Ingredients
For the stuffing:
1 cup grated Eden Cheese
1 cup cubed Eden Cheese
1 large fresh bangus (milkfish)
1 small onion, finely chopped
1 small green bell pepper, finely chopped
3 cloves garlic, minced
1 small carrot, finely diced
1 small potato, finely diced
ยผ cup raisins (optional)
ยผ cup green peas (optional)
ยผ cup pickle relish
ยผ cup all-purpose flour (binding agent)
1 tbsp tomato paste
For the skin marinade:
2 tbsp soy sauce
2 tbsp calamansi juice
2 tbsp white vinegar
Salt and pepper to taste
Cooking oil for frying
Instructions:
1. Prepare the Fish:
โข Clean the bangus thoroughly and remove the scales.
โข Carefully remove the guts by making a small cut near the belly.
โข Loosen the meat inside by gently pounding the fish all over with the back of a knife or a rolling pin.
โข Pull out the meat through the opening without breaking the skin.
โข Marinate the fish skin with calamansi juice, soy sauce and vinegar for at least 30 minutes.
2. Boil, Debone and Flake the Fish Meat:
โข Boiling the fish in water, add salt and pepper.
โข Remove all the bones from the extracted fish meat.
โข Flake the meat using a fork or your hands.
3. Cook the Filling:
โข Heat oil in a pan and sautรฉ garlic and onion until fragrant.
โข Add the vegetables and cook until soft.
โข Stir in the flaked bangus meat, carrots, peas, pickle relish and raisins.
โข Season with soy sauce, salt, and pepper. Cook for about 5 minutes.
โข Remove from heat and let it cool slightly before mixing in the beaten egg or all-purpose flour. This is optional.
4. Stuff the Fish:
โข Carefully stuff the mixture back into the fish skin, reshaping it to its original form. Add more Eden Cheese to make it Eden Better.
โข Sew or secure the opening with toothpicks to keep the stuffing inside.
5. Bake the Bangus:
โข Preheat the oven to 375ยฐF (190ยฐC).
