This pineapple/carrot cake is dense but fluffy, moist, and very yummy with pineapple slices garnished at the bottom of the pan to make an elegant look when flipped upside down. This is just so delicious, you keep wanting for more. Invite your friends now for a coffee/tea break.

Ingredients/Procedure:
A 1. In a bowl, mix or cream:
3/4C vegetable oil
1 1/2C packed brown sugar
1/2 C granulated sugar

2. Add 4 Large eggs
3. 1 C crushed pineapple , slightly squeezed
4. Set it aside

B. In another bowl, mix the ff:
1. 2C all-purpose flour (spooned and levelled)
2. 2 tsp baking powder
3. 1 tsp baking soda
4. 1 1/2tsp ground cinnamon
5. 1/2 tsp ground ginger or 1 tsp fresh ginger juice
6. 1/2 tsp salt

C. Add A to B
D. Add also the ff:
1 tsp vanilla
3C grated carrots
3/4C crushed walnuts
1/2C raisins
Mix well

E. Spray or oil inside a bundt pan

F. Arrange some slices of pineapple (see video) at the bottom of the pan

G. Pour or spoon the cake mixture into the pan

H. Pre-heat oven to 350 degF and bake the cake mixture for 40-45 minutes or when a toothpick is inserted comes out clean

I. Slice and ready to serve
J. ENJOY it with your favourite coffee or tea

EASY JELLO for the Holidays.
Ingredients:
a) 1 box (3oz) Jell-O (lime)
b) 1 box (3oz Jell-O (cherry)
c) 1 sachet (Knox unflavoured gelatine)
d) 1/2 can condensed milk

Procedure: (Note: Do not follow the instructions on the package box, to have a firmer jello)
1. Dissolve each box of Jello-O in 1 C boiling water, separately. Pour each in a plastic containers. Cool it down and put them in the fridge to set (about 2-3 hrs). Take it out and slice them in small cubes. Set aside.
2. In a bowl, pour 1/4 C water. Add the unflavoured gelatine. When it blooms, add 3/4C boiling water. Mix.
3. Add the condensed milk (1/2 of a can). Let it cool down but not set).
4. On a round glass container, arrange the jello/s as seen in the video, (green on the outer part of the circle and red at the middle). Then pour gently half of the unflavored gelatine mixture. Put it in the fridge for few minutes to let it set. Take it out and pour the remaining unflavored gelatin mixture and let it HALF-SET (important), then arrange the remaining green and red jellos on top of it. Put it back in the fridge to make it fully set. ENJOY

ACHARA (Simpleng Papaya Pickle)
Ingredients:
1 big green papaya, peeled, seeds removed and grated
1 m/s carrot, perled and grated
1 red bell pepper - thinly sliced
1/2 onion - thinly sliced
1 pc light green jalapeño pepper, seeded and sliced

Put them all in a big bowl, spray with 1 TB salt and let it sit for 1 hr. After 1 hr, squeeze them to remove the liquid.

Pickling Sauce:
2 1/2 C white vinegar
1 C white sugar
1 tsp salt
1 tsp ground pepper
3 cloves garlic, thinly sliced
6 thin slices of ginger root

Put them all in a saucepan and boil/simmer it for 5 minutes. Cool it down

Put the squeezed papaya mixture in a sterilized jar (washed with boiling water including lid). Add the pickling juice. Store in the fridge. Good as a side dish or appetizer. Enjoy

Kaya nga, gusto ko munang mag-pahinga para aalis ang mga hindi sincere sa pag-follow … infested na yata hahahah

Amelia is back on the ice-skating rink after few years of non-practice since the covid pandemic.
She was excited and glad that she could do this again after a while.

I don’t understand Meta. I send/give stars to my friends/followers to show appreciation to their work/posts or videos and also to reciprocate to their being supportive of my own videos or posts. Isn’t it a nice gesture to do this?

I don’t offer or send stars in exchange for engagements (as stated in this notification from Meta). Actually, I don’t even get engagements to some of those whom I sent stars though I really don’t expect them to. It’s just a nice thing to do to show support to our fellow content creators,

Just being disappointed here… ☹️

This classic quick stir-fried green beans is cooked well but is crunchy and so delicious. It could be an appetizer or a side dish.

Make a noisy slurpy to sound like the soup is really tasty and delicious .. Wonton wrapper cut-outs, siomai, shrimps, eggs. vermicelli and some seasonings plus chili sauce make this heavenly soup a real “must try” one.
