1 cup milk warm
2¾ cups flour
½ tsp Salt
2 eggs
3 Tbsp butter Melted

Instructions:
1️⃣ Mix & Proof – Combine yeast, 1 teaspoon sugar, and warm milk. Let it proof for 5 minutes.

2️⃣ Combine Dry Ingredients – Mix 2 ½ cups flour, remaining sugar, and salt in a bowl.

3️⃣ Mix Wet & Dry – Add proofed yeast, 1 egg, and melted butter. Stir until a shaggy dough forms.

4️⃣ Rest the Dough – Cover and let it rest for 5 minutes.

5️⃣ Knead – Transfer to a floured surface, knead while gradually adding ¼ cup flour (dough should remain soft).

6️⃣ First Rise – Place back in the bowl, grease the surface, cover, and let it rest for 30 minutes.

7️⃣ Shape the Buns – Punch down the dough, divide into 8 pieces, roll into 6-inch logs, and pinch the sides.

8️⃣ Second Rise – Place seam-side down on a parchment-lined baking sheet, cover, and let rise for 15 minutes.

9️⃣ Egg Wash – Whisk 1 egg, brush over the buns.

🔟 Bake – Preheat the oven to 350°F and bake for 12-15 minutes until golden brown.

Notes
Measure the flour by gently scooping it into a cup, then use the dull side of a table knife to sweep off the excess.

🍤Teriyaki Sauce
Ingredients:

1 1/2 teaspoons fresh ginger ,minced
1 teaspoon garlic ,minced
1 tablespoon honey or sweetener of choice

1/4 cup water mixed with 3 teaspoons cornstarch
INSTRUCTIONS
Combine all ingredients in a small saucepan, bring to a boil, reduce heat and simmer for about 4 minutes. Remove from heat and let cool.
Store in the fridge for up to a week. Makes about 1 1/4 cups teriyaki sauce.

🥨Stir Fry Sauce
Ingredients:

INSTRUCTIONS
In a jar with a tight lid (must hold 2 cups of liquid), combine all of the stir fry sauce ingredients together and shake well.
This sauce should keep for a few weeks in the refrigerator; all you need to do is measure and pour out what you need for your dish.

🌭Sweet and Sour Sauce
Ingredients:
1 cup canned pineapple juice

3 tablespoons ketchup

1 1/2 tablespoons cornstarch dissolved in 2 tablespoons water
INSTRUCTIONS
Place all of the ingredients, except for the cornstarch slurry, in a small saucepan and bring to a boil. Stir in the cornstarch slurry and simmer for another minute until thickened, stirring constantly.
Let the sauce cool completely and store in an airtight container in the refrigerator where it will keep for 2-3 weeks.

🍤Satay Sauce
Ingredients:

2 garlic cloves peeled and crushed
200 ml (7 oz) coconut milk from a tin

Instruction:
Heat over medium heat whilst stirring with a wooden spoon. The sauce will look thin at first, then as it comes close to boiling point, it will start to thicken. Don't let the sauce boil, just turn down the heat as it approaches boiling point and stir until thickened, then turn off the heat and stir in the lime juice.

Instruction:
Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring it to a boil, stirring regularly. Once the sugar is dissolved stir in the cornstarch mixture, stirring continually until thickened, about 1 minute. Let the sauce cool completely, pour into an airtight jar and store in the refrigerator. Will keep for up to a week. Makes about 1 cup.

Instructions
Prepare the Marinade:
Add all the marinade ingredients in to small dish and mix together.

Marinate the Pork Chops:
Place the pork chops in a shallow glass or plastic container or bag. Pour the marinade onto the pork, turning it so that all sides of the meat are completely coated.

Cover and refrigerate the pork as it marinates for 2-18 hours.

Alternately, you can seal the bag or container and freeze the pork chop in the marinade for up to 3 months.

✨ Directions:
In a small saucepan, combine sugar, vinegar, ketchup, and soy sauce. Heat over medium, stirring continuously until the mixture starts to bubble.
In a small bowl, whisk together cornstarch and water until smooth.
Slowly add the cornstarch mixture to the saucepan, stirring constantly.
Continue cooking while stirring until the sauce thickens, about 1-2 minutes.
Remove from heat and let cool. The sauce can be stored in the refrigerator for up to a week.

Instructions
In a saucepan, Mix water, flour, cornstarch, sugar, soy sauce, dash of salt and pepper. Stir until sugar is dissolved and no more lumps from flour.

How to make a Graham Cake – Mango Float Cake
Pinoy style
Prep Time: 10 Minutes
Set Time: at least 4 hours but best overnight

Ingredients

14oz / 400g of Sweetened Condensed Milk ( I used about 3/4 of this Tin) https://s.lazada.com.ph/s.jw51P?cc
1 Packet of Graham Crackers or any Oatmeal Biscuits https://s.lazada.com.ph/s.jw5XC?cc

Procedure
Peel, slice and dice the mango into small cubes.
Pour the cream into a bowl and whip until you have stiff peaks. Add the condensed milk and stir through until mixed.
Place a layer of the the Graham Crackers into your dish. Spoon on some of the cream and spread over the crackers.

Cover the cream with a layer of the dices mangoes.
Repeat steps 4 to 6 once. Top with the last layer of crackers. Cover the crackers with the cream and make as smooth as you can.

Crush up some of the crackers till you have fine cracker crumbs and sprinkle on top of the cream.
Place in the fridge to chill right through and allow the crackers to soften up and become fluffy.
Once the Graham Cake has chilled I like to leave it overnight) it is ready to be served.

You can either spoon it into dishes or slice it and gently lift the slice on to a plate.
Dig in and enjoy!

Another Filipino kitchen staple, adobo is a dish made up of pork slices dipped or marinated in soy sauce and crushed garlic, then sprinkled with dried bay leaves and black pepper. Known for its combination of saltiness and tanginess, it is named after the Spanish word adobar which means “to marinate”.

The tangy taste is due to vinegar, added either during the marinating process or later during cooking.

Adobo also has many variants across the Philippines, and sinigang is considered to be one of them. Chicken adobo, for example, has chicken as the marinated meat, while adobong dilaw (yellow adobo) includes turmeric or luyang dilaw in its recipe.

Steps:

Marinate the pork belly in soy sauce and garlic for at least 1 hour.
Place the marinated pork belly in a heated pot. Cook for a few minutes.
Pour the remaining mixture into the marinade.
Add water, peppercorn, and dried bay leaves, then boil. Simmer the mixture for 40 minutes to 1 hour till the pork is tender.
Pour vinegar. Simmer for 12 to 15 minutes.
If the mix needs more flavor, sprinkle some salt to taste as a finishing touch.

INSTRUCTIONS:

Mix the soy sauce, vinegar, water, calamansi juice, pepper, and sugar until the sugar has dissolved. Add the chiles, tomatoes, onions. Mix well and feel free to adjust to your taste.

I had mine with air-fried tokwa or extra firm tofu and soaked the tofu with the sauce so the tofu absorbs the flavour! I love scooping the onions and tomatoes over the tomato and love it with steamed rice.

This is great with fried extra firm tofu/tofwa, other deep fried dishes (with a subtle taste), and grilled dishes!

Slice 2 cucumbers and place on paper towel to remove some of the moisture

In a medium bowl, whisk together 2 Tablespoons rice vinegar, 1 Tablespoon sesame oil, 1 Tablespoon sugar, 2 teaspoon soy sauce, ½ teaspoon salt, 1 teaspoon toasted sesame seeds, add cucumbers. Stir to coat.

HOW TO MAKE CAJUN SEASONING:
To make Cajun seasoning, simply mix all of the spices up in a jar and cover with a lid. Then the seasoning blend should keep for up to 1 year.
