In a microwave, zap in 30 second intervals, stirring after each removal, only until the chocolate is melted (donโt overdo it). โจ5๏ธโฃ Remove from the freezer and dip the bottom of each cookie in the melted chocolate using a spoon or fork (we used our fingers at first, would no reccomend lol). Drizzle additional chocolate on top. Place back in the freezer for about 30 minutes. Makes approximately 8 date bites!

Overall thoughts - As a seven year Girl Scout in a previous life, these were branded as โBetter for you Samoasโ, yet were missing two of the core flavor components of them - caramel and shortbread. Yes, dates can have caramel notes, but to me, these had so much dark chocolate that the date flavor almost got lost and it became more of a textural compontent. We've expanded our seeds under the grow lights to include new herbs, more peppers, some experimental lettuces, tomatoes, and more! We definitely learned that you need to give your seedlings plenty of time outside (upwards of two weeks depending on the plants) so they don't get sun bleached when being transferred into the ground. We gave them some time outside before transferring our first batch, but certainly not enough, as you'll see with some of our repeat growing seeds, or the plants out near the raised beds.

The @peterkernlibrary, hidden inside the @theoliverhotel, can be accessed during limited hours from inside the lobby (youโll need a passcode of course ๐) or through a hidden door in the alleyway down the street.

The Oliver Hotel is the former site of Kerns Bakery, which used to be a confectionery, ice cream parlor, and meeting hall for the Oddfellows organization in 1876. A portrait of Peter Kern still hangs in the library with various other books, and food related memorabilia.

I decided on the Melisandre 1998. A beet forward drink, which contained Monkey Shoulder Scotch, lemon juice, beet syrup, roasted beet, and an egg white. Jamie chose the PKL old-fashioned, with rye whiskey, turbinado syrup, orange bitters, angostura bitters, luxardo maraschino cherries, and a flamed orange peel. ๐ฅ I loved my drink, as it was not too sweet, and the beets lended a really nice earthiness that cut through the peattiness of the scotch.

The only thing that took us out of the speakeasy experience was the early 2000s to 2010s music. Not what we we thought matched the vibe. ๐ But, we had to remember that we were in Knoxville, which is essentially a college town, so they were probably catering to their audience.

The reason I checked out the Magnetic South Brewery GVL version was to visit Sarah from The River Goat. I have super sensitive skin and my go-to body wash was discontinued, so I was searching for something that didn't make me break out. Unfortunately, I canโt have anything with fragrance/parfum. I had tried everything from Cetaphil to Cerave, but I figured going back to limited ingredients would be ideal. I cannot say enough how WONDERFUL Sarah and her goat's soap are!!! I took a shower and it was amazing - no rashes, burning, itching - nothing. I was so surprised and so happy. ๐ฅน I cannot thank her enough. Goats for the win yet again ๐

It was also only 20 minutes from downtown Knoxville and 15 minutes from nearby Sevierville, so perfect to be close to all the places we wanted to get to but really nice to come back to if we wanted to enjoy unwinding and the peace and quiet with a good book or card game (which we did ๐).
