I have seen a big part of the world traveled lived and explored many places. But the Philippines has captured my attention more

than any other. The best and most friendly people I have ever meet. Some of the best food and hands down the most beautiful country I have found with so many natural wonders to see and explore. The people of the Philippines the culture the hardships the happiness of everyday people I meet and interact with. I seek explore the most beautiful places nature has given us here. Eat foods from modern to traditional and sometimes exotic food.

My Filipino Beer Journey, 25 Years of Cheers 🍻
Let me take you back to December 1999. Y2K panic was in full swing, boy bands ruled the airwaves, and there I was at the Bahrain International Hotel, holding my very first Filipino beer. Fast forward 25 years (and countless beers later), here I am, still raising a glass and wondering where the time—and my metabolism—went.

Seaweed Salad: A Filipino Favorite

Seaweed salad, locally known as guso, is a beloved dish in the Philippines, especially in coastal regions. Made from fresh seaweed varieties like lato (sea grapes) or guso (Eucheuma), this simple yet flavorful dish is a staple at Filipino gatherings, especially in provinces near the sea.

The preparation is straightforward but celebrates the beauty of fresh, local ingredients. The seaweed is rinsed thoroughly, then tossed with diced tomatoes, onions, and sometimes ginger. A generous drizzle of native vinegar or calamansi juice ties it all together, creating a tangy, refreshing side dish that perfectly complements grilled or fried seafood.

What makes seaweed salad so special is its crisp texture and briny flavor that reminds you of the ocean. Plus, it's packed with nutrients like iodine, calcium, and vitamins, making it as healthy as it is delicious!

As soon as the -ber months roll in (hello, September!), the festive vibes begin. Malls start playing Christmas carols, streets are adorned with colorful lights, and you’ll spot parols (traditional lanterns) everywhere. It’s a vibe like no other! It's a season of joy, reunions, and nonstop feasting that stretches all the way to January 6th! 🥳🎁
