While keeping up with today’s fast-paced world, we often struggle to make healthy dietary and nutritional choices. We look for quick food fixes that we can quickly ‘grab and go’ that help us save time on cooking so that we can utilize it towards other aspects of life. This has lead to a rise in prepackaged foods like pre-made breakfasts that are ready with boiled water or pre-made meals that are easily microwavable. If you are health conscious, then you would typically choose easy to make foods like protein shakes, fruit and vegetable smoothies, energy bars which promise us ‘maximum nutrition’ with ‘minimum time and effort’. And if trying to curb or shrink your growing waistline you would often consider ‘healthier options’ like fat free foods, and air fried recipes. But, Are fruit and veggie smoothies really ‘healthy’? Are energy bars the way to go for boosting energy? Are air-fried foods 'healthier' than fried foods? To answer the above questions and take the mystery out of ‘healthy cooking,’ Dr. Manjiri Nadkarni will talk about "Unlocking the Ayurvedic Secrets of Ahara Samkara or Ayurvedic Food Preparation for Optimal Nourishment!" She will discuss different food preparation practices employed traditionally in Ayurveda vs. in today’s modern world like soaking, sprouting, boiling, baking, grilling, pressure cooking, air frying, churning, blending, juicing, grinding etc. affect food from a qualitative and nutrient density perspective, and how they impact your health. She will also share the best practices and food preparation techniques that can lead to optimal digestion and improved nutrient absorption, that leads to a life full of energy and vitality.

Instead of painting a rainbow, how about eating a rainbow of colors? Red, orange, yellow, green, white, blue and purple. Each of these colors has health benefits, including: - Improved vision - Decreased inflammation - Reduced risk of chronic diseases, including cancer, heart disease and diabetes - Strengthened immune system These benefits are due to the phytochemicals that occur naturally within these foods. Phytochemicals also give foods their distinct aroma and taste. While each color provides certain benefits when paired with other colours, the effects on your health are astonishing. That's why it's important to eat a wide variety of colours.

Chrono Nutrition simply means eating the "right foods at the right time." It is not only 'What' but 'When' you eat that matters. Consuming your calories during a restricted window of time can have a deep impact on your health and well-being. We will be discussing Chrono nutrition in the light of Upavaas (intermittent fasting) and Cardio-Metabolic disorders.

What is Aahara, Anna, Bhojana?

Ayurveda whispers that food comes in material and non-material forms and gives several terms such as bhojana, aahaara, and anna.

Anna is all things we ingest -- take in and down through our mouth -- that are nutriments, including food, but also including drinks, lickables, and smoke. If it is not nutritious, it is not anna.

Aahaara includes all things we take into our being, both food and material items, but also all things that enter through our senses and our mind. Aahaara can also include distractions, dilutions, and detriments to a nutritious meal.

Bhojana is the constructed meal with all its components, like an outfit with all its components and its net effect.

"Please keep in mind that this photo is a perfect example of violations of ayurvedic principles.

It is too much food for one meal and shows perfect examples of incompatible food combinations for people without optimal digestive fire.
Eating like this will make many people sick." - Dr Bhaswati Bhattacharya

Every rasa has its place in nutrition and well being. How is Madhura Rasa useful, and what are the best sources???

Madhura is the Sanskrt term for appealing, sweet or pleasant. It is a combination of prithvi (earth) and jala (water). As these are the two heaviest elemental forces in nature, the substances which have the predominance of madhura rasa are sweet in taste, often juicy, usually heavy to digest. They are useful because they promote stability, strength and lusture in the body.
