I don't say the 🐐 for no reason!

You all know I don't jump ship to new products or competitors of sponsors; I found that if you only deal with great people, you don't have to put on a different face for a different product every other year. I will not post a product or brand I don't use and love. If I'm not willing to use when cooking for my family or customers, then I'm not posting about it to have others spend their hard earned money on... Now adding a new smoker or 2 to the arsenal never hurt nobody, but they are all different styles used to achieve different results.

My friends at Halteman have never paid me to say anything on their behalf. I use them because my buddies at referred me to them almost 5 years ago and that's all she wrote.

They pack different - fresh from the butcher, not frozen, all natural prime Angus beef that is absolutely perfect every single time I order.

They ship different - next day or 2 day air everytime and they have never missed a single delivery date in the 5 years i have been using their products. They are used for absolutely every catering event I do and that's never going to change.

They are truly good humans - I cannot tell you how many times they have helped support different events where it was to absolutely no benefit to them. We're talking celebration of life's, community OUTREACH events, families in need events, veteran/active military events, etc.

This is just an appreciation post from me to them. If you do decide to try their products hit me up and I'll let you know what my favorites are.

"badic" will also save you 15% at checkout (again I get no kickback from this, just a discount for you all to use)

In this video you'll see a detailed walkthrough of the 1904 Pits Trolley 4', step-by-step seasoning directions, and a maintenance process to keep your smoker looking beautiful for years. The processes in this video will work on any steel pit, grill, or offset smoker out there.

The Trolley is made of 3/16” steel with a fire brick lined bottom for heat retention and longevity. The pit is 4' wide and 24" deep, with the grate sitting 24" above the coal bed. Direct Heat is the best heat!

Seasoning:
Spray inside walls and grates with PAM or another food grade cooking spray. Light two chimney's full of charcoal (I prefer Jealous Devil for everything I do) and dump in the center of the pit. Place two splits on top of the fire and if using seasoned wood you can start to dry out two more splits off to the side on the fire grate. Open the vents on the front and back wide open until you get to 250 degrees. Start shutting them down, (weather conditions will impact vent settings) and hold the pit around 250-300 degrees for 2-3 hours.

Regular maintenance:
Apply grape seed oil right before a cook, (every 2-3 cooks) to protect the outside from rust. Build a fire and cook as needed for the cook at hand and the rest is science.
