Con el paso del huracán María en el 2017 nos vimos obligados a dejar de imprimir el periódico por los altos costos de su producción. These Soft Chickpea Flour Tortillas are gluten-free, delicious, and perfect for your favorite fillings! 🌮💚

Ingredients:
- 2 cups chickpea flour
- 1 1/2 cup water
- 1/2 cup tapioca starch (or arrowroot starch/potato starch)
- 1/2 teaspoon salt

Directions:
Start by tossing all your ingredients into a high-speed blender. Blend away until you have a smooth batter that’s just a tad thicker than a crepe batter. Let this delightful mix rest for about 10-15 minutes—you'll want it to come together nicely. After resting, give it a quick stir and adjust the consistency with a splash more water or a bit more flour if it feels off.

Next, heat up a non-stick pan or cast iron skillet on medium heat. Add a little oil to grease it up—this is crucial for that perfect tortilla. When your pan is hot and ready, pour in about ¼ cup of the batter. To spread it out, gently swirl the pan in a circular motion.

Cook for 1-2 minutes, or until the top looks dry with no wet spots. The flipping part is next! Use a flexible spatula to gently flip it over and let it cook for another minute on the other side.

Keep repeating this process until you’ve cooked up the entire batch. Enjoy your chickpea tortillas warm, filled with your favorite goodies, and get ready to savor every bite!
