What you see here is my first ever cast iron baked pizza! Holy bleep, this was fun, and I want to thank Eddie @ eddiespizza412 on IG for the inspiration. Man, was it good, and yet it really was not hard to make. Now I mistakenly baked it too low so I had to finish the base in the pan, on the stove top, but otherwise, it turned out better than expected. Add my first use of Fontanini's new hot honey sausage and damn, it was near perfect!

My first crack at making a whole wheat pizza for my neighbor who was looking for a high fiber option and with less cheese. He said it was one of the best I've made for him, and he's practically an expert. This was a 68% hydration recipe. With the whole wheat being much more dry to work with, I'd like to try a 70% hydration next time around.

Sauced with 7-11 tomatoes and layered with a light blanket of sliced mozzarella cheese. Baked at 540 on a baking steel.

It's Margherita Monday y'all! It's been a minute since I've actually made one and I'm pretty happy with my results in this one. Here's how I went about making it. Using my 67% hydration dough recipe made with KA Special Patent flour (1 hr RT, 48 hr CT), I stretched my dough to about 16", spread a thin layer of my sauce, followed by some freshly grated Pecorino Romano Pinna. I then added a generous amount of fresh mozzarella cheese, a drizzle of evoo and some additional dollops of tomato sauce and baked it at 525 on the convection setting on my baking steel for about 7 minutes. The crust was light, flavorful and perfectly crisp.

This is the last of my New Haven style a'pizza (for now). This one is a dreaded halfsie (half of this, half of that). Those that follow closely know how much I hate making the halfsie, lol. Next up, my mashed potato, bacon and scallion New Haven style a'pizza. I do things a little different in that I use a garlic mashed potato and mozzarella and a triple cheddar blend of cheeses. Baked on a baking steel @550 for about 7 minutes.

Last night was about taking out for dinner and supporting local, so I picked up an appetizer and a pizza on my way home from work over at Anthony's Pizzeria and Deli in Wallingford. It was awesomely thin, but not as crisp, albeit it was in a box to travel. It was solid and deserves to be tried again in-house. If you're in the area, be sure to check them out!

Big shout out to the good people at Perfect Crust pizza liners for their gift that will never, ever cause me to share a floppy pizza💪

Their paper liners with little embossed bumps absorb any moisture or grease and allow air flow under your crust while in a pizza box, keeping your pizza nice and crisp the way God intended it to be😁

This was not my favorite looking Sicilian I've ever made. Not even close. I had a vision when I dressed it, but it looks a little meh to me. The good news is, our friends who I delivered to thought it was incredible and sent me a message singing it's praises and that's all that matters❤️

This 68% hydration square pie was parbaked at 500 degrees with a thin coat of sauce and layered with sliced whole milk mozzarella cheese. I then finished it with generous dollops of tomato and vodka sauce.

I'll nail the appearance next time🤞
