Day 7! So exciting!

The red has now doubled 3x in a row and the rye 2x in a row with hard white just about doubling 2x. Einkorn is a little slower now. I think it may need more flour since the hydration level of that flour is less in general.

Even my sluggish gifted starter is finally getting going! And I though I had broke it lol!

I am so grateful today!

We have been looking for a Dutch oven (and this is the biggest we can go in our oven) and Allen found this one last night on marketplace.

They wanted $45. Said it was new but realized it was too small but Amazon won’t accept returns (which is true, a common issue when buying this on amazon).

I usually always ask for a little less than what people ask for, I mean I did learn from the best in Hong Kong 🤣. But decided against it bc I felt bad they were already losing money on this. And they had gone out of their way to check measurements since the Amazon listing is filled with issues.

We get there and she hands me a cloth bag with it in there and says this is for you! I’m like “great! Thanks! What’s your Venmo?”

And she said she was GIVING IT to me! 😳

I was like wait, what?! And she told me she actually had around 100 messages asking to buy this pot but every single person asked to go lower on the price and I was the first person that didn’t. So they wanted to gift it to me instead!

I about cried y‘all. This is no small amount of money for us right now.

Then I get home and found she also gave away a bag full of fairly expensive skin care stuff too! All unopened and asked nothing in return! 🥰

Morning if day 5 and the power is out for the entire area so can’t continue the experiment right now (we were supposed to go to two times a day starting today). But these day 4 results are blowing me away! Completely unexpected. Though I do realize this is considered a “false rise”.

The first one is a starter given to me by a friend that I’m switching over to fresh milled flour. Generally a mix of rye and hard red. It’s slow going I usually do that one mid day and the experiment ones at night and it’s not till night time it starts to rise.

We’ll see what flour makes a sourdough starter fastest! My bet is on rye and he says hard red lol.

Someone remind me NOT to try two recipes that require extensive rolling in one day again! I’m exhausted and I spent about 9 hours actively baking today.

24 banana muffins, 24 hamburger buns, 3 16x12 trays of cheez-its (with more to be rolled out another day), 10 tortillas all rolled by hand, and a double batch of my no-knead waiting for the oven tomorrow bc I’m too tired and John needed to get to bed.

Decided I need a tortilla press. So much easier and faster and consistent. Plus then I could use it for crackers, empanadas, and even pasta till we get a pasta machine.

No pics bc I’m exhausted 😴 why does everything take me like 5x longer than a normal person?!

It’s so COLD!

John woke up early to go play with friends before they leave today and while I did convince him to wear a long sleeve shirt and pants vs his no sleeve shirt, a jacket was not in the cards…

Until he came running back and hour later and we had a family cuddle around Duke to warm him up lol.

Now him and Allen are off to a disc golf party and it’s a bake day for me to restock our goodies!

Today’s agenda:

No knead bread (so freaking easy and yummy)

Hamburger buns (family has decided they prefer this to sandwich bread for their sandwiches)

Tortillas for tonight

Banana muffins (a staple!)

And maybe some cheese-its!

Anything else I’m missing 🤪

John created his own creature today and it’s life cycle. He made all the colors and matched them himself!

It’s called a wormy-de-worm and it lives inside of trees. In a temperate forest.

It eats insects, blueberries and strawberries.

It likes to be outside and observe beautiful nature.

It’s natural predators are birds and raccoons.

You can tell it’s a wormy-de-worm by its green coat with a beautiful gold and purple button with a diamond.

Yummy hamburgers for dinner tonight!

Made the dough the same time as the pizza dough the other day so all I had to do was take it out and let it warm up before shaping. This was with hard white and spelt!

A little different than a standard bun but hard to explain what that difference is… but still so yummy!

Yum… perfect food for our rainy night! gotta love cookies and pizza that’s actually nutritious 🤣

I thought I was gonna be sharing a bread fail today.

I mean it tested me to no ends and NEVER acted like it was supposed to. Thought maybe the bread maker over heated and killed the yeast. I even called a good friend to try and trouble shoot. But I decided to try proofing and seeing what happened…

What happened was the best bread yet! It was soft and the flavor was just right! John said it was the best ever and that I was the best mommy! 😍

It made the hours of frustration and mess earlier in the day.

We also made a bakers dozen of banana muffins and over half of those are gone 🤣. It feels good knowing he can eat those and he’s getting most of his nutrients vs feeling like I’m failing him and he’s eating crap.

For dinner I made him grilled cheese with the denser loaf from earlier this week and he loved it that way so he next fail will be grilled cheese and French toast lol!

Santa came! He even wrote John a note back encouraging him to be brave and kind lol. However, he really needs to work on...

Yay for a successful bread today!

Decided to do everything by hand and tried a recipe with less ingredients since I’m now almost out of milk lol.

Had to mill more flour twice and I did too much the second time so now it’s in the freezer lol. I did just over half hard white and the rest hard red (literally not measured as I started needing more and running out of hard white).

Decided against flouring the mat and used wet hands instead and I think that helps.

Then the kid came home after first proofing and he did the rolling so maybe not as smooth as it could be lol!

But it tastes soooo good. I made some strawberry preserves in the bread maker and oh man the two equal cake level goodness 🤣.

Now I need more pans 🤣. Had to put the second half of dough in the fridge since I only have the one pan. What do I do tomorrow to be able to use it?

Well another fail and another win tonight 🤣.

To be fair I kinda suspected the fail. But I failed upwards! It’s better than it was the first time. I tried a recipe for my bread machine from some others that use fresh milled flour and this time it actually became a dough, but I think it was too dry. I could have added some water but again I’m testing and needed the control so to speak lol.

So it was really dense. but add some peanut butter and jelly and cut the crusts and it works lol! Sending it with the kid for farm school tomorrow so we’ll see if he actually eats it.

And the win was the grains in small places cheddar biscuits! Allen ate like 6 🤣!

Why did no one tell me how much easier fresh milled grain is?! Or how easy a bread machine was lol!

John and I measured all the ingredients for a loaf in the bread machine and it’s on its first proofing and this morning I experimented with some pancakes from the left over flour that I soaked overnight… and then added a bit more to this morning.

And I figured while I was at it since I didn’t have any jam I’d make some cheesecake whip cream! Waaaaaay less sugar than syrup and so light!

Y’all better be prepared for all the good stuff coming bc the experimenting has just begun! And John loves to help with the measuring lol! So yay for math done today lol!

Forgot to get a pic before it started but John had his first day of farm school today!

He had to help feed and bathe and take care of all the many different kinds of farm animals including turkeys and emus and alpacas! He said his favorite was feeding and watering the baby chicks. He said they pecked at his hand lol.

There was also lots of playing and the poor kid in this sudden Florida heat (it was 30° warmer than two days ago lol) was so hot and tired when I picked him up lol!

But after we got changed back into shorts and cooled down with a snack he said he’s excited to go back. He also said he wants to do horseback riding lol. Kid after his mother’s own heart. 😍

For a very long time I've been totally okay with the word weird to describe myself and our situation as a home educating family. According to the Oxford Languages it is derived from the Old English wyrd ‘destiny’, of Germanic origin and originally originally meant ‘having the power to control destiny’. And that's exactly what it felt like unschooling our kids: the freedom to be flexible, adapting to changing needs as they arose, to be able to tailor a life that suited us. Sometimes that meant we didn't fit in with what other people expected or wanted or thought was normal and acceptable.
