In the Russian Empire, spinach also first appeared on the tables of aristocrats: from the middle of the 18th century - at the court, and then - on the menu of the entire upper class. Only towards the end of the 19th century did this rare "overseas dish" become available to the middle class. But, despite the trend towards democratization, spinach did not become truly popular among the people in the 20th century in our country - in Soviet times it was rarely grown in household plots and rarely sold in stores.
