π¦ BRINE: The brine is the most important part, but lucky for you, it couldnβt be easier to make! Simply combine equal parts water & vinegar, plus a pinch of salt and sugar or honey in a saucepan and heat until gently simmering.
For one jar of pickles, try using 1 cup water, 1 cup vinegar, 2 tsp salt and 1 tsp sugar.
For a basic quick pickle, we use white vinegar, but feel free to play around with different types of vinegar, or even a combination of two!
πΆ FLAVORINGS: You can always just keep it simple with vegetables + a brine, but if you want more flavor, try adding in various spices, herbs, seasonings & more!
A few ideas include fresh garlic, peppercorns, herbs like dill, rosemary & thyme, ginger, turmeric, red pepper flakes, etc.
π₯ VEGETABLES: No matter the vegetable youβre using, itβs important to make sure they are sliced evenly.
Try anything from asparagus, to onions, to tomatoes! The skyβs the limit.
π«JARS: Make sure your jars are properly sanitized before adding in your vegetables and brine. Itβs also important to fully cover the vegetables with brine. Make sure to seal tightly and refrigerate - quick pickles can NOT stay at room temperature.
π§STORAGE: Once your quick pickles are in the jar, let them cook at room temp, then seal tightly and refrigerate. Theyβll be ready to enjoy in less than 24 hours!
Most vegetables will last for up to a few weeks, but some (like onions) have a shorter lifespan (about 2 weeks).
