Ingredients:
🥬 Lettuce leaves (2 cups, washed and chopped)
🥑 Avocado (1 large, sliced or diced)
🍅 Cherry tomatoes (1 cup, halved)
🥚 Hard-boiled eggs (2, halved or sliced)
🧂 Salt and black pepper (to taste)
🫙 Olive oil (2 tbsp)
🍋 Lemon juice (1 tbsp)
Instructions:
Prepare the Ingredients

Wash and dry the lettuce. Chop or tear it into bite-sized pieces.
Slice or dice the avocado and halve the cherry tomatoes.
Boil the eggs, let them cool, peel, and slice in half.

For the Scrambled Eggs:
3 large eggs
1 tbsp butter
¼ tsp salt
¼ tsp black pepper
For the Garlic Mushrooms:
1 cup whole mushrooms
1 tbsp olive oil
1 clove garlic, minced
½ tsp salt
¼ tsp black pepper
1 tbsp fresh parsley, chopped
For the Sautéed Greens:
1 cup kale or spinach, chopped
1 tsp olive oil
¼ tsp salt
For the Avocado Salsa:
½ avocado, mashed
½ cup cherry tomatoes, halved
1 tbsp fresh cilantro or parsley, chopped
½ tbsp lemon juice
¼ tsp salt
¼ tsp black pepper
🍽️ Step by Step:

1️⃣ Prepare the Garlic Mushrooms:

Heat olive oil in a pan over medium heat.
Add whole mushrooms, garlic, salt, and black pepper.
Sauté for 5-7 minutes until browned and tender.
