Flavour-packed Malt Vinegar Roasted Chicken Thighs & Legs with Onions! Tender, juicy chicken marinated in DYC malt vinegar, brown sugar, and thyme, roasted to perfection. A deliciously savory dish for any day of the week. Try it tonight! 🌿🍽️
Ingredients:
10 Chicken thighs & legs
200ml DYC malt vinegar
2tbsp dark brown sugar
6 thyme sprigs 2 red onions
3tbsp olive oil for cooking
Method:
Add the chicken pieces into a large bowl, add thyme, brown sugar and DYC vinegar. Cover the bowl & leave to marinade for 1 hour. Slice the onions into wedges,
Preheat the oven to 180 degrees.
In a large baking tray add the onions and chicken pieces. Pour all the marinading liquid over the chicken.
Place the chicken into the oven, cook for 30 minutes. After 30 minutes remove from the oven & using a spoon, spoon the cooking liquid over the chicken. Return the chicken to the oven for a further 15 minutes of cooking.
Remove from the oven & serve the onions & chicken on a large serving plate.
Whisk the juices from the pan together and pour over the chicken. Serve with roasted potatoes or home cut chips.

Start your week with this FreshLife Gluten free popcorn chicken.
Ingredients:
2 large free range chicken breasts
1 cup plain Greek yoghurt
1 egg
For the crumb
2 cups Freshlife Cornmeal flour
1 tsp mixed herbs
1.5 tsp paprika
1 tsp salt
1 tsp oregano
½ tsp garlic powder
½ tsp onion powder
¼ tsp mustard powder
¼ tsp black pepper
Method:
Cut the chicken into small bite size pieces. Season the chicken with salt and pepper.
In a large bowl, beat together the yoghurt and egg. Add the chopped chicken and mix until well coated. Set aside for 15 minutes.
In a separate bowl, mix together the FreshLife cornmeal flour, herbs, spices, salt and pepper.
Place a small handful of chicken pieces into the cornmeal flour and toss about to coat evenly. Transfer to a large plate.
Repeat till all the chicken pieces have been crumbed.
To cook in the air fryer:
It may be necessary to cook in batches depending on the size of your airfyer. Lay the chicken pieces into the air fryer in a single layer.
Spray with a generous amount of oil. Cook at 200 degrees Celsius for 8-10 minutes.
Shaking at the halfway cooking mark.
To Bake in the oven:
Lay the chicken pieces onto a line baking tray in a single layer. Spray the chicken with a generous amount of oil. Bake in a preheated oven at 200 degrees for 15 minutes.
Turning the popcorn chicken at the halfway cooking mark.
Cooking time may vary depending on the size of the chicken pieces. To check the chicken is cooked cut open and check the inside is white and firm.

Ingredients
½ cup DYC apple cider vinegar
1 tbsp honey
1 tbsp grated fresh ginger
pinch of salt

800 ml filtered water
Method
In a 1 litre jar with a tight-fitting lid, mix together the vinegar, honey, ginger, and salt.
Squeeze the lemon juice and orange juice into the jar and mix in.
Fill with water, seal the jar, and refrigerate overnight*. Pour into small glass containers with lids.
Store in the fridge. Consume within 3-4 days.
*This is to allow ginger to infuse. You can use it straight away without chilling overnight.

Slow cooker chicken tikka masala
Come home to a lovely spice aroma! Just a simple 10 minute-preparation needed in the morning for a gorgeous chicken curry dinner. For chilly weekday evenings. Prep time: 10 minutes Cook time: 5-7 hours (slow-cooker) Serves: 4 Ingredients 500g chicken thigh, sliced in large pieces 2 tbsp oil 1 onion chopped 2 garlic cloves crushed thumb-sized piece ginger finely grated or chopped 3 tbsp tikka curry paste 500 ml passata 1 tbsp tomato purée 2 tbsp malt vinegar 1 tbsp light brown sugar 1 cinnamon stick 5 cardamom pods 100ml cream handful fresh coriander Naan bread and/or rice to serve Method Heat the slow cooker. Season the chicken with salt & pepper. Heat oil in a large frying pan. Add the chicken to the pan and cook until golden brown on both sides. Transfer the chicken to the slow cooker. In the same pan cook the onion, garlic and ginger until soft. Add 1 tbsp of malt vinegar to deglaze, then pour everything in the pan into the slow cooker. Add the remaining ingredients to the slow cooker, except the cream and fresh coriander. Give it a good stir. Cover with a lid and cook for 5-7 hours. Add the cream and chopped coriander. Season to taste. Serve with rice and/or naan bread.
