It's Margherita Monday y'all! It's been a minute since I've actually made one and I'm pretty happy with my results in this one. Here's how I went about making it. Using my 67% hydration dough recipe made with KA Special Patent flour (1 hr RT, 48 hr CT), I stretched my dough to about 16", spread a thin layer of my sauce, followed by some freshly grated Pecorino Romano Pinna. I then added a generous amount of fresh mozzarella cheese, a drizzle of evoo and some additional dollops of tomato sauce and baked it at 525 on the convection setting on my baking steel for about 7 minutes. The crust was light, flavorful and perfectly crisp.

It's been a bit since I last made some New Haven style pizza, but that is past me now. I had good reason to get after it as I needed to find out, is it really the water that makes Modern A'Pizza and New Haven style pizza in general, so good? I had to try Modern's canned water to taste it for myself.
Pictured here is my classic cheese pizza. It was thin, it was crisp, it was baked to a nice char, it was so good! But was it the water? I don't know, I think you'll need to try it for yourself and be the judge.

Holy wow! I'm thrilled by how these Cinnamon Toast Crunch bacon creations came out. Thanks to Hormel for sharing their limited edition bacon with me. It's sweet, it's savory, it's unreal!
All were made with a maple syrup infused pizza dough, with the 1st being a cinnamon rolled bread, the 2nd being a parbaked pizza dough, dipped in egg and then finished on the electric skillet like you would, French Toast and lastly, a bacon focaccia bread.

We FINALLY got to enjoy some amazing pan pizzas from Vinnies in Millburn, NJ. I would best describe their pizza is Jersey's answer to South Shore bar pie. The dough is hand stretched, very thin, and then laid into a pan where it's dressed to perfection, and their combos are quite extensive and unique. We had the cheese because as you know, the cheese pizza is the true measure of quality. If the cheese stinks, chances are so will the rest. We also had a sausage before getting into some other combos, which included ricotta, long hot peppers, hot honey, banana peppers, meatball and the list goes on and on. So good! If you ever find yourself in Jersey and are looking for a unique, rarely seen style of pizza in Jersey, look no further than Vinnies Pan Pizza!

Getting into the pan pizzas of late. Here is a true "Grandma" pizza, made with the perfect combination of sliced Grande whole milk mozzarella and sliced, "lower moisture" fresh mozzarella over a parbaked 68% hydration dough, layered with 7-11 tomatoes. This 1000 gram dough ball went through a series of stretch and folds at RT and then 24 hours CT before parbaking at 500 degrees for 10 minutes and then finished for another 12 minutes. This version came out damn good, and I will be going back to it again real soon!
