Creamy Garlic Parmesan Chicken Pasta

Ingredients:

1 pound rotini pasta, cooked and drained (save 1 cup of cooking water for casserole)
3 cups cooked chicken, diced or shredded
2 (15 ounce) jars Alfredo sauce
1 cup garlic parmesan sauce
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
½ teaspoon salt
¼ teaspoon black pepper
Fresh parsley, chopped (for garnish, optional)
Instructions:
Preheat your oven to 375°F. Grease a 9×13 inch baking dish lightly with cooking spray or butter.
In a large mixing bowl, combine the cooked pasta, chicken, Alfredo sauce, garlic parmesan sauce, half of the mozzarella cheese, and half of the Parmesan cheese. Season with salt and pepper to taste. Mix well. Add about ½ cup pasta water if needed for extra sauciness.

No-Bake Lemon Cheesecake 🍋🍰

Ingredients: 🍋

-For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup vegan butter, melted
-For the Filling:
2 cups vegan cream cheese, softened
1/2 cup powdered sugar
Zest of 2 lemons
1/4 cup lemon juice
1 teaspoon vanilla extract
1 cup vegan whipped cream
Directions: 🍋
In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted vegan butter until well mixed.
Press the mixture firmly into the bottom of a 9-inch springform pan, forming an even layer. Place the crust in the refrigerator to chill while preparing the filling.
In another mixing bowl, beat the softened vegan cream cheese until smooth and creamy.
Gradually add the powdered sugar, lemon zest, lemon juice, and vanilla extract to the cream cheese, mixing until well combined.
Gently fold in the vegan whipped cream until the mixture is smooth and uniform in texture.
Pour the filling over the chilled graham cracker crust in the springform pan, spreading it out evenly with a spatula.
Smooth the top of the cheesecake with the spatula, then cover the pan with plastic wrap and refrigerate for at least 4 hours, or until the cheesecake is set.
Once the cheesecake is set, carefully remove it from the springform pan and transfer it to a serving platter.

Gourmet Grilled Cheese with Avocado and Tomato

Ingredients:

Sourdough bread, 4 slices
Cheddar cheese, 4 slices
Mozzarella cheese, 4 slices
1 ripe avocado, sliced
1 large tomato, sliced
Fresh parsley, chopped
Butter for grilling
Salt and black pepper to taste
Directions:
Butter one side of each bread slice. On the unbuttered sides, layer cheddar, mozzarella, avocado slices, and tomato slices. Season with salt and pepper.
Top with another slice of bread, buttered side up.
Heat a skillet over medium heat and grill each sandwich until golden brown and the cheese is melted, about 3-4 minutes per side. Garnish with parsley.
