Easy Egg Bake
Here’s a great way to use up leftover meats, cheeses, and veggies.
- Grease an 8 x 8 baking dish.
- In a bowl, beat 12 eggs. Season with salt and pepper.
- add any combination of veggies, cheeses, and or cooked meats. (I used deli ham and ameeican cheese)
- Bake at 350F for 40 to 45 minutes until the center is set.
- Enjoy!

I literally keep bones in my freezer 😳🫣 - Every time I make a roast chicken I save the bones! First sign of a sniffle or a snowstorm, I grab the @instantpot and whip this up. It’s quick and easy - and so super nutritious. Mineral rich, high in protein, and great for skin and gut health.
Instant Pot Bone Broth
Bones from 2 chickens
1 onion, quartered
2-3 stalks celery, quartered
1 bulb garlic, halved side to side
Parsley & thyme (I also keep a stash in the freezer)
1/2 teaspoon black peppercorns
1 tablespoon pink salt
1 tablespoon apple cider vinegar
Fill with water
Set to manual for 120 minutes.
Quick or natural release pressure.
Season with more salt to taste.

Easiest, cleanest way to fill a piping bag:
Scoop your frosting onto a piece of plastic wrap. (Can be homemade or store-bought!)
Roll up the plastic wrap and twist the ends!
Snip one end off with a scissors and place the open end into the piping bag.
Twist the top of piping bag to get rid of the air bubble. Done!
Now go frost your cupcakes. 😉

Super Easy Roasted Potatoes
Baby potatoes, halved
Olive oil
Garlic powder
Salt & Pepper
Toss to coat.
Cover with foil and bake at 425F for 25 minutes. Uncover and bake another 20-25 minutes until tender.
Serve with your favorite protein.
So good for breakfast with eggs!

Easy Low Carb Crockpot Meatballs
Ingredients:
2 pounds ground beef (I used 80/20)
1 cup shredded cheddar cheese
2 tablespoons soy sauce
1/2 cup milk, half and half, or heavy cream
1 packet onion dip packet (I used Primal Plate)
2 jars of your favorite sauce (I used Victoria brand)
What to do:
- Mix all ingredients in a bowl until combined.
-Form into meatballs.
-Pour half a jar of sauce into bottom of crockpot.
-Add a layer or meatballs.
-Too with sauce to just cover.
-Add rest of meatballs and too with remaining jar of sauce.
-Set crockpot to high for 2 hours or low for 4 hours
-Enjoy with low starch veggie for low carb or spaghetti for more traditional!
