250ml cold coffee
250g dark chocolate, chopped
250g milk chocolate, chopped
100g unsalted butter
200g malted milk biscuits, roughly broken
100g mini marshmallows
100g mixed nuts (hazelnuts, almonds, macadamias)
100g Maltesers, roughly broken
Instructions:
Bake the Cake: Preheat oven to 180°C (350°F) and grease two 9-inch cake pans. Whisk together flour, sugar, cocoa powder, baking powder, and bicarbonate of soda in a large bowl. Add milk, eggs, and oil, then beat until smooth. Stir in cold coffee until well combined. Pour the batter into prepared pans and bake for 30-35 minutes, until a toothpick comes out clean. Let cakes cool completely.
Prepare the Chocolate Topping: In a heatproof bowl, melt the dark and milk chocolate with unsalted butter over a pot of simmering water, stirring occasionally until smooth.
Assemble the Cake: Crumble one layer of cake into the melted chocolate mixture. Add malted milk biscuits, mini marshmallows, mixed nuts, and Maltesers. Stir until well coated.
