- This is a typical dinner for us... For starters, there are 5 veggies on this plate! (Beets, Carrots, Cauliflower, Sweet Potato, Zucchini)

I’ll be talking about this in upcoming and posts but wanted to share this sneak peak because so many of us will be eating outside of our comfort zones this holiday…

People regularly ask me WHAT I eat now, post with a and missing some big and important parts.

They ask what I eat and what I don’t eat. Especially family and friends who want to cook for us and want to be accommodating of my dietary needs. IF YOU ARE cooking for someone who is a , also ask: “HOW do you prepare your food?” Because I’ve realized lately that WHAT I eat, is AS IMPORTANT as how the food is prepared…

Keeping in mind every is different, my focus is:
🍽️ PRIORITY 1) Fiber - veggies, fruits, grains with a blend of soluble and insoluble fiber.
🍽️ PRIORITY 2) Protein - lean - turkey meatballs on this plate - w/few to no processed meats (uncured occasionally) and limited beef.
🍽️ PRIORITY 3) Carb/Starch.

We also focus on using healthy fats when cooking, and while we do use butter, oil and even cream sometimes, we do so in moderation. 🍟 Heavy oils and deep fried foods are a very limited part of my diet as are hot and spicy foods. 🌶️ Think of it this way, if it makes YOU bloat, burp, fart, upsets your stomach, sends you running to the bathroom, gives you diarrhea, or stops you up, it’s going to do that to me X 💯! 😬💩🚽🏃‍♀️💨

WTF! 😂 Welcome to Florida! We landed at our RV Park in cloudy FL before sunset… Looks like rain! 🌧️ Did you know that our Southernmost state only has 230 days of sunshine a year vs Colorado’s 300 days of ☀️? 🤔 But it’s warmer than TN so we will take it + Vitamin Sea! 🌊 Thanks for our awesome outdoor mat!

This is what we call ! 🚐 🛌 🍳 We bring our own bed and we bring our own breakfast! 😂 All we need is a driveway and the occasional shower! (We have a shower in but sometimes it’s nice to spread out in a big one! 🚿 ) Thank you to Cousin Roxanne for putting us up for the night at your beautiful home! ❤️ U!

CC’s in Love! 💚 Anyone who knows her knows how much she loves green! We have always loved the and yesterday this showed up on the highway in “green hell magno”! Too bad it’s $179k MSRP is not in the retirement budget! 😂 (That’s the same price as a new camper van!) The last photo is one in Chicago priced to sell at $230k! 🤔 (It looks even more fabulous with the silver accents.) Next lifetime perhaps! We’ll enjoy the photos! 💚

More goodness to share with the fam! This yummy recipe was inspired by ! Keep it vegetarian or add meat and cheese for a heartier meal. Start with a can of organic, chickpeas, drained, and rinsed. Add your favorite veggies, chopped finely. We chose cauliflower, beets, broccolini, and carrots. We also opted to add shaved, cheese and a can of organic chicken, drained. These are optional. For the dressing, whisk together one packet of good seasons, Italian dressing plus 1/4 cup of water, 1/4 cup of vinegar, and 1/4 cup of olive oil. pour on the salad and mix well. Serve with crackers, or by itself! Super good, and good for you!

This is how we roll! “Life Is a Highway.” Today it leads to TN via CO, NM TX, OK, and AR. Yesterday we embarked on our annual with stops in TN, FL, AL and TX! Not sure if this year’s tour will have an official # or how frequently or consistently we will be posting our adventures! 🤷🏼‍♀️ We shall see what our desires manifest as it’s still early days. We may be gone 75 days this year so that’s a lot of days to post and a lot of family interaction to be had!
