Ingredients: Oil – 3 tbs. Mustard seeds – 1 tsp. Fennel seeds – 1 tsp. Black Gram (Urad Dal) – 2 tsp. Garlic – 6 to 8 cloves. Green chilly – 3 no. Onion sliced – 2 no. Salt to taste. Tomato sliced – 4 no. Ginger garlic paste – 1 tsp. Pepper powder – 1 tsp. Chilly powder – 2 tsp (Kashmiri + Ordinary). Coriander powder – 2 tbsp. Turmeric powder – 1/4 tsp. Hot water – 2 cups. Curry leaves. Coriander leaves. Preparation: Heat oil in a sauce pan. When the oil is hot enough, add the mustard seeds and allow the seeds to pop. Then add fennel seeds, black gram, garlic, green chilly, and onion. Saute well until the raw smell fades away. Add tomato and mix everything well. Cover and cook till the tomatoes are soft. It is the time to add our spices and masala. Firstly add ginger garlic paste, then pepper powder, chilly powder, coriander powder, and turmeric powder. Mix well. Add hot water and curry leaves. Once again close it and allow the curry to boil. Our tomato curry is ready and garnish it with coriander leaves. This recipe will pair well with almost any dishes including roti, chapathi, rice, idly, dosa and bread.
