Day 6 of fusion recipes perfect for both Halloween and Diwali parties! 🎃 🪔 ✨ Today’s recipe is Black Sesame Thandai - a milk-based drink usually enjoyed during the hotter months, but that’s not stopping me from enjoying it now! It has a very unique taste with flavors of almonds, cashews, pistachios, fennel, cardamom, and saffron! I used homemade Thandai Masala (recipe from Epicurious), but you can also use store-bought. Goat Cheese, Asparagus, and Pesto Sandwich, or as I like to call it - The G.A.P. Sandwich! 🥪
Here’s how to make:
1. Heat 1 tbsp butter or olive oil in a pan. Add 1 finely diced shallot bulb and 1 crushed garlic clove. Cook until the shallots are translucent and fragrant, stirring occasionally.
2. Wash 1/2 bunch asparagus, and cut off 3-4 inches from the bottom. Discard the bottoms. Leave the asparagus this length or cut in half depending on the bread you will be using for the sandwich. You don’t want the asparagus hanging out of the bread too much
3. Add the asparagus to the pan along with salt and pepper and mix evenly. Cover with a lid and cook for 5-7 minutes. The asparagus should be cooked through but still have a light crunch. Be careful opening the lid so you don’t accidentally splash yourself with the hot water/steam
4. Prepare the bread by slicing and toasting it if you’d like. Assemble the sandwich by spreading a generous amount of pesto, then layer with goat cheese and cooked asparagus. Optional, sprinkle a pinch of Italian seasoning or sandwich seasoning and enjoy!

- Manakish - a soft Middle Eastern bread with cheese and za’atar
- Spinach & Feta Omelette - I’m usually not a big fan of eggs, but this combination was so good
- Shakshuka - a classic with some warm pita bread and potatoes
- Knafeh - a perfect sweet treat to end with

Cut a tiny portion of the bottom just so the bell pepper can stand without falling over. Stuff the bell pepper with the rice salad and top with some shredded cheese. Bake at 400 for 15-20 minutes. Panzanella Salad with Ramp Chimichurri 🍅🥒🌱
Here’s how to make it:
1. Make Ramp Chimichurri using the recipe in my previous video
2. In a salad bowl, combine 24oz sweet grape tomatoes, 5-6 mini cucumbers, 1/2 medium red onion, 3 tbsp capers, pinch of flaky salt, 4oz mozzarella pearls, and about 1/2 cup of Ramp Chimichurri. Taste test and add additional 1-2 tbsp red wine vinegar as needed
3. Chill the salad for at least 2 hours, then serve with croutons
Reuben-inspired Bagel Sandwich 🥯
Here’s how to make it:
1. Make the dressing my mixing 1/2 cup mayonnaise, 1/4 cup tomato ketchup, 1 tsp Worcestershire sauce, 1 tsp horseradish, 1 tsp hot sauce, 1/4 small finely diced yellow onion, 4 finely diced cornichons (or gherkins), 1/4 tsp paprika, and 1/4 tsp salt
2. Toast 1 bagel and cook 1 Beyond patty. Push down on the patty with a spatula to flatten it out a bit
3. Assemble the bagel sandwich - spread your favorite cream cheese on the bottom half of the bagel. Then place the patty on it followed by the dressing and some sauerkraut
4. Cut it in half and enjoy!
