Step 1: Processing Cassava

Is Ready

🌟 INGREDIENTS

◾️500g flour
◾️100g sugar
◾️125g salted butter
◾️100g coconut milk
◾️1 tsp nutmeg
◾️½ tsp salt
◾️1 egg
◾️1 tsp milk flavor
◾️½ tsp of baking powder
◾️1 tsp cornflour
◾️1 tsp coconut flavor
◾️Enough oil (for deep frying)

🌟 METHOD

◾️Break coconut apart, and peel the brownish part off the white part.

◾️Blend the coconut until it has a milky look and set aside.

◾️Mix the dry ingredients (flour, sugar, nutmeg, cornflour, baking powder, milk flavor, salt)

◾️Add butter and mix until you have a crumbly texture

◾️Make a hole in the middle of the bowl, and add the egg, beat for a few seconds with a fork

◾️Add the blended coconut milk and mix together until a soft dough forms

(If dough is sticky, add more flour)

◾️Roll dough to a flat shape (¼ inch)

◾️Cut dough into small flat squares by cutting straight horizontal and vertical lines.

◾️Deep fry and enjoy.

Ingredients
For the dough
-500 Grams Flour
-1/2 teaspoon Salt
-1/2 teaspoon baking powder
-1 teaspoon Nutmeg (optional)
-2 tablespoon Sugar(sugar is optional, not everybody like sugar in their fish roll)
-200 Grams Margarine or butter or 50/50
-2 eggs
-100 ml evaporated milk or fresh or water
-Vegetable oil for frying

For the filling:
-2-3 TablespoonVegetable oil
-1 small Onions
-1/2 teaspoon Cayenne pepper
-1/2 teaspoon Oregano
-1/2 Teaspoon eachCurry & Thyme
-Salt to taste
-2-3 medium-size Fried Mackerel
-1 Can Sardine in Tomato sauce

How to prepare:

-Mix all the dry ingredients in a mixing bowl (flour, margarine/ butter, nutmeg, salt and sugar). You should either use a stand mixer, spatula or whisk if you don’t want to use your hands but nevertheless hand does the job better.
-Add the milk to the dry ingredients, then add the water bit by bit until the dough is properly formed. The reason I suggest bit by bit is because the consistency of our margarine or butter may differ, so add according to the texture of your dough and stop when the right consistency has been achieved.
-Remove the dough from the bowl and drop it on a floured surface and knead until smooth but don’t over knead the dough.
-Drop it back in the bowl and cover with a neat kitchen towel or clingy film or foil and allow to rest for about 30-40 minutes at room temperature.
-Take it out and drop it on the rolling mat or a floured clean surface, divide it and start rolling out with a rolling pin.
-Add about 1 teaspoon of the filling and roll.
-Repeat the process until you roll out all the dough.-Set your heat gauge to 180 degrees and bake for 20-30 minutes.
Note: the vegetable oil listed in the ingredients is for frying, therefore if you don't which to bake your fish roll you can simply fry

Wash and peel off the fruit then cut them into a small sizes in a bowl put into a blender and blend pineapple, mango and banana with liquid milk and pour it in popsicle mold To make it colorful and beautiful blend the strawberry and separately and add it or any fruit of your choice.

So let's jump on.

COMMERCIAL CUPCAKE RECIPE

Ingredients:
500g Flour
350g Sugar
500g Butter
450g Eggs
1Tablespoon Baking Powder
2 Teaspoon Butterscotch flavour
2 Teaspoon vanilla Flavour
1/2 Tablespoon Preservative.

Gives you 40 pieces queens cupcakes for N300

METHOD👇

1) Grease your Cupcakes Pans with Butter or oil and flour it or use cupcakes Liners.

2) Pre-heat your Oven.

3) Sieve the Flour in a Mixing Bowl and Pour your ingredients in the bowl at once. (Butter, eggs, Baking powder, Sugar, preservatives and flavour

4) Set your Timer for and Switch your Mixer, Enter to High Speed and Cream it then you Stop. The batter will be very fluffy and almost white in colour.

5) Pour in your mixture in a prepared Cupcakes Pan and Bake for approximately 15-20 minutes.

Note: CUPCAKES doesn't take time to bake.
6) Allow it to cool completely before removing the CAKE from pans.

7) Put on a tray, cover with a clean towel to prevent dryness allow to cool completely before Packaging it...

Here are the ingredients:

6 cups all purpose/plain flour
2 tablespoons sugar
3 tsp active yeast
1 tsp salt
1 and 1/2 cup luke warm milk
2 eggs
4 tbsp melted butter

Let's learn how to make lollipop for commercial purpose or home consumption.

RECIPE:
Ingredients:
1/4 cup (60ml) Water
1 cup (200g) Sugar
1/4 cup (82g) Tapioca syrup
1-2 teaspoons Extract of your choice (vanilla, coconut, mint, etc.) optional
Food coloring (optional)

Directions:
1. Prepare 2 lollipop molds and sticks before you start making the caramel.
2. In a saucepan combine sugar, tapioca syrup and water. Attach the candy thermometer to the saucepan.
3. Heat over medium heat, stir until the sugar dissolves, and brush down the sides of the pan with a wet pastry brush to prevent crystals from forming.
4. Boil the mixture until reaches 300F (150C) (hard-crack stage).
5. Turn the heat off and add extract of your choice and food coloring (optional)

6 Working quickly pour the mixture into the mold. If desired add sprinkles or other toppings

7 Allow to cool completely.

8. Unmold, place in the lollipop bag and store in room temperature

OHA SOUP Recipe and preparation

Ingredients
• Beef
• Stock fish
• Smoked fish
• Ground crayfish
• Ponmo
• Palm oil ogiri Igbo
• Cocoyam ( Soup Thickeners)
• Oha leaves (shredding with your fingers)
• Uziza leaves (chopped)
• Seasonings
• Salt
• Water/Stock

Preparation:
1. Put meat, kponmo and stock fish in a pot, add seasoning and let simmer for 5 minutes, then put a little water, cover and let cook till meat is tender.
2. You can either add cocoyam while cooking the meat so it can cook together to save time or cook the cocoyam separately.
3. When it has cooked properly, add 2 cups of water then add palm oil, allow to cook for about ten minutes. (Remove cocoyam and pound in a mortar or blend using a blender or a food processor)
4. Add ground crayfish, ground pepper, salt and let cook for another seven minutes.
5. Add the blended/ pounded cocoyam paste or achi (before you add achi to your soup, make sure you dissolve it in a little water, if not your soup will cake up). Let the soup cook for about three minutes

7. Add your Oziza first (Oziza leaves are stronger than Oha leaves), then add your Oha leaves.
8. Let it cook for one minute, then turn off the cooker
9. Your delicious Oha soup is ready

Dear mums on my list, you can now add this to your kids lunch snacks.

Ingredients

1 large overripe plantains
2 cups of all purpose flour
half cup of sugar
half cup of milk
1 medium nutmeg
half teaspoon salt
1/8 cup cayenne pepper
1tbsp yeast
2 tbsp vanilla extract

Do well to follow pictorial illustrations to produce your plantain puffs.

HOW TO MAKE TOP NOTCH PINEAPPLE DRINK

In recent years, I began a self discipline of consuming more natural drinks and less carbonated drinks. Asides the smoothies I teach you, natural juices are another great option.

INGREDIENTS

1 medium size pineapple
1 medium size lemon
1 medium size fresh ginger
1 tbsp sugar (optional)
A pinch of salt
5 - 6 ice cubes

PROCEDURE

📌 Peel pineapple and cut into blendable sizes.

📌 Peel your lemon entirely, remove seeds and cut into four parts.

📌 In your blender, place pineapple dices, lemon, peeled ginger, ice cubes and blend until smooth.

📌 Seive to extract juice from fibre. Add your sugar, pinch of salt and give a good stir.

This juice can be served to both children and adults (except diabetic adults).
