Pan-Fried Fish with Ginger and Scallions:

Ingredients:

1 fish (such as sea bass, tilapia, red snapper or other white fish) cleaned, scaled and sliced
Salt and pepper
Cooking oil
Ginger, sliced
Garlic, minced
Green onions, chopped
Red chili peppers, sliced (optional)
Soy sauce
Rice wine or dry sherry

Instructions:

Prepare the fish: Rinse the sea bass fillets and pat them dry. Season with salt and pepper.

Pan-fry the fish: Heat oil in a large skillet over medium-high heat. Add the fillets skin-side down and cook for 3-4 minutes until the skin is crispy and golden brown. Flip the fillets and cook for
another 1-2 minutes until cooked through. Remove from the pan and set aside.

SautΓ© aromatics: Add a bit more oil to the pan, then add the ginger, garlic, and red chili peppers (if using). SautΓ© for 1-2 minutes until fragrant.

Add sauce: Pour in soy sauce and rice wine, and let it sizzle for a few seconds.

Finish: Return the sea bass fillets to the pan, coating them with the sauce. Garnish with green onions and serve hot.

Ravioli with Tomatoes, Asparagus, Garlic, and Herbs

Ingredients:

1 tablespoon olive oil
1 pound asparagus, ends trimmed, cut into 2-inch pieces
2 cups cherry tomatoes, halved
3 cloves garlic, minced
Salt and pepper to taste
1/4 cup chicken broth
1 tablespoon lemon juice
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan cheese, plus more for serving
1 package (20 ounces) refrigerated cheese ravioli

Directions:

Cook the ravioli according to the package instructions. Drain and set aside.
In a large skillet, heat the olive oil over medium-high heat. Add the asparagus and cook for 4-5 minutes until tender-crisp.
Add the cherry tomatoes and garlic to the skillet. Season with salt and pepper. Cook for another 2-3 minutes until the tomatoes begin to soften.
Pour in the chicken broth and lemon juice. Bring to a simmer and cook for 2 minutes.
Add the cooked ravioli to the skillet and gently toss to combine with the vegetables and sauce.
Stir in the fresh basil, parsley, and grated Parmesan cheese. Cook for another 1-2 minutes until everything is heated through.
Serve the ravioli hot, topped with additional Parmesan cheese if desired.

Fried pork liver

ingredients:

pork liver
beer
soysauce
cooking oil
ground black pepper
shredded ginger
chili pepper
green onions

1. Clean the pork liver, cut it into slices, put it in a bowl, and add a bottle of beer to remove the fishy smell.

2. After the alcohol in the beer evaporates, take out the pork liver and add shredded ginger, pepper, soy sauce and appropriate amount of salt to marinate for 10 minutes.

3. Add appropriate amount of oil to the pot. When the oil is hot, add minced garlic and chili to stir-fry. Then pour in the marinated pork liver and stir-fry quickly.

4. After the liver changes color, add soy sauce for seasoning. After the liver is cooked, sprinkle with green onion

Serve with rice

eggplant in garlic sauce

Ingredients:

1 large eggplant
2 tablespoons oil
3 cloves garlic, minced
1 inch piece of ginger, minced
1-2 red chilies, sliced
2 tablespoons soy sauce
1 tablespoon vinegar
1 tablespoon honey
1 teaspoon sesame oil
Salt and pepper to taste
Sesame seeds and chopped cilantro for garnish

Instructions:

1. Prepare the eggplant:
Cut the eggplant into 1-inch cubes. Sprinkle with salt and let sit for 30 minutes. Rinse and pat dry.

2. Cook the eggplant:
Heat the oil in a large skillet over medium-high heat. Add the eggplant and cook until golden brown, stirring occasionally.

3. Add the aromatics:
Add the garlic, ginger, and chilies to the skillet and cook for 1 minute.

4. Make the sauce:
In a small bowl, whisk together the soy sauce, vinegar, honey, and sesame oil.

5. Combine and serve:
Pour the sauce over the eggplant and stir to coat. Cook for an additional 2-3 minutes, or until the sauce thickens. Garnish with sesame seeds and cilantro.

Pork Pochero Recipe ❀️
Ingredients:
2 pounds pork belly - cut into cubes
2-3 tablespoons oil
2 ripe saba bananas - each cut into 3 pieces
1 small carrots - cut into chunks
1 big or 2 medium potatoes - cut into quarters
2 cloves garlic - minced
1 medium onion - chopped
2 medium tomatoes - cut into chunks
1 tablespoon tomato paste
2 tablespoons fish sauce
β…› teaspoon ground pepper
2-3 cups pork broth - or water
1 cup baguio beans
1 cabbage sliced into 4

Instructions:
Boil pork belly in water until it becomes tender. Separate the meat and broth when ready to cook.

Heat oil in a deep pan or a pot and fry the potatoes, carrots, and bananas until the edges are slightly browned. Remove from oil and transfer to a plate.

In the same oil saute garlic, onion, and tomato until limp.

Add the pork belly cuts and the tomato paste.
Season with fish sauce and ground pepper.

Next, add back the fried potatoes, carrots and banana (saba) and also the baguio beans

Pour in the broth/water and let it simmer to cook the potatoes and carrots and until the broth turns into a thicker sauce.

Lastly, add the cabbage and Cover the pot for 3 minutes to cook the cabbage
