Had an amazing meal at The Clockspire in Milborne Port, England just before Christmas. The staff were excellent, inviting, professional, and knowledgeable. First course was smoked duck breast with Jerusalem artichoke, red onion chutney, & autumn truffle salad followed by seared halibut, white bean cassoulet, spinach and celeriac in a dill fish sauce. I also had a unique cocktail, their Roasted Negroni before the meal, but enjoyed it too quickly and didn’t get a photo 😉 My wife and I had a wonderful time and it was an amazing Christmas gift! Thank you

Ratatouille of hypnotic layered vegetables placed upon a flavourful sauce made from fired-roasted red peppers & tomato with lots of garlic, olive oil, & basil and a dusting of smoked paparika. Layering the vegetables is both therapeutic and makes a great presentation.

Pavlova with mango, strawberry, and blackberries! Merengue: 8 egg whites 2.25 cups sugar 1 tsp lemon juice 2 tbsp corn starch 1/2 tsp vanilla extract Bake at 300F for 20 mins, reduce temp to 250F for 1 hour. Turn off oven and let merengue cool in the oven. Can be made a day in advance. To serve, whip 1 pint heavy cream and spread over the merengue. Top with your favorite fruit. Tart fruits work best to contrast with sweetness of the merengue. #trevorcooks #pavlova #dessert #whippedcream #pavlovas
