This festive season (from 1 December 2024 to 5 January 2025), Princess Terrace at Copthorne King’s Hotel Singapore invites diners to embark on a gastronomic journey with heritage Penang Street favourites alongside other sumptuous delicacies.

The celebratory menu combines the best of traditional Penang flavours with classic holiday dishes. Enjoy the signature Nonya-style Turkey Breast with Buah Ke Luak Sauce, a unique twist on a Christmas specialty. This is available at the chef’s carving station alongside other succulent meats. Other highlights include the Slow-roasted Beef Sirloin and a rotating selection of festive treats. Princess Terrace’s richly flavoured Lobster Penang Hokkien Mee is guaranteed to be a hit with seafood lovers.

Meanwhile, bring the festive cheer home with the restaurant’s delicious takeaway offerings. This year, the signature Nonya-style Turkey Breast with Buah Ke Luak Sauce is exclusively available during the festive period. From 7 to 9 November 2024, the Hong Kong International Wine & Spirits Fair makes its much-anticipated return. Hong Kong Convention and Exhibition Centre will once again transform into a playground for the world’s wine and spirits enthusiasts, as the fair promises an exceptional showcase with more than 600 exhibitors from over 20 countries and regions.

Highlights include the debut of Azienda Agricola Sciara’s 760 Metri Etna Rosso, a wine nurtured from Sicily’s volcanic soils by Hong Kong’s pioneering winemaker, Stef Yim. Chinese spirits, too, take centre stage: Guizhou’s revered Zhenjiu, known for its layered spice and fermented bean profile, will be showcased alongside Shanxi’s light-aroma Fenjiu, embodying centuries of baijiu craftsmanship.

For the spirits enthusiast, varieties of vodka, brandy, and whiskey will be showcased, with standout contributions from the Ireland and Japan pavilions. Expect award-winning entrants like Clonakilty Single Pot Still Irish Whiskey, and Japan’s Ukishiro Sakitama Kodaishu, a 20-year aged sake that has earned 22 gold accolades to date.

In a first-ever collaboration, the Japan Farmed Fish Export Association (JFFEA) and the Japan Rice and Rice Industry Export Promotion Association (JRE) are joining forces to showcase the versatility of Japanese buri (yellowtail), madai (red sea bream), rice, and sake. This initiative highlights how Japanese produce can be reimagined in diverse cuisines—from traditional to modern interpretations.

From now to 11 December 2024, 10 renowned restaurants in Singapore will create exclusive dishes featuring these premium ingredients.

• Until 1 November: contemporary restaurant Path will serve buri with ginger flower gastrique along with perfumed local greens. This will be paired with Manotsuru Junmai Daiginjo Sado Yamadanishiki sake.

• 1 – 15 November 2024: 27 Degrees West .sg, which blends traditional Indian flavours with modern interpretations, presents its Tandoori Buri Collar with Mint Salmoriglio. The fish is best paired with Manotsuru Junmai Brese sake.

• 15 – 29 November 2024: Hai Tien Lo at Pan Pacific Singapore will be serving Claypot Cantonese-style Braised Yellowtail Collar with Roast pork, Handcrafted Beancurd, and Browned Garlic. The Best Sommelier in French Wines – Singapore 2024 edition competition was held on 7 October.This grand event showcased the skills and knowledge of Singapore’s best sommeliers, with a specific focus on French wines. The participants went through six workshops, including blind tastings and wine service, before the final results were announced.

The prestigious event, held at Goodwood Park Hotel, was organized by Taste France in collaboration with the French Ministry of Agriculture. The aim was to showcase the richness of French gastronomy and wines while celebrating the talents of sommeliers in Singapore. Castel Grands Crus et Châteaux, a prestigious collection under the Castel Group, emphasised its fine wines derived from some of France’s most iconic terroirs. They showcased their Château Montlabert wine, which achieved St. Emilion Grand Cru status in 2022.

Congratulations to Chester Yang, Sommelier at CUT by Wolfgang Puck (MBS), who won the competition. Wyman Kok, Sommelier at Cloudstreet, was the first runner-up. Both will be attending the Grand Final in Asia, which will be held in Taipei on 10-11 December, where they will face the best sommeliers from Malaysia, Indonesia, South Korea, China, Vietnam, and Taiwan.

The highly anticipated .world, by Mirko Febbrile () and The Lo & Behold Group, recently opened at New Bahru. Housed over two levels, the lower floor is home to a chic and convivial Pasta Bar offering cocktail and pastas. The modern Italian restaurant sits on the upper floor and serves a six-course dinner menu, underscored by Mirko’s signature creative flair. Among his many unique creations are lamb saddle with chestnut, mushroom and quince, and richly flavoured slipper lobster with spaghettone, red carrot and sea snails.
