BIG ANNOUNCEMENT: My first cookbook “Cook Like a Real Italian” is available for PRE ORDER now! Link in bio! 🥰❤️🇮🇹

When I opened my page 4 years ago my biggest dream was to write my very own cookbook and today I have finally achieved this first little goal. I want to thank first and foremost ALL OF YOU for supporting my weird self so much over the years. You gave me the confidence to be my true self and I would have never made all of this without you so THANK YOU ❤️

“Cook Like a Real Italian” is filled with the most delicious Italian recipes of all time, OVER 70 recipes, from the big classics (Carbonara, Arancini, Tiramisù and Homemade Gelato…) to the most delicious modern Italian dishes (Pizza Muffins, Parmesan Biscuits, Ricotta Gnocchi…) that will make you whisper… MAMMA MIA 🤤
All the recipes are SUPER EASY to make so if you are not an expert cook, this book is for you too 😋

These JELLY ORANGES 🍊are a super fun and easy recipe you can make with your kids, and they’re perfect for an unusual dessert! 😋

You can make them vegan using agar agar or you can use normal gelatine instead (make sure you read the written recipe for proportions) ❤️

Who is going to make them? 🥳

Ingredients:
-200ml orange juice (approximately 6 oranges)
-50g sugar
-2g agar agar

Cut your oranges into half then carefully remove the pulp with a knife and a spoon.
Keep the empty oranges on the side.

Mix the orange pulp with a food processor until you have the juice.

Filter your juice with a sieve then add it to a pot.

Add sugar and simmer for 3/4 mins then add 2g agar agar (or 8g regular gelatine).

Stir for 1 more min then add the liquid in your empty oranges.

Rest in the fridge overnight.

Cut your jelly oranges into slices and serve. Buon appetito!

Happy Sunday sexy!!! ❤️ Pasta on the beach is my therapy today 🤤🍝🏖

Do you remember the other day I posted this pasta I had for lunch with my brother on my stories? 😋

A lot of you asked me for the recipe, so I went back today, had lunch again, and asked the chef directly 😂

He was super kind and he gave me his recipe but I feel like there was something missing so I made some tiny adjustments to make it extremely “mamma mia” ❤️

TAGLIOLINI AI RICCI DI MARE 🌊
Ingredients (serves 4):
-360g tagliolini pasta (you can use spaghetti instead)
-30 sea urchins
-200g cherry tomatoes
-1 garlic clove
-1 small fresh chilli
-a small bunch of fresh parsley
-extra virgin olive oil
-salt
-pepper

Use some gloves to clean your sea urchins under cold running water, cut them in half and use a teaspoon to remove the little fish inside. Set aside.
Finely chop your garlic, chilli and parsley.
In a pan over medium low heat, add a good drizzle of extra virgin olive oil, your chopped chilli, garlic and half of your chopped parsley and sizzle for 90 seconds. Add your cherry tomatoes and cook for 10/15 mins. Season with salt and pepper.
In the meantime, boil your pasta in some salted water until al dente (remove it 3 mins before its cooking time).
Add you al dente pasta to your sauce, along with your sea urchins and some pasta water. Toss well over the heat for 3 mins to combine all the flavours together and to cook your sea urchins.
Add the rest of the chopped parsley and some more extra virgin olive oil before serving. Buon appetito! 😋

This is a brand new lasagne recipe exclusive to my interactive digital cookbook! I got a few people asking this morning if there were any lasagne recipes in my book and the answer is yes! My DAD’S BOLOGNESE LASAGNE and my MUM’S GREEN VEGETERIAN LASAGNE are both in my super sexy pasta cookbook! 🤤🤤🤤

You can also make this lasagne vegetarian by simply substituting the classic Bolognese sauce with my vegan Bolognese sauce, also featured in my book! 😋

Today I want to show you how to make my delicious CREAMY CANNOLI! 😍

Ingredients (serves 6):
For the CREAM
-400ml milk
-the zest of 1 lemon
-30g corn flour/starch
-90g sugar
-4 egg yolks
For the CANNOLI
-1 puff pastry ready rolled sheet
-sugar

First of all, let’s make your CREAM! Add your milk and lemon zest into a saucepan and bring to a boil.

In the meanwhile, whisk egg yolks with sugar until smooth, then add corn starch and finally your boiled milk.

Pour the liquid back into the saucepan over low heat and keep stirring until thick.

It’s time to make your CANNOLI!
If you don’t have a cannoli mould, simply cover some ice cream cones with aluminium foil.

Roll out your puff pastry sheet and cut it into 12 stripes (approximately 3cm). Roll each stripe on your cannoli mould and sprinkle some sugar on top.
Place your cannoli on an oven tray previously lined with parchment paper and bake for about 20 mins (180C/360F).

Let your cannoli cool down, then carefully remove your mould and fill your cannoli with your cream!

LUNCH WRAP HACK! 😍🌮
This method of wrapping up your tortilla/piadina will change your life... or at least your lunch! 😂

Everyone is making it on Tik Tok so I have decided to give it a go, adding a sexy Italian kick to it! 🥰🇮🇹

I made my tortilla/piadina with goat cheese, prosciutto, tomatoes, fresh mozzarella and rocket! It’s absolutely DEEELICIOUS! 😍

CREAMY VEGAN LINGUINE 🍅
Ingredients (serves 4):
-360gr linguine
-400gr cherry tomatoes
-extra virgin olive oil
-a pinch of salt and pepper
-1 garlic clove
-fresh thyme
-100gr cashews
-3/4 glass of boiling water (pasta water even better)
-fresh parsley to garnish

🍅Roast your tomatoes in the oven for 30 mins with some extra virgin olive oil, a pinch of salt and ground pepper, 1 garlic clove and some fresh thyme. (190C/375C)

🍅In a blender, soak your cashews in three quarters of a glass of boiling water, add you roasted tomatoes, the roasted garlic clove and a pinch of salt and mix everything together until super creamy.

🍅Boil your linguine and when al dente, mix them with your sauce. Stir super sexy and add a couple of spoons of pasta water if needed!

🍅Garnish with some fresh parsley and enjoy!

PANDORO STAR 🌟🎄❤️
⬇️Ingredients:
-1 pandoro (you just need the bottom)
For the LIMONCELLO SAUCE:
-1 egg
-2 egg yolks
-3 spoons of sugar
-250gr mascarpone cheese
-1 shot of Limoncello
-250gr whipped cream
To garnish:
-berries (blueberries and raspberries)
-icing sugar

1. Cut the base of your pandoro (about 9-10 cm) and remove the centre.
2. In a bowl mix the egg and yolks with sugar until smooth. Add the mascarpone, 1 shot of limoncello and whipped cream. Mix until super creamy.
3. Pour our LIMONCELLO CREAM inside the pandoro and garnish with berries and icing sugar. Refrigerate for a couple of hours for a better result!

SMOKED SALMON AND COURGETTE CRESPELLE👨‍🍳🎄
Ingredients (serves 4/6):
For the CRESPELLE:
-3 eggs
-30ml sunflower oil
-500ml milk
-220gr flour
-a pinch of salt
-1tbsp butter (to cook the crespelle)
For the FILLING:
-250gr fresh ricotta
-1 big courgette/zucchini (or 2 medium)
-50gr Parmigiano cheese
-100gr smoked salmon
To garnish:
-250ml béchamel sauce (white sauce)
-50gr Parmigiano cheese

In a bowl mix eggs, oil, milk and a pinch of salt. Add flour little by little and keep mixing until smooth.

In the meanwhile, grate your courgette/zucchini, add ricotta, a pinch of salt, smoked salmon and Parmigiano. Mix everything together.

In a small skillet over medium heat, melt butter. Drop a big spoon of your crespelle batter evenly onto the pan and cook for about 90 seconds each side (or until fully cooked).

Spread one spoon of your ricotta filling at the centre of each crespella and fold it.

Spread some bechamel sauce on the bottom of an oven dish, line it with your crespelle, spread some more bechamel sauce on top and sprinkle some Parmigiano cheese. Bake for 20-25 mins (180C/350F).
