We had seafood nabe (pot) tonight. Delicious and nourishing!☺️ The white brain-looking thing in the center of the pot is fish milt (shirako). I know it looks and sounds weird but actually it’s creamy and delicious. We also had some shio-koji-marinated sashimi. The cold temperature during this winter season has made some fish super fatty and delicious!

We just can’t get enough of lamb!!😋 It’s the best meat on the planet!

Today’s dinner:
- Indian lamb curry seasoned with shio koji
- cauliflower rice
- avocado
- veggie sticks with tahini

The curry was delicious!! I want to learn to cook other Indian curries too.

And we love cauliflower rice! Now we like it more than regular rice because it’s lighter and more flavorful☺️

We went to an Uzbek restaurant and ate delicious lamb dishes. Our first time eating Uzbek food! To my surprise, it had gentle and easy-to-eat kind of flavors that everyone would enjoy. The shrimp risotto came out great. My partner raved about it☺️ I cut down the amount of rice in half (because we are avoiding carbs) and swapped that portion of rice with veggies and shrimps. I also intensified the flavor with the shrimp-shell stock I made yesterday and tons of parmigiano reggiano. I also added tomato paste, saffron, smoked paprika, and shio koji. This risotto had deep seafood umami as well as the deep umami from parmigiano reggiano. We didn’t miss rice at all.
