Bibingka Ube Recipe 😋🤤

Ingredients:
● 3 eggs
● ½ tsp salt
● 1 tsp vanilla extract
● ¾ cup sugar
● 50 ml melted butter
● 1 cup of fresh milk
● 2 cups coconut milk
● ½ can ube condensed milk
● 3 cups glutinous flour
● 3 tbs ube halaya

Procedure:
● Preheat oven to 350°F
In a mixing bowl, add eggs, sugar, salt, and vanilla extract. ● Mix well, add fresh milk, coconut milk, ube condensed milk, and melted butter. Whisk until well incorporate.
● Gradually add the glutinous flour, and ube halaya continue to whisk until the texture becomes soft.
Strain if needed.
● Brush with butter the 9-inch round moulder. Pour the glutinous mixture.
● Bake for 20 minutes.
● After 20 minutes, remove from the oven add ¼ cup of condensed milk and grated cheese on top.
● Put it back in the oven and continue to bake for 20 minutes or until golden brown.

Royal Bibingka ng Ilocos

️ Ingredients
●3 eggs
● Pinch of salt
● 1 tsp Vanilla extract
● 50ml melted butter
● 3 cups coconut milk
● ¾ can condensed milk
● 1 cup rice flour
● 2 cups glutinous flour

️ Toppings:
● Remaining condensed milk
● Grated cheese

️ Procedure

● Sa isang bowl, pagsamahin ang eggs, pinch of salt at vanilla extract. Haluin para mag incorporate.
● Ilagay ang 50ml melted butter, 3 cups na coconut milk, ¾ can condensed milk.
● Ihalo ang dry ingredients sa wet ingredients at dahan-dahang haluin ito hangang sa matunaw.
● Salain ito para maalis ang buo-buong flour mixture.
● Sa isang 9x5 inch na baking pan. Sapinan ng dahon ng saging. I-brush ng natirang melted butter para maiwasang dumikit ang mixture.
● Ibuhos ng dahan-dahan ang flour mixture.
● I-bake sa preheated oven na 180°C ang init sa loob ng 20 minutes.
● Pagkaraan ng 20 minutes, hanguin ito at ilagay ang natitirang condensed milk sa ibabaw. Spread evenly.
● Gadgaran ng cheese at i-bake muli sa loob ng 10 minutes o hangang mag golden brown ang ibabaw.
● Hiwain ng naaayon sa laki na gusto nyo. Palamigin para lalong manuot ang lasa ng napakasarap na kakanin ng Ilocos.

Note: Pwede rin kayong maglagay ng grated cheese sa flour mixture at kinayod ba buko para lalong maging espesyal ang inyong

Sapin-sapin Recipe, kakanin meryenda!

Ingredients:
● 2 cups glutinous rice flour
● 1 cup rice flour
● 2 ½ cup coconut milk
● 1 cup condensed milk
● ½ cup sugar (white)
● Food colors - yellow & violet - 1 teaspoon each color

FOR TOPPING: Latik
● 1 can coconut milk o unang pigang gata

PROCEDURE:

● Pagsamahin ang glutinous flour, rice flour at white sugar sa isang bowl.Haluing mabuti.
● Ilagay ang coconut milk at condensed milk, haluin. Salain ang mixture para mawala ang namuong galapong.
● Divide into 3 parts ang mixture. Sa bawat lalagyan, lagyan ng food color. Haluin mabuti.
● Pahiran ng coconut oil ang 8x8 non-stick pan. Saka maglagay ng unang layer white glutinous mixture. Steam for 5 minutes
● After 5 minutes, ilagay ang yellow mixture. Steam for 10 minutes
● After 10 minutes, isunod ng ilagay ang purple mixture at i- steam sa loob ng 15 to 20 minutes.
● After 15 to 20 minutes I- check sa pamamagitan ng toothpick, kapag wala ng sumamang mixture ibig sabihin ay luto na ito.
● I-ahon sa steamer palamigin bago ilipat sa serving plate n may sapin ng dahon ng saging.
Hiwain sa laki na naayon sa gusto nyo at budburan ng latik sa ibabaw.

Paano magluto ng Latik:
● Ilagay s kawali ang 1 can ng coconut milk o unang piga ng gata.
● Pakuluan hanggang sa mag evaporate ang gata at mamuo ang latik.
● Kapag namuo n ang latik hinaan ang apoy, haluin ng dahan-dahan hangang sa mag golden brown ang kulay ng latik. Salain para maghiwalay ang latik sa langis.

❗️ Note: Balutin ng tela ang takip ng steamer para maiwasang huwag matuluan ng tubig ang sapin-sapin.

Miswa at Patola, budget recipe ulam!

Ingredients
3 medium patola
1 tablespoon canola oil
1 onion
2 cloves garlic
10 pcs prawns
1 tablespoon fish sauce
2 cups water
2 ounces miswa noodles
salt and pepper to taste

Instructions:
● Cut off both ends of the patola and discard.
● Using a vegetable peeler, peel the skin.
● Slice the peeled gourd crosswise into about ¼-inch thick.
● In a wide pan over medium heat, heat oil.
● Add onions and garlic and cook until softened.
● Add prawns and cook, breaking apart with the back of a spoon, until lightly browned.
● Add fish sauce and continue to cook, stirring occasionally, for about 1 to 2 minutes.
● Add water and bring to a boil, skimming any scum that may float on top.
● Lower heat and cook for about 10 minutes or until pork is tender.
● Add patola and cook for about 3 to 5 minutes or until tender yet crisp.
● Add miswa noodles and cook for about 1 to 2 minutes or until softened.
● Season with salt and pepper to taste. Serve hot

Authentic Biko Recipe

INGREDIENTS:
● 2 cups glutinous rice (malagkit)
● 4 cups coconut milk, divided
● 1 ½ cups brown sugar
● ½ teaspoon salt
● 1 cup coconut cream (kakang gata)
● Banana leaves (optional, for lining)

PROCEDURE:
Cook the Rice:
● Wash the glutinous rice thoroughly until the water runs clear.
● Combine the rice and 2 cups of coconut milk in a rice cooker. Cook until done. If you don't have a rice cooker, you can cook it in a pot over the stove. Bring to a boil, then reduce the heat to low and simmer until the rice is cooked and the liquid is absorbed.

Prepare the Coconut Mixture:
● In a large non-stick skillet or wok, combine the remaining 2 cups of coconut milk, brown sugar, and salt.
*Cook over medium heat, stirring continuously until the sugar is dissolved and the mixture starts to thicken.

Combine the Rice and Coconut Mixture:
● Add the cooked glutinous rice to the coconut mixture. Stir continuously until the rice is evenly coated and the mixture becomes thick and sticky. This will take about 15-20 minutes.

Prepare the Topping (Latik):
● In a separate small pan, cook the coconut cream over medium heat, stirring frequently, until it reduces and the oil separates. Continue cooking until brown solids form. These solids are called latik. Set aside.

Assemble the Biko:
● Line a small round cake pan with banana leaves (optional) for an authentic touch and easier removal.
*Spread the sticky rice mixture evenly in the pan, pressing it down gently to pack it.

Add the Topping:
● Sprinkle the latik evenly over the top of the biko.
Serve:

● Let the biko cool completely before serving..

Ganitong luto ng Kamoteng Kahoy!

Ingredients:
1 kg grated cassava
4 tbs butter
1 can coconut milk
1 can kremdensada
¾ cup sugar, adjust taste accordingly
Grated cheese on top

Procedure:
Hugasan at balatan ang kamoteng kahoy. Hatiin sa tatlong bahagi at ilagay sa isang kaserola. Lagyan ng tubig at pakuluan ito hangang sa lumambot ng bahagya.
Hanguin at palamigin, gadgarin ng pino.
Sa isang kawali, maglagay ng butter at gata. Ilagay n rin ang kremdensada, haluin at pakuluan. Ilagay ang nagadgad na kamoteng kahoy. Haluing mabuti hanggang sa magsama ang mga sangkap.
Magdagdag ng asukal kung kinakailangan.
Lutuin at haluin sa loob ng 30 minutes o hangang sa kumunat na itong haluin.
Isalin sa isang lalagyan na may sapin na parchment paper o dahon ng saging.
Gadgaran ng cheese sa ibabaw para lalong lumasa ang kamoteng kahoy. Simple pero sobrang sarap na recipe.

Bibingkang Kamoteng Kahoy (bake Cassava)

● Ingredients:

● 1 cups glutinous rice flour
● 2 cups grated Cassava
● 1 can coconut milk
● 3/4 can condensed milk
● 1 cup evaporated milk
● 3 tbs Melted butter
● 3 eggs
● 1/2 cup sugar
● 1/4 tsp salt

● Toppings:
Remaining condensed milk
Grated cheese

● Combine eggs, sugar, vanilla extract, pinch of salt. Stir to incorporate, add melted butter, condensed milk, coconut milk, evaporated milk. Slowly add glutinous flour. Mix until no lumps and smooth runny batter. Strain if needed. Then add the grated cassava, mix until well combined.
Pour into baking pan.
● Bake for 30-35 minutes over 350*F, remove from oven. Add the remaining condensed milk, grated cheese and bake for another 15 minutes or until golden brown

Macaroni fruit cocktail salad

Ingredients:
300 grams Macaroni
1 small jar of red kaong, drained
1 small jar of green kaong, drained
1 can kremdensada
All-purpose cream
1 small box raisin
834 grams fruit cocktail, drained
100 grams cheese cubes

Procedure:
Check packaging instructions on how to boil the macaroni. Add 1 tbs of oil and 1 tsp of salt the water.
Strain and drain the water, set aside to cool down.
In a mixing bowl, put the all-purpose cream and kremdensada whisk to incorporate. Add red kaong,green kaong, fruit cocktail, cheese cubes, raisin, and macaroni. Mix well to incorporate all ingredients.
Cover with plastic cling wrap and refrigerate for about 3 hours to overnight.

Note: You can add mayonnaise

Paano mag luto ng Latik?
Para sa mga nagtatanong paano ito lutuin.

Ingredients
500 ml coconut cream/unang gata

Instructions
Pour the can of coconut cream into a shallow pan.
Turn the heat on medium high bring up the coconut cream to a running boil. This will take about 5 minutes.
Once it has come up to a boil, turn the heat down to medium and let it boil for a further 14 minutes. Stir it occasionally.
After about 18 minutes you can see that the coconut fat is starting to separate. Turn the heat down to low.
you can start to see the formation of latik. This is when you have to keep watching it so it doesn't get over cooked.
After about 24 minutes the Latik is now golden and crispy. Turn of the heat .Pour it through the strainer to separate the crispy curds or latik from the coconut oil.
Let it cool down the latik and store in separate glass jars.

Espasol Recipe

Ingredients:
● 3 cups glutinous flour
● 1 can coconut milk
● 1 can condensed milk
● 1 cup of fresh milk
● ½ tsp salt
● ½ cup light brown sugar

Procedure:
● Toast glutinous flour, stirring frequently for about 15 to 20 minutes or until colour changes to pale gold and aroma becomes nutty.
● Separate ½ cup for coating.
In the same pan, combine coconut milk, condensed milk, fresh milk, salt, and light brown sugar.
● Bring to a boil.
● Add toasted glutinous flour, whisking vigorously to preventlumps. Stirring and turning regularly for about 35 to 40 minutes or until very sticky and becomes oily.
● Dust the parchment paper with reserved toasted flour.
● Transfer the espasol into the dusted parchment paper.
● Flatten the espasol and slice into the desired lengths and then roll on to toasted flour to fully coat.
● Cut into bite size.

Egg drop soup recipe!

Ingredients:
4 cups of water
½ tsp salt (adjust taste accordingly)
½ white pepper
1 tsp chicken powder
1 tbsp chopped onion
1 tbsp grated ginger
½ cup finely chopped carrot
2 eggs
2 tbsp cornstarch + 4 tbsp water to dilute
Chopped spring onion
Grated corn (optional)

Procedure:
Add 4 cups water in the pot, salt ,white pepper and chicken powder. Bring to a boil.
Grate the corn while waiting to boil.
Add grated corn, onion, carrot and ginger cover the lid and boil over medium heat .
Dilute the cornstarch, slowly add to the mixture .
Beat 2 eggs and pour very slowly while stirring over low heat .

Use more or less cornstarch if you like a thicker or thinner soup.
Adjust taste accordingly!

☑️ Ube Kalamay na may latik

● 4 cups coconut milk
● 3/4 cup grated purple yam ube
● 2 teaspoons purple ube flavoring
● 2 cups glutinous rice flour
● 1 ½ cup granulated white sugar
● ½ cup latik
● 2 tablespoons coconut oil

☑️ Instructions
● Combine glutinous rice flour, and 2 cups of coconut milk in a bowl. Mix well using a wire whisk. Set aside.
● Pour 2 cups of coconut milk. Let boil.
Add shredded purple yam. ● Stir and cook in medium heat for 3 minutes.
● Pour the glutinous rice flour mixture into the cooking pot. Stir until all the ingredients are well blended.
● Gradually add the sugar while stirring. Continue to cook until the mixture becomes very thick.
● Brush coconut oil in a mold (I used a quiche mold for this recipe). Put the cooked ube kalamay in the mold. Spread it around the mold. ● Brush remaining coconut oil over the ube kalamay.
● Flatten top using a spoon. Top with latik.
