Zero Oil Lauki / Bottle Gourd Soup 🍲
Lauki is known for its health benefits especially helps in weight loss. This soup might not look fancy and vibrant.
I like to keep it simple with minimal ingredients, as it retains the natural taste of Lauki and is comforting.
Ingredients:
•Lauki / Bottle Gourd - 1 big
•Garlic - 3 big cloves
•Onion - 1 medium size
•Cumin Powder - 1 + 1/2 tsp
•Water - 3 cups
•Whistle - 3
•Pepper Powder - 1/2 tsp
•Chopped Coriander - 1/2 cup
•Salt - as required.
Method:
•Wash the Lauki, peel the skin, chop and add it to the pressure cooker.
•Add in garlic, onion, water, cumin powder( you can either add the cumin powder while pressure cooking or at the end while adding pepper powder. Works either way)
•Pressure cook it for 3 whistles.
•Allow it to cool down transfer it to the mixer jar and run it to a fine purée.
•Pour it back to the pressure cooker, adjust the consistency with water if needed, pepper powder and chopped coriander.
•Bring it to boil and switch off the flame.
•Serve it hot!

Total calories :- 1400 to 1600
Empty stomach - red juice for glowing skin including apple, beetroot, carrots and coconut water ✅
Breakfast :- 3 egg white omelette/besan chilla with steamed broccoli ✅
Mid Morning:- 100 gms cucumbers ✅
Lunch:- 30 gms masoor dal with 30 gms quinoa steamed and salad✅
Evening snacks:- 100 gms mix fruits ✅
Dinner:- 2 green moong dal chilla with 50 gms greek yogurt. ✅You can increase and decrease the quantity according to your body need.

Recipe :-
1Cup Boiled Shakargandhi ( Sweet Potato )
1 Chopped Onion
1 Chopped Tomato
1 Chopped Apple
1 Cup corn
1 Cup pomegranates
Fresh Coriander
Lime Juice
½ Tsp Chaat Masala
1 Tsp Olive Oil
1 Tsp Cumin Powder
1 Tsp Chilli powder
Salt as per taste
Start by boiling the sweet potatoes for 10-15 mins, until they turn soft.
Peel off the skin and chop them into small dices.
In a pan, Heat 1 Tsp oil, add cumin powder, chilli powder and salt. Cook for a couple of minutes and add boiled sweet potatoes.. Mix well and cook till the sweet potatoes turn golden.
In a bowl, add the cooked sweet potatoes, chopped onions, coriander leaves, pomegranates, chaat,apple masala andlemon juice.
Mix them all well
