What is Tatler Dining Kitchen?: A pop-up dinner series centred around the best of F&B. For our first-ever TDK event you can expect a sophisticated 8-course menu by .calo & with exquisite ingredients, exploring the motifs of training and heritage—unbound by cuisine and totally unleashed. This exclusive menu comes complete with unlimited red wine, white wine, bubbly, and cocktails by Martell Cognac.

These two chefs collaborated on a sophisticated 8-course menu featuring exquisite global ingredients, exploring the motifs of training and heritage.

This exclusive dinner has dishes that you’ve never experienced at either of their restaurants and comes complete with unlimited red wine, white wine, Champagne, and cocktails by Martell Cognac.

To kick things off they invited chefs and of Sambar () and the soon-to-open Celera () to create a special taco.

Try their chicken krapow taco with stir fried chicken, nuoc cham, basil, Thai-style fried egg, nuoc cham salsa, Japanese cucumber, and buckwheat tortilla which will be available until August 31.

Chefs and will officially be parting ways from (Tatler Dining’s Best New Restaurant 2024) on August 31.

Onboarded as culinary consultants to the group, they did impressive hands-on, full-time work in the kitchen, creating noteworthy menus and finessing the restaurant’s hospitality culture.

Amicably, this duo now closes their Aurora chapter and time with business partner attorney Nilo Divina after successfully creating a restaurant that he can be proud of. Now Santos and Vilar will devote their time to developing their own concept: Celera. (And…we may even be getting a brick and mortar Sambar…one day.)

“We extend our utmost gratitude to two chefs who have played vital roles in helping shape Aurora into one of the best new restaurants in the country. Their passion and creativity have been instrumental in making our restaurant a memorable dining destination,” says Atty. Nido Divina. “This comes after careful consideration and mutual agreement, in view of the upcoming launch of the chefs’ very own restaurant—Celera,” he adds.

Santos and Vilar will be revealing their fine dining à la carte and set menu restaurant Celera in October, along with several other tasty collabs and pop-ups, so stay tuned!
