Today, we are going to examine the health benefits of water leaf. This plant grows in many places, even in unsual places one don't expect to see it. But it is a very essential vegetable, that shouldn't be underated.

WATERLEAF

Waterleaf are these very fine Vegetables with the name ; Talinum triangulare. The Yorubas call it Gbure, in Igbo, it is called Mgbolodi, the Calabars call it mmoi ikon ( hope I got that right🙈), while the Edos call it Ebe - dondon.
It is employed in cooking various delicious Soups, mostly in conjunctions with other leaves like in Afang & Edikang ikong Soups. But this article is going to focus more on it's health benefits.

HEALTH BENEFITS OF WATERLEAF CONSUMPTIONS

1. Enhances Cognitive ability : Consumption of waterleaf helps improves Cerebral blood flows and cognitive functions thereby helping the brain to function adequately by supplying it with enough oxygen.

2. Eliminates Infectious diseases: Waterleaf has antibacterial, anti fungal and anti inflammatory properties which in essence helps in suppressing or preventing the growth of bacterial, fungai and inflammatory diseases in the body.

3. Promotes Heart health: by regulating and supplying oxygen adequately to the needed areas in the heart, helps to promote heart health from heart related diseases and stroke.

4. Improves blood cells: the adequate supply of oxygen to the needed areas also helps to boost the red and white blood cells.

5. Repairs body tissues: Waterleaf is a big source of vitamin A & C, which helps in repairing our body tissues and promotes eye vision.

SIDE EFFECTS : Waterleaf should be taken in very little amounts by those suffering from kidney disorders and gout.
Also, when eaten in excess, it can cause stomach upset and frequent stooling.

WATERLEAF JUICE : Intake of Waterleaf in this format will give more benefits than being cooked. The juice can be extracted by picking the Waterleaf, washing the leaves and soft stems together, then blending it with little water. In the absence of blenders, one can, after washing the leaves and stems, squeeze wash very to release the juice.

* One can also take it as salad, to steam it very lightly before consuming it*

SNORING.

Today, we are discussing snoring which is a condition that happens in individuals of different ages and gender. It often disturbing other people asides the individuals who snores. In some situations however, the one who snores wakes up feeling exhausted as if they have slept for long periods.

Snoring describes the hoarse or harsh sound that occurs when a person's breathing is partially obstructed in some way when sleeping.

While an individual is asleep, they often move from a light sleep to a deep sleep, the muscles in the roof of the mouth, tongue and throat relax. This relaxation causes the tissue to partially block the airway and vibrate.
As the airway narrows, airflow becomes forceful causing the tissues to vibrate further and snoring increases.

The symptoms that occur are dependent on the cause of the snoring. They may include:
-Sore throat
-Noise during sleep
-Restless sleep
-Chest pain at back
-Difficult concentrating
-Gasping or choking at night
-Excessive daytime sleeping.

Factors that increase the chances of snoring include:
Alcohol
Having a family history of snoring
Having a narrow airway
Being a male
Overweight or obese
Having structural nasal problems such as a deviated septum or chronic nasal congestion

Apart from being a nuisance, snoring may cause the following complications:
Frequent anger or frustration.
Higher chances of hypertension, heart conditions and stroke.
Undue irritability.
Increase risk of road accidents
Impaired attention.
Increased aggression.
Fatigue.
Difficulty concentrating

All of the above complications are related to poor sleep that occurs with snoring.
While snoring may indicate a serious health problem.

Tips to help prevent snoring.
Treat nasal congestion and allergies.
Sleep on your side
Limit use of alcohol.
Loose weight if over weight

CHICKEN STEW.

1kg Chicken
1 medium size onion sliced
2 tablespoon garlic powder
1 tablespoon ginger powder
1 tablespoon full thyme
1 teaspoon seasoning powder
2-3 cups of water

FOR STEW

2kg fresh tomatoes
5 large Bell peppers
5 habanero pepper atarodo
1 medium bilb onion
4 garlic cloves
1 thumb ginger
Blend all together

COOKING DIRECTION
Place the clean cut chicken into a pot. Add chopped onions, garlic, ginger, thyme, curry, seasoning powder and salt to taste. Add a little water and cook.
Cook the chicken until its tender and fry. Set this aside.

In another pot pour your blended tomato stuffs and put on a low heat to reduce excess water from it.

In another pot heat up vegetable oil, add chopped onion, add your tin tomato paste, stir for 8mins
Pour in the boiled tomato- pepper mixture and fry for about 25min or until the tomatoes loses its sour taste.
Stir continuously to prevent burning at the bottom.
Add the chicken stock, add salt mix and cook for about 10mins. Then add your chicken, taste it and see if any adjustments is needed. Cook for another 5minutes your 🇳🇬 chicken STEW is ready. @ everyone

Fish roll.

Ingredients
For the dough
-500 Grams Flour
-1/2 teaspoon Salt
-1/2 teaspoon baking powder
-1 teaspoon Nutmeg (optional)
-2 tablespoon Sugar
-200 Grams Margarine or butter or 50/50
-2 eggs
-100 ml evaporated milk or fresh or water
-Vegetable oil for frying

For the filling:
-2-3 TablespoonVegetable oil
-1 small Onions
-1/2 teaspoon Cayenne pepper
-1/2 teaspoon Oregano
-1/2 Teaspoon eachCurry & Thyme
-Salt to taste
-2-3 medium-size Fried Mackerel
-1 Can Sardine in Tomato sauce

How to prepare:

-Mix all the dry ingredients in a mixing bowl (flour, margarine/ butter, nutmeg, salt and sugar). You should either use a stand mixer, spatula or whisk if you don’t want to use your hands but nevertheless hand does the job better.
-Add the milk to the dry ingredients, then add the water bit by bit until the dough is properly formed. The reason I suggest bit by bit is because the consistency of our margarine or butter may differ, so add according to the texture of your dough and stop when the right consistency has been achieved.
-Remove the dough from the bowl and drop it on a floured surface and knead until smooth but don’t over knead the dough.
-Drop it back in the bowl and cover with a neat kitchen towel or clingy film or foil and allow to rest for about 30-40 minutes at room temperature.
-Take it out and drop it on the rolling mat or a floured clean surface, divide it and start rolling out with a rolling pin.
-Add about 1 teaspoon of the filling and roll.
-Repeat the process until you roll out all the dough.-Set your heat gauge to 180 degrees and bake for 20-30 minutes.

Note : you can also fry until it is golden brown.
-Enjoy and serve! Enjoy with any drink of your choice, water, coffee, etc.

Moi-moi.

Ingredients:
3 cups or 750g Beans (Brown/Black eyed)
5 tablespoons ground crayfish
4 big stock cubes
1 habanero pepper
2 teaspoons ground nutmeg
3 tatashe peppers
2 big onions
20cl vegetable oil
2 litres of cool or warm waterSalt (to taste)

You can add:
Hard boiled eggs
Bone Marrow: Cook the bone marrow with spices and herbs till done then add to the Moi Moi at the mixing stage.
Corned beef

Cooking directions:
-Blend the beans, tatashe or tomato puree, onions, crayfish, habanero pepper and ground nutmeg together with some of the water; pour the mix into a big enough bowl.
Add the vegetable oil and the bone marrow stock (optional). Slowly add the remaining water and stir
-Add salt to taste and stir very well.
-Pad the base of a big pot, pour some water and set on the stove. The depth of the water should be at most 1 inch.
-Dish the Moi moi mix into containers of your choice, add egg/bone marrow/corned beef to each container, seal/cover and set them in the pot.
-Add as small quantity of water as possible at a time while cooking the Moi Moi so that the moi moi will not become watery when done (especially when using aluminium foil or uma leaves). The length of time you will cook your Moi Moi depends on the quantity and the Moi Moi container you used.

Note:If using Moi Moi containers, it is advisable to cook your Moi Moi for at least 1 hour, before checking it. Confirm that it is done by putting a knife through it, if the knife is stained with Moi Moi paste, then the Moi Moi is not done, but if the knife just has a slight smear of Moi Moi, then it's done. Also, when you cut through the Moi Moi, the insides will be set and not watery.
If you are cooking a few wraps of Moi Moi in a small pot on high heat, then it will only take about 45 mins to get done.

USES OF SALT IN THE KITCHEN

1. To remove the odour from your hands after cutting onions, Chicken or fish, just Wash your hands with salt and water, you will have no more smell.

2.To avoid the feeling of the hotness of pepper on your hands after cutting/slicing it with your hands, Rub them with salt and vegetable oil or red oil and wash.

3. When pepper mistakenly enter your eye, put a pinch of salt in your mouth. The hotness wil disappear

4. Sprinkling some salt on your fresh peppers while pounding it , helps to make it pound fast.

5. Soaking wash bitterleaf in salt and hot water helps to remove extra bitterness before cooking with it.

6. If your liquid milk always spoil before you finish it, add a pinch of salt when you first open it, it wil help the milk to stay fresh longer.

7. Placing your overipe tomatoes in a cold and salty water overnight helps it stay fresh
and firm.

8. Salt and detergent mixture can help you to kill ants and cockroaches disturbing you in the kitchen.

9. If you cut lemon and you do not want to use it finish, sprinkle salt in it. It would stay fresh for 3days. Make sure you rinse it before using it again.

10. Salt can be used as preservative method for preserving meat, fish. Salt helps to prevent bacteria growth.

11. Greese fires or small fire can be put out with the use of salt.
