Crunchy and Juicy Chicken Strips

Ingredients:

1 pound boneless, skinless chicken breasts, cut into strips
1 cup buttermilk
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper (optional)
Vegetable oil, for frying

Directions:

Place the chicken strips in a bowl and pour the buttermilk over them. Cover and refrigerate for at least 1 hour, or overnight for best results.
In a shallow dish, whisk together the flour, cornstarch, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper (if using).
Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until it reaches 350°F (175°C).
Remove the chicken strips from the buttermilk, allowing any excess to drip off. Dredge the chicken in the flour mixture, pressing lightly to adhere.
Carefully place the chicken strips in the hot oil, working in batches to avoid overcrowding. Fry for 3-4 minutes per side, or until golden brown and cooked through.
Remove the chicken strips from the oil and drain on a paper towel-lined plate.
Serve immediately with your favorite dipping sauces.
