โItโs 5 on a Thursday morning, and Miriam Garcia has snoozed her alarm one too many times to get on her everyday routine. She steps silently, barefoot, around her small brown house at Cubcub, Capas, Tarlac, creaking through the black and white hall amidst the freezing cold of the weather.
โ She is late, but careful not to wake her three children, or her husband, who will be up in an hour to cook breakfast and get ready on his job. She puts her usual mask that is filled with black colors, suits her golden Gucci shirt, slides her feet with her favorite pink sandals and hurries out without coffee. She immediately goes to her usual seller of hotdogs, isaw (chicken intestine), betamax (cooked blood of a pig), and pork.
โ One of the oldest sidewalk sellers at the Capas Public Market, Mrs. Garcia, 54, has been selling barbeque, or "inihaw," for 10 years. She does her business year-round, rain or shine. She is one of more than 20 individuals who rely on selling meals on the townโs pavements for a career.
โโWhatโs hard about this job?โ Mrs. Garcia said, โLahat ay mahirap. Sa paggising mo pa lang sa umaga, kailangan mo ng sipagan bumili ng mga sangkap at iihihaw. Kung hindi mo aagahan sa pagpunta sa palengke ay mauubusan ka ng mga magagandang produkto. Pinakamahirap talaga sa akin โyung pagtitiis sa puyat at sa lamig pagkagising, dahil medyo nagkaka-edad na rin ako.โ
โ These vendors are an essential part of Capasenos' daily lives and a common sight on the townโs streets. But on a daily basis, they face a number of obstacles that make it difficult for them to operate their business, including complicated municipality ordinances and rules governing street vending, steep fines for minor infractions (like placing a foot too close to the sidewalk), and occasionally hostile customers or neighbors. Not to mention the challenges of standing for hours at a time, frequently by yourself, without any real shade or private place withstanding under the heat of the sun.
โ The task is both repetitive and difficult. Five or six days a week, Ms. Garcia works six-hour shifts. Her trip to Capas Public Market takes a quarter of an hour. She typically uses her phone to see Facebook videos. She checks her inbox today, though, in the hopes that her youngest kid may send her a message regarding her studies.
โโWhat inspired you to establish this kind of business?โ Mrs. Garcia answered, โNaisipan kong itayo itong ihawan para sa mga anak ko. Kahit may trabaho ang asawa ko, parang hindi sapat iyon para maitaguyod namin ang aming pamilya at bigyan ng maginhawang buhay ang aming mga anak. โYung isa nag-aaral pa, pero sa awa ng Diyos, nakapagtapos na ang dalawa kong anak sa kolehiyo at sila ay mga ganap na guro.โ
โโAng hirap nga noong nagka-pandemic. Halos hindi namin alam kung paano kami makabebenta ng barbeque. Pero ayon, naisipan naming magbenta online. Dahil doon, nakapagpatayo rin kami ng lechonan,โ she added emotionally.
โ Just like how Mrs. Garcia roasts barbeque, she is also getting roasted by the heat of the sun. However, she still chooses to work and do what she really loves. She still hopes for the better and her burning intuition and perseverance is what transpired her to cook delicious food.
โโWhat advice can you give to those people who are planning to be a vendor?โ Mrs. Garcia answered with conviction and feelings, โKailangan may tiyaga ka. Kapag hindi ka matiyaga at masipag, hindi ka magtatagal sa pagtitinda. Mabait ka rin dapat sa customer, hindi ka dapat magsungit kasi sila ang nagbibigay buhay sa iyo. Dapat masarap din ang mga ibinibenta mo, lalo na ang sauce. Dapat malinis ang produkto.โ
โIt is true that the sauce filled with peppers and spices really attract the customers. The hotness of vinegar really gives a burning taste to the stomach of every buyer. The combination of redness of the hotdogs and a peach-like color of the isaw really put a good harmony to the eyes of the people.
โ People are lucky for not experiencing what the other vendors are experiencing, like getting cooked under the scorching heat of the sun, encountering rude customers, and standing for long hours. It is truly amazing how these street vendors endure the pain just to serve us delicious meals. They became part of our life as students, workers, or a family.
โAt the end of the day, all vendors think the same. โWhat would it be like to go on a cruise โ to board a big ship with their family, to vacation as they do in movies, to fall asleep at night without setting an alarm,โ questions they always ask to themselves.
