Sapin-sapin Recipe, kakanin meryenda!

Ingredients:
● 2 cups glutinous rice flour
● 1 cup rice flour
● 2 ½ cup coconut milk
● 1 cup condensed milk
● ½ cup sugar (white)
● Food colors - yellow & violet - 1 teaspoon each color

FOR TOPPING: Latik
● 1 can coconut milk o unang pigang gata

PROCEDURE:

● Pagsamahin ang glutinous flour, rice flour at white sugar sa isang bowl.Haluing mabuti.
● Ilagay ang coconut milk at condensed milk, haluin. Salain ang mixture para mawala ang namuong galapong.
● Divide into 3 parts ang mixture. Sa bawat lalagyan, lagyan ng food color. Haluin mabuti.
● Pahiran ng coconut oil ang 8x8 non-stick pan. Saka maglagay ng unang layer white glutinous mixture. Steam for 5 minutes
● After 5 minutes, ilagay ang yellow mixture. Steam for 10 minutes
● After 10 minutes, isunod ng ilagay ang purple mixture at i- steam sa loob ng 15 to 20 minutes.
● After 15 to 20 minutes I- check sa pamamagitan ng toothpick, kapag wala ng sumamang mixture ibig sabihin ay luto na ito.
● I-ahon sa steamer palamigin bago ilipat sa serving plate n may sapin ng dahon ng saging.
Hiwain sa laki na naayon sa gusto nyo at budburan ng latik sa ibabaw.

Paano magluto ng Latik:
● Ilagay s kawali ang 1 can ng coconut milk o unang piga ng gata.
● Pakuluan hanggang sa mag evaporate ang gata at mamuo ang latik.
● Kapag namuo n ang latik hinaan ang apoy, haluin ng dahan-dahan hangang sa mag golden brown ang kulay ng latik. Salain para maghiwalay ang latik sa langis.

❗️ Note: Balutin ng tela ang takip ng steamer para maiwasang huwag matuluan ng tubig ang sapin-sapin.

Miswa at Patola, budget recipe ulam!

Ingredients
3 medium patola
1 tablespoon canola oil
1 onion
2 cloves garlic
10 pcs prawns
1 tablespoon fish sauce
2 cups water
2 ounces miswa noodles
salt and pepper to taste

Instructions:
● Cut off both ends of the patola and discard.
● Using a vegetable peeler, peel the skin.
● Slice the peeled gourd crosswise into about ¼-inch thick.
● In a wide pan over medium heat, heat oil.
● Add onions and garlic and cook until softened.
● Add prawns and cook, breaking apart with the back of a spoon, until lightly browned.
● Add fish sauce and continue to cook, stirring occasionally, for about 1 to 2 minutes.
● Add water and bring to a boil, skimming any scum that may float on top.
● Lower heat and cook for about 10 minutes or until pork is tender.
● Add patola and cook for about 3 to 5 minutes or until tender yet crisp.
● Add miswa noodles and cook for about 1 to 2 minutes or until softened.
● Season with salt and pepper to taste. Serve hot

Hindi ito Lecheflan pero sobrang sarap!
● Glutinous Flan

Ingredients:
● 3 tablespoon sugar
● 3 eggs
● Pinch of salt
● 1 tsp vanilla extract
● 2 cups evaporated milk
● 1 can condensed milk
● 2 cups glutinous flour

Procedure:
● Gumamit ako ng 9 inches molder, pwede rin kayong gumamit ng mga llanera. Naglagay ako ng sugar at isinalab ko sa mahinang apoy para matunaw at maging caramel. I-set aside lng para matuyo habang inihahanda naman ang iba pang sangkap.

● Sa isang mixing bowl, pagsamahin ang itlog, pinch of salt at vanilla extract. Haluin para mag combine.

● Ilagay ang evaporated milk at condensed milk. Haluing muli para magsama ang mga sangkap.

● ilagay ang glutinous flour, haluing mabuti hanggang s matunaw at huwag kalilimutang salain ng 2 hangang 3 beses para maging smooth ang lulutuing Glutinous flour Lecheflan.

● Isalin sa molder, takpan ng aluminum foil para maiwasang matuluan ng tubig habang niluluto.

● I-steam sa loob ng 45 minutes to 1 hour sa mahinang apoy.
Pagkaraan ng 45 minutes i-check ng toothpick. Kapag may sumama pang mixture ibig sabihin ay hilaw pa ito. Ituloy pa ng 15 minutes ang pag steam

● Pagkaraang maluto, hanguin sa steamer. Palamigin bago isalin sa isang serving plate.

● Sa pagsasalin sa serving plate, padaanan ng kutsilto ang gilid ng molder para madaling maalis kapag itinaob na ito sa serving plate. Hiwain ng naayon sa laki na gusto nyo.

Note: Lutuin lng ito sa mahinang apoy dahil kapag nabigla ang pagkakaluto at na-over cooked, may posibilidad na umalsa ang inyong Glutinous flan.

○ No bake Cassava cake

○ INGREDIENTS:

● 2 eggs
● pinch of salt
● 1 tsp vanilla extract
● 1 can condensed milk
● 1 can coconut milk
● 4 cups grated Cassava

○ PROCEDURE

● Gadgarin ang kamoteng kahoy at pigain ng bahagya. Takalin sa 4 na cups, set aside.

● Mag lagay ng 1 kutsarang asukal s 6 medium size llaneras, isalab s mahinang apoy hanggang sa mag-caramelized ito. Set aside para matuyo.

● Pagsamahin ang egg, pinch of salt at vanilla extract, haluin para mag incorporate.

● Ibuhos ng dahan-dahan sa ginadgad na Kamoteng Kahoy ang coconut milk mixture. Haluin para mag well blended.

● Isalin sa mga llaneras ang Cassava mixture. Huwag masyadong pupunuin dahil aapaw ito kapag niluto. Takpan ng aluminum foil para maiwasang matuluan ng tubig kapag ini-steam.

● I-steam sa loob ng 45minutes to 1 hour sa mahinang apoy. Pagkaraan ng 45 minutes i-check sa pamamagitan ng toot, kapag wala ng sumamang mixture ibig sabihin ay luto na ito. Kapag may sumama pa lutuin pa ng 15 minutes.

● Hanguin sa steamer, palamigin at alisin ang takip.

● Isalin sa serving plate at hiwain ng naayon sa laki na gusto nyo.

Note: Pwede nyong gadgaran ng cheese sa ibabaw para lalong sumarap ang NO BAKE CASSAVA CAKE 🤤😋

Fruitcocktail Jelly Recipe, pang handa mo ngayong nalalapit na pasko!

Ingredients:
820g Fruitcocktail
1 can condensed milk
1 litre fresh milk
25g red jelly powder
1 tbs cornstarch
Grated cheese on top

Procedure:
Drain the Fruitcocktail and arrange to the prepared jelly moulder. Set aside
In a mixing bowl, combine fruitcocktail juice, condensed milk, and fresh milk.
In a pot, add red jelly powder and cornstarch, then pour the milk mixture. Bring to a boil over medium to low heat.
Stir constantly to avoid sticking at the bottom.
Turn off the heat when I start to boil and slowly pour into the jelly moulders.
Cool down completely before refrigerating for 2-3 hours or overnight.
Unmold into the prepared serving ding dish.
Top with the remaining fruitcocktail and grated cheese.

Biko Yema

INGREDIENTS

STICKY RICE:
2 cups glutinous rice - washed and drained
1 can coconut milk
1 cup water
1 cup dark brown sugar

CUSTARD TOPPING:
¼ can condensed milk
¼ can evaporate milk
¼ can coconut milk
2 pieces egg yolks
1 tablespoon flour

INSTRUCTIONS:
Grease an 8x8-inch square pan or baking dish with coconut oil. Set aside
In a large pot over medium heat, mix together the coconut milk and water. Add the glutinous rice. Bring to a simmer, then turn heat to low and cover.
Let it cook until all liquids are absorbed. The rice should only be almost cooked at this point, adding dark brown sugar. Stir constantly until fully cooked.
Transfer the rice into the greased pan and spread out evenly.

For Yema:
¼ can condensed milk,¼ can evaporated milk,¼ can coconut milk,2 pieces egg yolks,1 tablespoon flour
Mix all the ingredients for the custard in a bowl, then pour this over the rice.
Bake at 180C for 15-25 minutes or until custard is cooked and turns golden.

Native na nilupak na Kamoteng Kahoy

Sangkap:
1 kilo Kamoteng Kahoy, cut into chunky
½ cup ng condensed milk
1 piraso ng buko (grated)
3 kutsara ng margarine o butter
1 cup asukal (lightbrownsugar), mag adjust sa lasa

Paano Gawin:

Pakuluan ang kamoteng kahoy hanggang lumambot
Magkayod ng buko, ser aside
Kapag malambot na, hanguin at palamigin.
Ihanda ang lusong. Maglagay ng 3 piraso nilagang Kamoteng Kahoy durugin ito.
Durugin gamit ang lusong.
Maglagay ng margarine (o butter), niyog, condensed milk at asukal (brown sugar). Durugin muli ang kamoteng kahoy para humalo ang mga sangkap.
Umpisang dikdikin hangang sa kumunat ang kamoteng kahoy. Gumamit ng kutsara, medyo iflatten ito bago ipatong sa dahon ng saging. Gawin ito sa iba pang nilupak mixture.
Ibrush ng margarine ang bawat nilupak. Budburan ito ng konting minatamis na nyog.

Espasol Recipe

Ingredients:
● 3 cups glutinous flour
● 1 can coconut milk
● 1 can condensed milk
● 1 cup of fresh milk
● ½ tsp salt
● ½ cup light brown sugar

Procedure:
● Toast glutinous flour, stirring frequently for about 15 to 20 minutes or until colour changes to pale gold and aroma becomes nutty.
● Separate ½ cup for coating.
In the same pan, combine coconut milk, condensed milk, fresh milk, salt, and light brown sugar.
● Bring to a boil.
● Add toasted glutinous flour, whisking vigorously to preventlumps. Stirring and turning regularly for about 35 to 40 minutes or until very sticky and becomes oily.
● Dust the parchment paper with reserved toasted flour.
● Transfer the espasol into the dusted parchment paper.
● Flatten the espasol and slice into the desired lengths and then roll on to toasted flour to fully coat.
● Cut into bite size.

BIKO RECIPE

INGREDIENTS:
● 2 cups glutinous rice (malagkit)
● 4 cups coconut milk, divided
● 1 ½ cups brown sugar
● ½ teaspoon salt
● 1 cup coconut cream (kakang gata)
● Banana leaves (optional, for lining)

PROCEDURE:
Cook the Rice:
● Wash the glutinous rice thoroughly until the water runs clear.
● Combine the rice and 2 cups of coconut milk in a rice cooker. Cook until done. If you don't have a rice cooker, you can cook it in a pot over the stove. Bring to a boil, then reduce the heat to low and simmer until the rice is cooked and the liquid is absorbed.

Prepare the Coconut Mixture:
● In a large non-stick skillet or wok, combine the remaining 2 cups of coconut milk, brown sugar, and salt.
*Cook over medium heat, stirring continuously until the sugar is dissolved and the mixture starts to thicken.

Combine the Rice and Coconut Mixture:
● Add the cooked glutinous rice to the coconut mixture. Stir continuously until the rice is evenly coated and the mixture becomes thick and sticky. This will take about 15-20 minutes.

Prepare the Topping (Latik):
● In a separate small pan, cook the coconut cream over medium heat, stirring frequently, until it reduces and the oil separates. Continue cooking until brown solids form. These solids are called latik. Set aside.

Assemble the Biko:
● Line a 9x13 inch baking dish or a round cake pan with banana leaves (optional) for an authentic touch and easier removal.
*Spread the sticky rice mixture evenly in the pan, pressing it down gently to pack it.
Add the Topping:

● Sprinkle the latik evenly over the top of the biko.
Serve:

● Let the biko cool completely before cutting it into squares or desired shapes.

Kalamay Kamoteng Kahoy

● Ingredients:
● 1 cup grated cassava
● 2 cups glutinous flour
● 2 cups coconut milk
● Pinch of salt
● 1 cup of light brown sugar, adjust taste
● 1 tbs butter or margarine
● Latik for toppings

Procedure
● Hugasan at balatan ang kamoteng kahoy. Hatiin sa 3 piraso para madaling gadgarin ito.
● Gadgarin ng pino at sumukat lang ng isang cup.
● Ilagay sa isang mixing bowl, kamoteng kahoy, glutinous flour, coconut milk, sugar at pinch of salt pang balanse ng lasa. Haluin ● lang hangang sa wala ng buo-buo.
●Iluto sa isang kawali, sa katamtamang lakas ng apoy. Haluin ito ng tuloy-tuloy sa loob ng 10 minutes at maglagay ng butter.
●Ituloy ang pag halo sa loob ng 45 minutes to 1 hour.
● Isalin sa isang lalagyan na may dahon ng saging.
Palamigin bago hiwain at paibabawan ng latik sa ibabaw.

Steam Cassava cake Recipe

INGREDIENTS:
1 kg cassava (kamoteng kahoy)
2 eggs
Pinch of salt
1 tsp vanilla extract
1 can condensed milk
1 can coconut milk
2 tbs sugar to each llaneras for caramel
Margarine to brush the sides of llaneras

Procedure:
Wash and peel the cassava.
Use fine grater to grate the cassava.
Squeeze some excess liquid. Do not squeeze too hard.
Measure 4 cups of grated cassava. Set aside
In a mixing bowl, add eggs, a pinch of salt, vanilla extract, condensed milk, and coconut milk. Mix until well blended.
Slowly pour to the grated cassava. Mix well to incorporate. Set aside
Add sugar to the llaneras, put on top of the stove and heat using low fire. Swirl to spread evenly until caramel turns into liquid and becomes golden brown. Let it cool down completely to harden.
Brush with margarine the sides of llaneras (easy to unmold)
Pour cassava mixture for about ¾ of llaneras to avoid overflowing as you steam.
Cover with aluminum foil to avoid water droplets while steaming.
Steam for about 45 minutes to 1 hour.
After steaming, remove from the steamer. Cool down completely.
Remove the cover and transfer it to the serving plate.
You can add grated cheese for toppings.
