Today’s healthy meal under Ksh 100/= features potatoes aka waru(recipe below). Due to popular demand, potatoes are grown almost all year round. This recipe was inspired by the popular potatoes hash breakfast recipe of the west as well as shakshuka recipe from the middle east. With just the minimal ingredients of eggs, green beans and eggs- this offers an energizing fibre filled breakfast option for kids and adults alike. Recipe brought to you in collaboration with Food and Agriculture Organization of the United Nations (FAO) to mark this year’s World Food Day!

Did you know Potatoes are best kept in a cool, dark, and well-ventilated storage space. This way, they can last up to 2 weeks.

Recipe: Crispy Potatoes Green Beans and Eggs
Ingredients
• 1 cup fresh or cooked green beans, cut into 1-inch pieces- 12/=
• 2 tablespoons oil
• 5 cups diced cooked potatoes- 30/=
• 2 cloves garlic, minced- 5/=
• 1/4 of medium green pepper - 5/=
• 1 medium onion diced- 10/=
• ½ teaspoon salt
• 1 Freshly ground pepper, to taste
• 2 large eggs- 30/=
Method
Over medium heat the oil and add your diced potatoes. Let them shallow fry for about 7-10 minutes until tender. Remove them from pan and set aside. Fry the onions and garlic until tender and add in the green beans. Let them cook for about 5 minutes until bright green. Add back in the potatoes and make sure to season your food with salt or black pepper. Create two holes in the middle and crack in two eggs in each hole. Cover and let the eggs cook and set to your liking. Serve immediately and season with some more pepper or paprika or even with your favorite sauce. #healthymealsunder100 #worldfoodday #worldfoodday2021
So excited to kick of this series ‘Healthy Meals under 100 kenyan shillings’ with this incredibly simple Crispy banana peanut yoghurt snack that cost a total of 80 kenya shillings (we used per unit costing- recipe below!). This series is done in collaboration with Food and Agriculture Organization of the United Nations (FAO).
Did you know, according to FAO, the agricultural sector worldwide employs over 1 billion people, more than any other economic sector? Sadly there are so many inefficiencies in how we produce, consume and even waste food which puts a heavy toll on our planet. That is why we need to be mindful not to waste the food we buy and find creative ways to use excess or leftovers!

Bananas are a popular fruit consumed in Kenya that contain many essential nutrients. This recipe is a creative way to have ripe bananas and even utilize over ripe ones. This can be a quick snack or even a no-fuss inexpensive dessert!
Recipe: Crispy Banana Yoghurt Snack
Ingredients
• 2 Bananas -20/= (cheaper if you grow your own in your shamba)
• 1/4 tsp Cinnamon
• Natural yoghurt-50/=
• Crushed peanuts- 10/=
Begin by peeling and chopping the banana in halfway lenghths. Heat a pan and add some oil. Once the oil is sizzling hot, fry the bananas until they are crispy and golden on both sides.
If you are using peanuts with the skin on- make sure to remove the skin and then crush the peanuts using a mortar and pestle
Begin to layer the snack, you can use any small glass for this. Start by a layer of yoghurt. Add then add caramelized banana and some crushed peanuts. Repeat the process for an additional layer. Serve immediately and enjoy!
Note: we did not cost oil, salt or spices due to preference.
