Best way to cook this to make sure it's tender? Has anyone every tried it in the slow cooker? Would I need to add broth? I don't want it to lose the flavor but really want it tender. Any suggestions appreciated. Thanks!

We love the uncrustable sandwiches as a quick snack, but they’re kind of expensive for a pb&j, so I’ve been making our own. I make them in bulk so there’s a lot of leftover crusts and I hate to waste food, especially with current grocery prices so I’ve been trying to find a way to use these leftover crust pieces. Today some inspiration struck! 🤪 French toast casserole muffins! Basically just mix eggs, cinnamon, vanilla, and milk (I used oat milk) and then soak your torn pieces of crust. Fill a sprayed muffin tin almost to the top and make at 350 degrees until set. Eat immediately, refrigerate for up to 3 days, or freeze for up to 3 months!
The crust from 21 sandwiches made 18 French toast muffins.

Easy healthier alternative cupcakes!
1 cake mix of your choice
1 can pumpkin
Frosting is optional.
Mix cake mix and pumpkin together.
bake at 350 for 20 minutes.
These are so easy and moist!
My mom made these for my siblings and I growing up and I actually prefer it this way! Try it!!

Cheesy Ranch Oven Roasted Potatoes 🧀
Ingredients:
4 large russet potatoes, scrubbed and diced
1/4 cup olive oil
1 packet ranch seasoning mix
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley (optional)
Salt and pepper to taste
Instructions:
Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare Potatoes: In a large bowl, toss the diced potatoes with olive oil, ranch seasoning mix, salt, and pepper until evenly coated.
Bake: Spread the potatoes evenly on the prepared baking sheet. Roast for 25-30 minutes, or until golden and crispy, stirring halfway through.
Add Cheese: Sprinkle shredded cheddar cheese and grated Parmesan cheese over the potatoes. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve: Transfer the cheesy ranch potatoes to a serving dish and sprinkle with chopped fresh parsley if desired.
Notes:
For extra flavor, add some chopped bacon bits before serving.
Prep Time: 10 mins | Cooking Time: 35 mins | Total Time: 45 mins | Kcal: 350 per serving | Servings: 4

Ginger, garlic, onions, peas and carrots from the garden.

Soy sauce, Sriracha, and chicken bouillon from my pantry.
My cost about 35 cents per serving, I don't think I can get much cheaper.

Another recipe saved from years ago that I got from this group! ❤️
The only items I didn't have on hand and needed to buy were the artichoke hearts (little over $2 at walmart) and the frozen spinach (littler over $2 at aldi)
Once again, didn't follow the recipe exactly because I used what I had
I only used 1 chicken breast for this and it is PERFECTION!
10/10, I will be making this again!! 🙂

Stuffed Pepper Soup
1 onion - diced
2 bell peppers (any color) - diced
1 can fire roasted diced tomatoes
1lb ground beef or turkey
3 TBSP tomato paste
1/2 tsp pepper
1 tsp garlic powder
1 tsp dried oregano
2 tsp dried basil
1/2 tsp salt (or to taste)
4 cups of beef broth/stock
1.5 - 2 cups jasmine rice (measured dry and cooked separately).
-Saute diced veggies in a tbsp of oil until slightly softened.
- Add ground beef/turkey and cook until browned. Drain grease. I used a paper towel to drain the grease.
- Add seasonings, diced tomatoes, and tomato paste to meat and veggies and cook for a few minutes.
- Add beef broth and simmer for 20 minutes.
- In a seperate pot make your rice.
Serve rice and ladle the soup on top for each persons desired ratio.
*Please note that if you combine the rice and soup in the same pot the rice will absorb most of the liquid. Serving separately also helps with leftovers.

I'm on a health journey so I eat alot of yogurt, because its quick in the morning for work and I can add fiber/extra protien. But sometimes its repetitive and I dont want to rely heavily on whey protien sourced pancakes etc. This is less than 5 bucks and soo freaking good!! It's perfect to grab/go and doesn't even need syrup in my opinion. I also made egg bites with cheddar, the same sausage as below chopped up! I think this would be great for back to school too.
Follow the directions on the muffin mix and fill your greased mini muffin pan. Chop the sausage links into fours and put right in the center. Bake at 400 for 14 mins and cool.
For the egg bites I used 4 eggs, a splash of milk and seasoning of choice. Salt/pep/ crushed red pepper flakes and mix.
Fill the muffin tin 3/4 full. Chop up the sausages and add. Top with cheddar and bake at 400 for 8 minutes.
** I did not cook the sausage beforehand, I cut them up while they were frozen.
I'd love more inspiration if anyone has any tips or ideas to share 🤗

I have been all about wraps this week! This one is Tyson chicken tenders (air fried and chopped up), romaine lettuce chopped up, shredded cheese, ranch and barbecue sauce wrapped up in a large tortilla. Earlier this week I made chicken Caesar and buffalo chicken wraps too. It was less than $20 to make all of these wraps (6 total-one for me and one for my husband) but I did already have all of the cheese and sauces on hand.

Easy and cheap meal. You can substitute canned chicken if needed for a cheaper meal. I do add a additional cup of whatever kind of noodles I have on hand. Then I top it with cheese. My family of 5 loves it! Add a side of garlic bread and done! Just follow the instructions on the box and all the other stuff when it is done. Hope this helps 😊

Homemade Chicken Spaghetti
"A great economical family meal!"
• 8 ounces spaghetti cooked
• 2 cups chicken, shredded
• 1 onion, chopped
• 1 cloved garlic, minced
• ½ green bell pepper, chopped
• 1 teaspoon Italian seasoning
• ¼ cup butter
• ¼ cup flour
• 1 cup chicken broth
• ¾ cup light cream
• 1 (14 oz) can diced tomatoes, drained OR tomatoes with chilis
• Salt and pepper
• ½ cup Parmesan cheese, shredded
• 2 cups sharp Cheddar cheese, shredded and divided
Serves 4
1. Preheat oven to 375°F.
2. Cook spaghetti al dente. Drain well.
3. Cook onion, garlic and bell pepper in butter until tender.
4. Add flour and seasonings. Cook 1-2 minutes.
5. Stir in broth and cream a little bit at a time until smooth. Cook until thick and bubbly.
6. Remove from heat, add Parmesan cheese and 1 cup Cheddar. Mix until smooth and melted. Season with season and pepper to taste.
7. Combine spaghetti, chicken, cream sauce and canned tomatoes, mix well. Spread in a greased 9"x13" dish.
8. Top with remaining Cheddar cheese and bake 25-30 minutes or until hot and bubbly.

Cheapest meal I make & enjoy regularly. Feeds myself & my 20 & 17yo kids. When they were little we called it macaroni surprise because they were surprised to find they Hot Dogs on the bottom. 😆
-Hot Dogs = $1.54
-GV spiral Mac & cheese = .58 (x2 boxes)
-GV baked beans = $1.94

This isn’t homemade, it’s Great Value ( Wal-Mart brand) Mexican Lasagna. It’s only $14.48! I’ve been buying this for years and it still tastes the same as it always has. Super flavorful and delicious. I like to add sour cream and Cholula hot sauce to mine. If you’ve never tried this, try it! You will not be disappointed. I actually like this better than regular lasagna…more bursts of flavors!
