Easy Tuna Nugget Recipe

Ingredients
3 (5-oz) cans tuna, drained
½ cup breadcrumbs
1 Tbsp mayonnaise (use egg-free vegan mayo or spread if allergic to eggs)
1 Tbsp chopped dill (or use finely chopped parsley or cilantro)
1 Tbsp lime juice (or lemon juice, about ½ lime or lemon)
½ tsp garlic powder
Optional: salt and pepper, to taste
Olive oil for cooking (1-2 Tbsp

Instructions

1. Thoroughly drain the canned tuna in a colander, and press down with a spoon to remove all the excess liquid.

2. In a large bowl, combine the tuna, breadcrumbs, mayonnaise, chopped dill, lime juice, and garlic powder. Break up any large chunks of tuna with a fork and mix well. Taste to see if you need to season with salt and pepper.

3. Use your hands to scoop out about 1-2 tablespoons of the tuna mixture and form nuggets (press firmly when making the nuggets so they don't fall apart).

4. Heat the olive oil in a large skillet, and cook the nuggets over medium heat for 2-3 minutes, or until lightly browned. Use tongs to gently flip the tuna nuggets and cook for 2-3 minutes on the other side. Serve warm with ketchup or tartar sauce for dipping.

5 Ingredient Chicken Noodle Soup Recipe

Ingredients

2 cups chicken broth
▢1/2 cup small noodle, pastina, macaroni, small shell, egg noodle
▢1/2 cup frozen peas and carrots
▢1/2 cup shredded rotisserie chicken

Instructions

1. In a medium pot over medium high heat, bring the chicken broth to a boil. Reduce heat to a simmer, and add in the noodles.

2. Cook the noodles according to the package. When there is about 5 minutes left on the noddles, add in the frozen veggies and rotisserie chicken.

3. Once everything is soft and cooked through, cool and serve! To serve to younger toddlers that are still working on using a spoon, I strain out the broth.

Creamy Pesto Pasta Recipe

Ingredients

1 tbsp olive oil
▢1/2 cup pesto
▢1 cup heavy whipping cream
▢10 oz pasta
▢salt to taste
▢mozzarella balls

Instructions

1. Cook pasta according to the instructions on the package.

2. Heat olive oil and pesto over medium heat for about 2 minutes.

3. Add heavy whipping cream and heat for 2 more minutes.

4. Salt to taste. Don't skip this step, it makes a big difference!

5. Add cooked pasta to the sauce and mix well. Top with mozzarella balls.

One Pot Pumpkin Mac N Cheese Recipe

Ingredients
▢2 tbsp butter
▢1 pound elbow noodles
▢4 cups Kettle+Fire chicken bone broth
▢1 cup milk
▢1 cup pumpkin puree
▢1.5 cups shredded cheddar cheese
▢1 tsp garlic powder

Instructions

1. In a large pot, melt the butter over medium high heat.

2. Add the noodles and stir to coat them with the butter.

3. Add the Kettle and Fire chicken bone broth and cook over medium high heat for 10 minutes (at a boil)

4. After 10 minutes, add the milk and pumpkin puree (don't strain the noodles). Continue to boil for another 5-8 minutes or until the pasta is cooked and soft.

5. Add the shredded cheddar cheese and garlic powder. Stir over medium heat until the sauce is smooth and noodles are cooked.

6. Let the mac and cheese slightly cool and enjoy!

5 Easy Activities for 1-Year-Olds

What are the best activities for 1-year-olds?
The best activities for 1 year olds are not “baby” activities.

The best activities for 1 year olds are not “toddler” activities.

The best activities for 1 year olds are “taby” activities, activities that are specificially designed for this unique age group.

What is a “taby”?

A taby is my made up word for children (approximately) between the ages of 12 months old and 24 months old. These often have all the ideas and hopes of a toddler, but are still growing the motor skills to put those plans into action. It’s an amazing age group, but it can be frustrating to find activities that suit them.

What to consider with activities for 1-year-olds
When I’m looking for a taby activity, I’m looking for a couple of things:

Is it easy to set up? This age group will most likely only play with an activity for 5 minutes. I need something that can be set up in seconds to get a great return of time investment.
Is it taste safe? This age group is still exploring objects orally so it’s important to use safe items for them.
Is it something he can be successful with? My taby is frustrated enough that he can’t keep up with his siblings. I need activities that he can feel and be successful at.

What’s the difference between masking tape and painter’s tape?
They are very similar and can both be used for these activities, but in general, painter’s tape is less likely to leave a sticky residue and is much easier to remove.
