love onions and grilling them can be a pain at times. They fall apart through the grate or stick etc. I’ve found when you slice them if you keep the skin on it helps them stay together and just remove the skin when ready to eat!

How to make the tastiest grilled vegetables.

For grilling veggies I literally place them on the grill dry with no oil or seasonings. Grill them until desired doneness and then while hot chop and toss them in your favorite dressing or sauce.

SPANISH EGG FLAN 🍮

1 cup white sugar
3 large eggs
1 (14 ounce) can sweetened condensed milk
1 can evaporated milk or 1-1/2 cup fresh milk
1 tablespoon vanilla extract

INSTRUCTIONS:

Preheat the oven to 350 degrees F (175 degrees C).

Melt sugar in a medium saucepan over medium-low heat until liquefied and golden in color. Carefully pour hot syrup into a deep 9-inch round glass baking dish, turning the dish to evenly coat the bottom; set aside.

Beat eggs in a large bowl. Add condensed milk, evaporated milk, and vanilla; beat until smooth. Pour egg mixture on top of caramel in the baking dish; place in a deep roasting pan. Carefully pour in enough hot water to come 1 inch up the sides of the dish.

Bake in the preheated oven until just set with a slight jiggle in the center, about 1 hour, checking after 55 minutes. Keep in mind the flan will continue to set as it cools. Remove from the oven and carefully transfer baking dish to a wire rack; cool to room temperature, then cover with plastic wrap to prevent a skin forming. Refrigerate for 3 hours or up to 3 days.

To serve, run a knife around the edges of the dish; carefully invert onto a rimmed serving plate and let caramel sauce flow over flan.

Grilled Asparagus with Romesco !!

Romesco - A deliciously smoky, nutty, zesty Spanish sauce with sweet and tangy undertones that's delicious.

Ingredients:

•3 pcs tomatoes
•1 medium red bell pepper
•1 head of garlic
•1 dried nora pepper large, you can use nora paste
•Lightly toasted almonds 80 g
•Hazelnuts 80 g
•4 tbsp extra virgin olive oil
•1 tbsp vinegar
•1 teaspoon smoked paprika •1/3 teaspoon salt approx, to taste

•Preheat the oven to 400F/200C. Remove the outer skin from the garlic but leave the garlic •Preheat the oven to 400F/200C. Remove the outer skin from the garlic but leave the garlic on the bulb stem in their individual skins. Trim the very top off the cloves of garlic and add the bulb to a small roasting dish, along with the chunk of red pepper. Cut the tomatoes in half through the middle and add to the roasting dish. Drizzle oil (around 1½ tbsp) over all of them, along with a little salt, then roast in the preheated oven. (I used jarred roasted bell peppers in this recipe)

In a dry skillet/frying pan over a medium heat.gently toast the almonds and hazelnuts until starting to color slightly on both sides. Remove the nuts from the pan and set aside.
•In the same pan, heat 1 tablespoon of the olive oil. Break the stale bread into chunks and add to the pan. Cook on both sides until gently golden then remove from the heat. •Once the tomatoes have cooled, slide the skins off the outside and place the flesh in a food processor. Remove the skin from the pepper and add to the food processor. Squeeze the roasted garlic from the skins and
add this as well.

•Add the salt, hazelnuts, almonds, nora pepper, paprika, and olive oil. Blend until smooth.

•Add the vinegar (to taste) and more olive oil until the right consistency. Check the salt and serve.

Preheat the grill. In a bowl, add the asparagus and drizzle it with olive oil. Sprinkle with salt and pepper. Toss to combine. Transfer the asparagus to the grill and cook for about 8-10 minutes or until the asparagus is slightly tender
and charred edges have formed. •Transfer the asparagus to a serving platter. Serve with romesco sauce.

POTATOES WEDGES!!

INGREDIENTS:
- Potatoes - about 6-8 potatoes
- 2 tablespoons oil
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- pinch black pepper

INSTRUCTIONS:
-Preheat oven to 450 degrees. Line a large, rimmed baking sheet with parchment.

-Cut the potatoes into about 8 wedges (They should be less than 1/2 inch thick on the wide edge,
In a large bowl, combine potato wedges and oil, toss to coat.

-Stir together salt, paprika, garlic power, onion powder, and pepper. Sprinkle over potato wedges and toss to coat.

-Transfer potato wedges to your prepared baking sheet, arranging them in a single layer so they aren't overlapping .

Bake for 15 minutes. Remove from oven, turn over the potato wedges with fork or tongs. Return to oven for 15 minutes. Potatoes should be appear browned and crispy on the edges and be fork-tender.

HISTORY OF HUMMUS

The earliest mention of hummus was in a 13th century cookbook attributed to the Aleppine historian Ibn al-Adim.

Commonly consumed in Middle Eastern cuisine, it is usually eaten as a dip with pita bread. In the West, it is produced industrially and consumed as a snack or appetizer with crackers or vegetables.

Although multiple different theories and claims of origins exist in various parts of the Middle East, evidence is insufficient to determine the precise location or time of the invention of hummus. Its basic ingredients—chickpeas, sesame, lemon, and garlic—have been combined and eaten in Egypt and the Levant for centuries. Though regional populations widely ate chickpeas, and often cooked them in stews and other hot dishes, puréed chickpeas eaten cold with tahini do not appear in records before the Abbasid Caliphate in Egypt and the Levant.

The earliest mention of Hummus comes from Syria, in a 13th-century cookbook attributed to the Aleppine historian Ibn al-Adim. Other early written recipes for a dish resembling ḥummuṣ bi ṭaḥīna are recorded in cookbooks written in Cairo in the 13th century. A cold purée of chickpeas with vinegar and pickled lemons with herbs, spices, and oil, but no tahini or garlic, appears in the Treasure Trove of Benefits and Variety at the Table (كنز الفوائد في تنويع الموائد); and a purée of chickpeas and tahini called hummus kasa appears in Muḥammad ibn al-Ḥasan ibn al-Karīm's The Book of Dishes: it is based on puréed chickpeas and tahini, and acidulated with vinegar (not lemon), but it also contains many spices, herbs, and nuts, and no garlic. It is also served by rolling it out and letting it sit overnight.

Home bakers, if you don't have a ¾ measuring cup, you can measure ¾ cup using other measuring cups or spoons you have.

Here are a few methods:

1. Use three ¼ cups to equal ¾ cup (3 x ¼ = ¾).

2. Fill a ½ cup and then add ¼ cup (½ + ¼ = ¾).

3. There are 16 tablespoons in a cup, so ¾ cup is 12 tablespoons (¾ x 16 = 12).

Any of these methods will give you the correct amount of ¾ cup.
