Bacon Brown Sugar Chicken Tenders

Ingredients :

2 chicken breasts boneless skinless

1/2 cup brown sugar

1/2 teaspoon Kosher Salt

1/8 teaspoon ground black pepper

8 strips bacon

Instructions :

Preheat oven to 375°F

Cut each chicken breast into 4 long, thin chicken strips.

In a bowl add the brown sugar, salt and pepper.

Add the chicken tenders and toss in the brown sugar.

Wrap the chicken in a strip of bacon and put into your baking dish.

Sprinkle over the remaining brown sugar.

Cook for 20-25 minutes or until bacon is cooked through and crisp.

Pepperming tart sandwich
Ingredients:
2l vanilla ice cream
360g tin Caramel Treat
200g Tennis Biscuits
150g Peppermint Crisp

Directions:
Allow the ice cream to soften at room temperature for 10-20 minutes or until it is spreadable. Spread it roughly into a rectangular tin, about 20cm x 30cm. Leave a few gaps for the caramel.
Give the Caramel Treat a good stir until it is smooth. Dollop spoonfuls over the ice cream, and swirl together to create a marbled effect.
Spread the top until it’s smooth, then freeze for 3-4 hours or overnight.
Chop the Peppermint Crisp into small pieces and set aside.
Using a Tennis Biscuit as a guide, cut squares of the ice cream mixture out and sandwich together with a Tennis Biscuit on each side.
Roll the ice cream sandwich into the chopped Peppermint Crisp, coating all the edges.
Freeze in an airtight container until ready to serve

Comment faire une pizza à la maison 🍕

Ingrédients :
* 320 grammes de farine riche en gluten
* 160 grammes de farine faible en gluten
* 40 grammes de sucre fin
* 5 g de sel
* 20 grammes de levure fraîche
* 265 grammes d'eau
* 20 g de beurre

Étapes :
1. Mélanger les ingrédients : Combinez tous les ingrédients sauf le beurre. Pétrir jusqu'à ce qu'une pâte se forme, puis ajouter le beurre et continuer à pétrir jusqu'à ce que la pâte soit lisse.

2. Divisez la pâte : Après le pétrissement, divisez la pâte en morceaux égaux.

3. Pâte à forme : Roulez chaque pièce en forme ronde. Utilisez un bol de taille similaire pour faire une empreinte, puis enrouler les bords. Utilisez une fourchette pour piquer le centre.

4. Ferment : Laissez la pâte fermenter jusqu'à ce qu'elle soit 1,5 fois sa taille d'origine. En attendant, préparez vos garnitures. Préchauffez le four à 200°C (392°F) pendant 10 minutes.

5. Ajoutez des garnitures et faites cuire : Ajoutez votre choix de garnitures et faites cuire au four à 190°C (374°F) pendant 15 minutes.

1/3 cup cocoa powder
1/4 tsp salt
1/2 cup butter (softened)
2/3 cup sugar
2 eggs (1 yolk for cookies and 2 egg whites to dip cookies in)
1 tbsp milk
1 tsp vanilla
1 cup chopped pecans
Caramel Filling
14 Kraft Caramels
3 tbsp heavy cream
Chocolate Drizzle
2 squares Chocolate Candy Coating
Instructions
Preheat oven to 350.
Mix flour, cocoa and salt in a bowl and set aside.
Beat butter and sugar with mixer until light and fluffy. Add 1 egg yolk, milk, and vanilla. Mix until well combined.
Add dry ingredients and mix well.
Refrigerate for 1 hour.
Mix 2 egg whites in a bowl until frothy. Place chopped pecans in another bowl.
Roll chilled dough into 1 - 1½ inch balls, dip in egg whites and then roll into the pecans. Place on a greased baking sheet.
Use ½ teaspoon spoon to make a cave in the center of each ball.
Bake for 11-12 minutes. Let cool.
Place caramels and cream in a small bowl and microwave until smooth, stopping and stirring occasionally.
Fill indentations in cookie with caramel mixture.
Melt candy coating by placing in a small pot on low heat and stirring constantly. Pour chocolate into a Ziploc bag with the corner cut and drizzle over cookies. Let set.

Cooking oil (for shallow frying)

Glass baking dish (9x13 inches)

Instructions:

1. Prepare the chicken strips:

Cut the chicken breasts into strips of uniform size.

2. Bread the chicken:

In a shallow dish, combine the whole wheat flour, salt, pepper, paprika, garlic powder, and onion powder.

⅓ cup sweetener (monkfruit)
Instructions:
Using mixer and large bowl, mix the heavy whipping cream and sweetener on medium-low speed until it thickens up.
Add cocoa powder and beat until stiff peaks form.

Ingredients:
1 pound chicken breasts, cooked and shredded
1 packet (1 oz) fajita seasoning mix
1 bell pepper (any color), sliced
1 onion, sliced
1 cup cooked rice
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup sour cream
1/2 cup salsa
2 tablespoons olive oil
Directions:
Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
In a skillet, heat olive oil over medium heat. Sauté the bell pepper and onion until tender, about 5 minutes.
In a large bowl, combine shredded chicken, cooked rice, fajita seasoning, sour cream, salsa, sautéed vegetables, and half of the shredded cheeses. Mix well.

2 tablespoons chopped green onions
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 cup chopped pecans or walnuts (optional, for coating)

Instructions:
In a large bowl, combine the softened cream cheese and sour cream. Mix until smooth and well-blended.
Add in the shredded cheddar cheese, crumbled bacon, ranch dressing mix, chopped green onions, garlic powder, and onion powder. Stir until all ingredients are fully incorporated.

Italian Stromboli
1 tube of pillsbury pizza crust
8 slices of deli ham
10 slices of Genoa salami
12 slices of sandwich pepperoni
8 slices provolone cheese or mozzarella
(You could definitely use shredded cheese as well)
2 tablespoons of butter
2 minced garlic gloves
2 teaspoons chopped parsley
3 tablespoons of Parmesan cheese
Melt the butter in the microwave and mix in the minced garlic, parsley and Parmesan cheese. Set aside
I lined my baking sheet with parchment paper.
Stretch the pizza crust out to almost the size of your baking sheet.
Layer the deli meats. I started with the ham, then the salami followed by the pepperoni.
Layer the cheese last.
Roll the Stromboli longwise and be sure to seal the seam good.
Seal the ends good. Pinch them and mold the excess dough to the underside of the Stromboli.
Score the top a few times with a serrated knife (to allow the steam to escape while baking).
Top the Stromboli with the garlic butter mixture.
Bake the Stromboli as instructed on the back of whatever pizza dough you are using.
*I found it’s the same bake time as you would if you were using it for a regular pizza…however, you just won’t par bake it as instructed on the tube.
*I know typical Stromboli has red sauce but I don’t like it inside, I like to dip mine in it! You could very well use it on the inside if you would like!

1 large egg, room temperature
3 ounces (85 g) plain whole milk yogurt, room temperature
1/4 cup (60 ml) coffee, room temperature
3 tablespoons (45 ml) flavorless oil (e.g., vegetable oil)
1/2 teaspoon vanilla extract
For the Chocolate Mousse:

8 ounces (226 g) semi-sweet chocolate bars, finely chopped
2 1/4 cups (540 ml) heavy whipping cream, cold, divided
4 large egg yolks
1/4 cup (50 g) granulated sugar
1 teaspoon (3 g) unflavored gelatin powder
2 tablespoons (30 ml) cold water
1 teaspoon vanilla extract
For the Chocolate Ganache Glaze:

8 ounces (226 g) semi-sweet chocolate, finely chopped
1 cup (240 ml) heavy whipping cream
1 tablespoon (14 g) unsalted butter, softened (optional)
For the Whipped Chocolate Buttercream:

1 cup (226 g) unsalted butter, room temperature, slightly firm to touch
2 cups (220 g) confectioners’ (powdered) sugar, sifted
1/4 cup (20 g) unsweetened Dutch-processed cocoa powder
2-3 tablespoons (30-45 ml) heavy whipping cream, room temperature
1/2 teaspoon salt
1 teaspoon vanilla extract (optional)
For Assembly:

Instructions
Prepare the Chocolate Cake:

Preheat Oven:

Preheat oven to 350°F (175°C). Grease and line the base of an 8 or 9-inch springform pan with parchment paper.
Mix Dry Ingredients:

In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
Cream Wet Ingredients:

In the bowl of a stand mixer fitted with the paddle attachment or using a hand-held mixer, beat oil and sugar together until fluffy, about 1-2 minutes.
Mix in yogurt until combined. Beat in the egg until fully incorporated.
Reduce mixer speed to low. Alternately add the dry ingredients and coffee, starting and ending with dry ingredients. Mix until just combined.
Bake Cake:

Spoon batter into prepared pan. Bake for 24-26 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pan for 45-60 minutes. Level the cake with a serrated knife and return it to the springform pan.
Prepare the Chocolate Mousse:

Dissolve Gelatin:

In a small bowl, add cold water and sprinkle gelatin over it. Let sit for 5 minutes.
Make Custard:

Whisk egg yolks and sugar together until thickened. Heat 1 cup heavy cream in a saucepan until steaming but not boiling. Whisk the hot cream into the egg mixture slowly.
Return the mixture to the saucepan and cook over medium-low heat, stirring constantly until it thickens and coats the back of a spoon, about 4-5 minutes. (Temperature should be 167-170°F / 75-77°C.)
Strain custard through a sieve into a bowl. Whisk in dissolved gelatin, chopped chocolate, and vanilla extract. Cool to room temperature, whisking occasionally.
Whip Cream:

Whip remaining heavy cream to soft peaks. Fold half of the whipped cream into the cooled chocolate mixture, then fold in the remaining whipped cream.
Assemble Mousse Layer:

Spoon mousse over the cooled, leveled chocolate cake. Smooth with a spatula. Refrigerate for 4-6 hours or overnight to set.
Prepare the Chocolate Ganache Glaze:

Make Ganache:

Place chopped chocolate in a bowl. Heat heavy cream until steaming and pour over chocolate. Let sit for 1 minute, then whisk until smooth.
Whisk in softened butter if using.
Glaze Cake:

Chill the mousse cake in the freezer for 30 minutes. Place the cake on a parchment-lined baking sheet. Pour the ganache over the cake, spreading with an offset spatula if needed. Let set for 10-15 minutes in the fridge.
Prepare the Whipped Chocolate Buttercream:

Cream Butter:

Beat butter until fluffy. Gradually mix in powdered sugar and cocoa powder until well combined. Add vanilla extract and heavy cream, adjusting the consistency as needed.
Frost Cake:

Pipe medium-sized dollops of buttercream on top of the glazed mousse cake. Decorate with chocolate pearls if desired.

Ingredients:

1. 250g white sugar
2. 60ml red wine vinegar
3. 60ml white vinegar
4. 1 large sweet onion, grated
5. 15ml sesame oil
6. 15ml Dijon mustard
7. 2.5g mustard powder (or an extra 5ml Dijon mustard)
8. 2.5g onion powder
9. 1.25g garlic powder
10. 1.25g paprika
11. 0.6g celery seed
12. 0.6g poppy seeds
13. Salt and pepper to taste
14. 15g cornstarch

Instructions:

1. In a medium saucepan, combine sugar, red wine vinegar, white vinegar, grated onion, sesame oil, Dijon mustard, mustard powder, onion powder, garlic powder, paprika, celery seed, poppy seeds, salt, and pepper.

2. Whisk until smooth.

3. In a small bowl, mix cornstarch with a little water until smooth.

4. Add cornstarch mixture to saucepan and whisk until well combined.

5. Bring mixture to a boil over medium heat, stirring constantly.

6. Reduce heat to low and simmer for 5 minutes, or until sauce has thickened.

7. Remove from heat and let cool.

8. Use sauce as soon as it cools, or refrigerate for several hours to allow flavors to meld together.

Tips:

1. Use small holes on a cheese grater or a microplane to grate onion.
2. Add red pepper flakes or cayenne pepper for a spicy version.
3. Use sauce on sandwiches, salads, pizza, shredded or baked chicken, and vegetables.

What cookies does Santa want for his big night? 🎅 Anything will do, but these gingerbread cookies are festive and taste delicious. There's no need to worry about cutting them into shapes and the decoration is as easy as dipping the cookie in some melted chocolate! Santa isn't fussy, especially when these cookies taste as good as they do.

Iced Gingerbread Cookies

2 cups almond flour
½ cup butter, softened
¼ cup brown sweetener
¼ cup keto honey
1 egg
1 tsp vanilla
1 tbsp cocoa powder
1 tbsp ground ginger
½ tsp cinnamon
¼ tsp cloves
½ tsp baking powder
½ cup sugar free white chocolate chips
Dye free sprinkles (optional)

Preheat oven to 350 and line a baking sheet with parchment paper. Beat butter and sweetener together until combined, then mix in egg, honey and vanilla. Combine all dry ingredients in a separate bowl and stir to combine. Stir dry ingredients into wet ingredients until a dough forms. Divide dough into balls and bake for 10-11 minutes until edges are just set. Let cool.

Once cookies are cool, melt ½ cup white chocolate chips, then dip half the cookie into the white chocolate. Add sprinkles if desired.

Makes 12 large cookies or 16 regular size cookies
