Ingredients:
Sushi Rice:
2 cups Japanese rice
1/8 cup mirin or white vinegar
1/8 cup Japanese soy sauce
2 tablespoons white sugar
Fillings:
1 cup imitation crab meat, chopped
1/2 cup Eden cheese, grated
5 pcs seaweed wrapper
Topping:
1 cup Eden Cheese, grated
1 tbsp Japanese mayonnaise
1 whole ripe mango, diced
1 cup masago (orange fish eggs, optional)
1 cup crispy seaweed
Instructions:
1. Rinse the rice under cold water until the water runs clear. Cook rice in the rice cooker. Let it rest for 10 minutes off the heat.
2. In a mixing bowl, combine mirin/white vinegar, Japanese soy sauce, and white sugar. Stir this mixture into the cooked rice and let it cool.
Assemble the Sushi Bake:
3. In a baking dish or foil tray, spread a layer of sushi rice evenly on the bottom. Layer the seaweed wrapper, Japanese mayonnaise, grated Eden Cheese, chopped imitation crab stick, and repeat. You can adjust the layers.
4. Preheat your oven to 375ยฐF (190ยฐC) Bake for about 15-20 minutes, or until the cheese is melted.
5. Add ripe mangoes on top, Japanese mayo, julienned seaweed wrapper and masago!

DELICATO SAUSAGE GUMBO ๐ ๐
Christmas Brunch idea guys! This dish can make your Festive celebrations more delightful and special!
Ingredients:
10pcs Delicato Smoked sausage, sliced
4pcs chicken thighs or breast, boneless and skinless, cut into bite-sized pieces (optional, for added protein)
10 pcs shrimp, deveined and peeled
1 white onion, diced
1 bell pepper, diced
2 celery stalks, diced
4 cloves garlic, minced
6 cups chicken stock (or water)
1/4 cup vegetable oil (for the roux)
1 tsp dried thyme
1 tsp dried oregano
1/2 tsp cayenne pepper (adjust to heat preference)
Salt and pepper, to taste
Cooked rice (for serving)
Slurry (thickening liquid):
2 tbsp tapioca flour or cassava powder
3 tbsp water
Instructions:
1. Cook the protein:
- Sautรฉ the shrimp heads in oil for 2 minutes, pressing them to release their flavor. Add water and simmer for 2 minutes, then strain and set the liquid aside.
- Next, sautรฉ the shrimp in oil, adding cayenne pepper. Once the shrimp turns orange, remove them from the pan and set aside.
- Sautรฉ Chicken breast in oil, once it changes its color, set aside.
2. Sautรฉ the vegetables:
High-heat pot, add cooking oil then sautรฉ the diced onion, garlic, bell pepper, and celery to the pot. Cook for 5-7 minutes, stirring frequently until the vegetables soften.
3. Add liquids and simmer:
Pour in the chicken stock or water. Stir to combine, then bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 45-60 minutes, uncovered, to allow the flavors to meld together.
4. Make the slurry:
In a small cup, add water then mix tapioca flour or cassava powder. Mix the cold starch and whisk continuously with water. Add in the soup. Stir constantly. This will thicken the soup.
5. Finish the Gumbo:
Add Delicato Prime Sausage, and cooked proteins. Season the gumbo with herbs, salt and pepper to taste. Simmer for 5 minutes.
Serve the sausage gumbo over hot cooked rice. Garnish with chopped green onions and

Cheesy Embutido Balls ๐๐
Handa na ba ang lahat para sa Noche Buena? If hindi pa, share ko sa inyo ang recipe nitong Cheesy Embutido Balls para mas kumpleto ang saya ng darating na pasko!
Ingredients:
1 kg ground pork
3 hard boiled eggs
1/2 cup sweet pickle relish
4 fresh eggs
2 cups Eden cheese, grated
1 red bell pepper, minced
1 cup raisins
1 carrot, minced
5 cloves garlic, minced
1 onion, minced
1 tsp salt and pepper
1 to 1 1/2 cups bread crumbs
1. Combine all ingredients in a mixing bowl. Ground pork, onion, garlic, red bellpepper, pickle relish, salt and pepper, raisins, bread crumbs, eggs. Do not overmix to avoid tough embutido/meatloaf.
2. Cut cling wrap. Place the meat mixture in an aluminum foil and flatten it.
3. Put in the sliced boiled eggs, you can add hotdogs.
4. Form the cling wrap to a โballโ Once done, twist, lock and tie the edges. Poke 5x with knife to release air and cook evenly.
5. Now place in a steamer and let cook for 30 minutes.
6. Place inside the refrigerator until temperature turns cold. Or directly fry in a hot pan for 2 minutes both sides.
Serve and enjoy!
