Chocolate Chip Cake (vegan and gluten-free)

A lil chocolate chip cake to celebrate 21 circles around the sun๐๐๐

dEATS:
-Preheat oven to 350ยบF and grease a 6 inch round pan.
-Mix together 1/3 cup melted coconut oil, 2 1/3 cup oat flour, 1/3 cup coconut sugar, 1 tsp baking powder, 1 tsp salt, and 1 tsp vanilla extract.
-Add in 3/4 cup non-dairy milk.
-Stir to form batter.
-Fold in 1/3 cup chocolate chips.
-Pour into a lined cake pan.
-Bake for 35 minutes.
-Allow to fully cool.
-In a separate bowl melt 3/4 cup chocolate chips with 1 tbsp coconut oil.
-Spread on cooled cake.
One pan chunky monkey protein baked oats:
2 cups rolled oats
2 bananas mashed ab 1 cup
1 1/4 cups almond milk
1/4 cup maple or date syrup
1/4 cup nut butter
2 tsp baking powder
optional:
1/4 cup granola
1/4 cup hemp seeds
1/4 cup chocolate chips
bake at 325F for 30-35 minutes

Halloumi cheese fried in a delicious crispy seasoning to give it so much flavor! ๐ SAVE TO TRY โค๏ธ
dEATS:
1 tbsp cornstarch
2 tbsp oil
2 tsp paprika powder
1 tsp onion powder
1 tsp garlic powder
1 tsp cayenne pepper
2 tsp salt
100 g tortilla chips
1/2 lime
225 g halloumi
Method:
1. Cut the halloumi in strips.
2. Add the cornstarch to the halloumi. Make sure every piece is covered.
3. Drizzle the oil on the halloumi. Again make sure every piece is covered.
4. Grind the tortilla chips in a blender. Add them to the halloumi together with the spices. Mix it.
5. Place the halloumi on an oven tray or in the air fryer. Bake for 15 minutes. (Or longer if you want them more crispy). Make sure to turn them every 5 minutes.
6. Serve a dip made from mayonaise and sriracha and sprinkle the lime over it.
if youโve never made nut butter from scratch Iโd totally recommend giving it a try! I love to top this healthier homemade nutella on my smoothie bowls, oatmeal, & toast!
recipe:
-3 cups hazelnuts
-1/4 cup + 1 tbsp cacao/cocoa powder
-2 to 4 tbsp granulated sweetener of choice (cane sugar, coconut sugar, or granulated monkfruit)
-1 tsp vanilla
-pinch of salt
toast hazelnuts in oven at 350 for 10 minutes. while they are still warm, add them to a food processor & process until they eventually turn into nut butter (this takes a bit of time). once your hazelnuts have turned into a butter, add in the cocoa powder, sugar, & vanilla. if you want a super fine & silky texture, blend the nutella once more in a high speed blender.

Ingredients:
โข2 eggs
โข1/3 cup melted coconut oil
โข1 tsp pure vanilla extract
โข3/4 cup brown/ or coconut sugar
โข1/2 cup oat flour
โข2/3 cup cacao powder
โข1/2 tsp baking soda
โข1/3 cup dairy free chocolate chips/ dark chocolate bar
Method:
1.) Preheat the oven to 350F and line/grease an 8x8in baking dish with parchment paper or coconut oil.
2.) In a medium sized bowl, add the eggs, coconut oil, vanilla extract, sugar, oat flour, cacao powder, chocolate chips and baking soda, combine.
5.) Add the brownie mixture to the baking dish and bake for 20 minutes or until a toothpick comes out clean.
*Tip: wait for these to cool completely before slicing!

All you need is:
Base:
150g Digestive Biscuits, finely crushed
60g salted (or unsalted) butter, melted
Cheesecake:
150ml double cream, cold
270g cream cheese, room temp
50g icing sugar
80g Carnation caramel
70g Snickers, chopped into small pieces
Topping:
Drizzle of milk chocolate, melted
Snickers, chopped into pieces
Optional: crushed peanuts
Caramel sauce
Makes 9-10 cheesecakes

Chia pudding is one of my favourite things to have for breakfast and my daughters after school snack.

To make this delicious jar stir everything together:
1/2 cup chia seeds
2 cups almond milk
1 cup frozen raspberries
1 teaspoon vanilla essence
3 tablespoons maple syrup
.
Store in the fridge for 6 hours and the chia pudding will form jelly like consistency
Today I have layered it with mango and passion fruit.

1 cup strong brewed coffee, cooled
1 1/2 cup unsweetened almond milk, frozen
1/2 cup heavy cream
1/2 cup erythritol or monkfruit
1 tbsp vanilla extract
1/4 tsp cinnamon powder
whipped cream
Sugar free chocolate syrup
Instructions
1. Add the coffee, almond milk ice cubes, erythritol, heavy cream, cinnamon, and vanilla to your blender and blend on medium speed until creamy and smooth.
2. Enjoy in your favorite glass or travel tumbler with a straw. Top with whipped cream and sugar free chocolate syrup. Enjoy!

Ingredients (this will give you three servings)
1. Frozen mixed berries 100g
2. One Medium-sized Banana
3. Low-fat Greek-style yoghurt 50g
4. Vanilla protein 1 scoop
5. Skimmed milk 100ml
Total calories 324 and 34g of protein. Each serving is 108cals with 8g of protein.

Chickpeas:
1 14.5 ounce can chickpeas
1/3 cup shredded carrots
1/4 cup diced red onion
1/4 cup cilantro
1/3 cup hot sauce
1 tsp garlic powder
1/2 tsp salt
Wraps:
4 gluten free tortillas
2 mashed avocados
Handful of spinach
1/2 cup vegan cream cheese (2 tbsp per wrap)
Instructions:
wash & drain the chickpeas then mash
Add to a bowl with the other chickpea ingredients
Stir together
Lay the wrap out, add cream cheese to the entire wrap so it will fold together well.
Fill 2/3 with avocado, chickpea mix, & spinach.
Roll together
Slice & enjoy! Makes 4 servings. Store in the fridge for up to 5 days!

Anyone else love Tiramisu?
In a blender:
๐น50-60g oats
๐น1 scoop (30g) vanilla protein powder, I use Shakeology
๐น1/2 tsp baking powder
pinch of baking soda
๐น1 tbsp (10g) maple syrup
๐น1 coffee shot (1 tsp instant coffee mixed with 20ml almond milk)
๐น100ml almond milk
Blend till smooth
Use 1/4 cup mix, cook in a non stick pan on medium heat for 2 mins then flip and cook for another 1 min
Stack:
โขCoffee + water
โขNon fat vanilla greek yogurt
Layer then top with sprinkle of cocoa powder

MUSHROOM SHAWARMA ๐
Mushrooms are life arenโt they? They need to be appreciated more for everything they do to the human mind, body and soul!
This mushroom was so meaty and so incredible you wonโt even think about needing meat ever again! ๐คฏ
Ingredients
1 Punnet oyster mushrooms
1 Tsp Cumin
1 Tbsp Thyme
1 Tbsp Cajun seasoning
1 Tsp zaatar
1 Tsp smoked paprika
1 Tsp garlic powder
1 Tsp Celery salt
Oil
Pita
Some salad, olive oil and lemon
Yoghurt, cucumber and lemon
Chillies
Pickled red onions
Method:
1. Start by mixing together your spices. Add a glug of oil to your mushrooms and then sprinkle the spices on top. Mix well to coat every bit of the mushies.
2. Now grab a skillet and a bit of oil add in the mushrooms. Add something heavy on top, like another pan or a bowl and press down, let cook for 3-4 mins until charred slightly and then flip the mushrooms and repeat the process.
3. Now mix together your salad ingredients in a bowl and your yoghurt ingredients in another bowl.
4. Heat up your flatbread, load on the salad and yoghurt, then the mushroom shawarma and then top with Chillies and pickled red onions and ENJOY!!
