An apple a day, keeps the doctor....?

I call this apples "galaxy-like mythical apples", because they taste so heavenly.

My sister called them "Potato-rita"😅

You know how you'd boil some yam and then go ahead to dunk them in some egg and fry?

Well I applied this to sweet potatoes and it turned out really great.

PS: you have to keep your eyes on the potatoes while they boil, because just as plantains easily burn in oil, they also get too tender and melt.

It was served with yaji(pepper).

This is a great way to cook your potatoes aside the usual method!😊❤️

I know I've been off for a while, but I here I am promising myself and you too, that I'll be consistent from now.

So this was what I made today for breakfast. Akara and pap

Some of the tips to getting nice looking and tasting akara that aren't soaked in oil include:
1. Letting the peeled beans soak for a while before grinding or blending.
2. Using a whisk, spatula or even a mixer/ blender to whip it up and get some air in it(this should be done for a minimum of 15 minutes; I usually do 30 minutes)
3. The most underrated tip is to add only salt and no other seasoning; you could pair it with yaji(pepper) or sauce at the end.

During Ramadan (the islamic month where Muslims fast), I tried my akara with bread, I did a sandwich 🥪 with the akara balls in the middle and I can say that it is one of the best decisions I've made so far.

This is a vanilla yogurt that I paired with crepes ( a flatter version of pancake usually eaten along side a stuffing) and potato filling, it was amazing, my taste buds tasted to the tune of pleasure and satisfaction.😄

We all deserve some warm goodness in this cold 🥶 weather.

I woke up craving something hot and I aborted my Akara and Custard mission because I just couldn't bring myself to prepping the beans and grinding, so I just settled for pancake and peppersoup (yesterday's leftover) and some creamy tea.

I was thinking of making a spicy dip for the Akara for customers that wouldn't want liquids along side👌🏻 .

The Pap was left unsweetened according to the Customer's request.

But it could be sweetened with either sugar, Honey or even dates powder.🤩😋
