BRIEF HISTORY OF AMALA.

How Àmàlà got its name can't be ascertained but it was believed to be the way some royal cheffs in Aafin Oyo used ìgbáko to mold it and cut it half before spreading ewedu and stew on it that the name got stucked to the food. A-mó-a-la i.e, we mold and cut.

However, findings made us traced d discovery of Àmala to d first reign of Alaafin Ajaka at old Oyo popularly known today as Oyo Katunga, and we were told, it was Alaafin Ajaka's favorite, especially when served to him with EWEDU.

After his second time on the throne, only the nobles of Oyo were the ones eating Amala as a royal delicacy with King whenever the king hosted them to commemorate an important event in the palace.

For centuries and till date, Amala status was purely a princely food amongst foods, it was when the empire began to grew and many wealthy individuals made Oyo their abode, that Amala was being served in their compound as food only meant for festive seasons.

It was during the reign of Alaafin Abiodun as the first Alaafin to reigned at Ago d'Oyo that the king physician by the name Aremu, a.k.a Awogbaarun whose compound was located at Jabata, discovered the medicinal value of Amala hence the saying....

HOW ÀMÀLÀ BECAME POPULAR OUTSIDE ODE-OYO.

It was Bashorun Ogunmola, o wo kembe re bi ija, who popularized Àmàlà at his ojude in Ibadan with new discovery of a soup called, GBEGIRI.

While people will be rushing to have their plate of Amala at ojude Ogunmola, the servers will asked people on queue if they like gbegiri to be added with ewedu & stew, people in their haste will chorused by saying ABULA, which literally means, mix it. It was here d term abula, was patented & derived to mean d mixture of gbegiri ati ewedu.

It was Ibadan people who first people began to eat Amala commercially & from there its fame beginning to expand to wherever Ibadan people went until Amala became "Ari gbetomi".

It's worthy of note too that, the first Amala joint was established in Ibadan around Oja'ba axis around 1900 and today, Amala joints in Yorubaland is a multimillion business ventures and has a sizeable workforce that out numbered that of Mr. Biggs, KFC and Chicken republic put together.

So, anytime you are enjoying ur Amala ati abula pelu ponmo ati nkannu, in any Amala joint in Yorubaland, don't forget those unnamed heros & heroines who discovered this delicacy that made us proud.

HOW TO MAKE BABA DUDU SWEET

Baba dudu is a dark brown rock hard candy made with coconut milk and sugar then wrapped in transparent nylons and made into strings. It's got a sweet bitter taste but really addictive.

Things needed:

• 1 small sauce pan
• 1 small Pot
• A wooden spatula/whisk for mixing
• 2 Transparent nylons

Ingredients

1 cup sugar

3 medium sized coconuts

Pinch of salt

Procedures:

Step 1

First you need to crack open the coconuts and remove the flesh from the shell

Step 2

Then blend the coconut flesh smooth with some water

Step 3

Use a cheese cloth or sieve to sieve out the coconut juice into a bowl

Step 4

You need just the coconut milk and not the water. So to extract the milk, what i do is place the bowl of juice in the freezer to solidify. Then i remove the top which is now mainly the coconut milk. As the water would have settled underneath.

Step 5

Place the coconut milk in a pot and add the pinch of salt.

Step 6
Add the sugar.

Step 7

Then place on low heat and start stirring with a wooden spatula. Do not leave it unattended as it can overflow and make a mess. So you have to continually stir.

Step 8

Continue stirring until it all begins to thicken and changes in color

Step 9

Keep stirring until the oil starts to come out and scoop out the oil. Then stir until it changes to a very dark thick brown color

Step 10

Scoop out more oil and pour on a clean slab, and allow to cool for 2-3 minutes.

Step 11

Then start cutting and rolling inbetween your palms and leave to cool on the slab. Be very careful as it is usually very hot and dangerous.

Step 12

Tie in prepared nylon wraps when completely cold.

Yummy Eggroll recipes

Ingredients
Flour 1 and half cup
Baking powder 1/2tsp
Nutmeg 1/3tsp
Sugar 2tbsp(or more)
Butter 1tbsp
Water 1/2 cup

Procedure
Step 1: pour your flour into a bowl

Step2: add baking powder

Step3: add nutmeg

Step 4: add sugar and mix thoroughly

Step 5: add butter and coarse with your hands

Step6: add water gradually and check your consistency

Step7: knead for a while, not too much

Step8: place on your work table and cut into 4

Step 9: take your boiled egg,coat it with flour

Step10: take one out of your dough and roll out flat.

Step 11: wrap the dough round your egg one after the other and smoothen it with you hand or on your work table Make sure there's flour on your palm so it won't stick

Step 12: fry in a deep hot oil/make sure you reduce your heat source to the minimum while frying

Step 13: while still in the oil, use a fork to pierce it in two places, so the heat can pe*****te into it.

STANDARD MULTIPURPOSE LIQUID SOAP PRODUCTION*
*INGREDIENTS:
(1)Nitrosol 1milkcup
(2)Soda ash2 milk cup (3)caustic soda 2 spoons
(4) Sls1 milk cup
(5) STP1 milk cup
(6) Booster1/2 litre (7)Texapon1 milk cup
(8)Cocomite2spoons
(9)Sulphonic litre
(10) Industrial salt 1 spoon
(11) Colouring
(12)Perfume.

*PROCEDURE*
How To Mix:
(1)Get abig basin.
(2) 1litre cup, 5 litre bucket, 1 turning stick.
(3) Put 5 litres of water inside the basin
(4) Then put 1litre of water inside the bucket, add your nitrosol, stir it and pour inside the big basin.
(5) put the soda ash and the caustic soda together in the bucket and add 1 litre of water, stir together and pour it in the big basin, stir it up with the nitrosol that is already there.
(6) again put 1 little of water in the bucket and add SLS, stir it n pour it the mixture n stir together.
(7) pour 1 litre of water in the bucket and add STP stir it and add it to your mixture and stir very well.
(8) put the booster directly into your mixture and stir very well.
(9) add 2 litres of water into the bucket n put in the Texapon, Cocomite2spoons, Sulpurnic,stir the 3 together and add it to your mixture. This time around you have to stir very well to achieve a blend result, stir for like 3 minutes, then add the industrial salt and colour (as you desire)
Allow the mixture to rest for like 1 hour then add your perfume and check the thickness if it is too tick then add up water. Pack as you desire. At least you should be able to to get 35 litres of liquid soap with the above mixture.

You can get all ingredients from shops where they sell chemicals or from organic sellers.
