Milky Melon with Gulaman

STEPS:
Cut the melon into half. Remove the seeds and syrup and transfer them to a small bowl with a strainer. This method adds natural sweetness to your drink. Grate the melon and set it aside, or you can put it in the mixing bowl or pitcher already.
Cook the jelly/gulaman. Follow the instructions found on the box/packaging. Please note that
- the amount of water affects the hardness of the gelatin.
Less water --> hard gelatin
more water --> soft gelatin
- adding sugar is beneficial because it imparts a classic taste to your drink. Keep in mind that gulaman tends to have a slightly savory flavor due to its seaweed composition. Therefore, omitting sugar will highlight the distinct taste of gulaman. However, when the gulaman is sweet, it harmonizes perfectly with the milk and condensed milk, creating a delightful and well-balanced beverage.
After cooking, transfer the gelatin to a narrow container, expedite the solidification process. Allow it to rest at room temperature, or, once cooled for 10 minutes, expedite solidification further by placing it in the freezer or chiller for an additional 10 minutes.
After solidifying, grate the gelatin using a coconut grater. Alternatively, you can cut it into cubes, but personally, I prefer grating it, similar to cheese, as it makes it easier to drink and swallow. You might not even realize you've finished a cup. Ahaha!
Next, transfer to a big bowl or 1.5 L pitcher and be ready to mix all ingredients. Add water, milk or sugar/ condensed milk if needed.
Voila! You now have a refreshing beverage for your holidays. This serves as an excellent substitute if you prefer to avoid serving soda.
