[4]Dry roasted Fenugreek seed powder[Venthayam Powder] = 1.5 tsp
[5] Asafoetida Powder[Hingu Powder] = 1 tsp
[6] Fresh Ginger piece = 20 g[Hand Thumb size]
[7] Salt[ for paste] = 1 tsp
SECOND Prep.Work: [For Spicy Seasoning]
[8] Any cooking oil of your choice = 200-250 ml
Gingelly oil/Sesame oil is preferred]
[9] Mustard seeds = 1 tsp
[10] Urid dal = 2 tsp
[11] Split gram dal = 2 tsp
]12] Dry cut red cillies = 10 numbers
]13] Fresh Curry leaves = 4-5 compound leaves
[15] Turmeric Powder = 1 tsp
THIRD Prep.Work [Side Dish]
[16] Black Channa alias Chickpea,Kabuli channa and Gram = 500 g
[Cowpea[Thattam Payaru or Karamani in TAMIL] also preferref]
Soak the protein-rich Black Channa for 8-9 hrs in the previous night.
METOD TO PREPARE ''Tasty Tamarind Rice''[Puliyotharai/Ambat Bhath]
[17] Old Raw Rice[Palaiya Pacharisi in TAMIL] = 400 g
[18] Water [measured] = 800 ml
[19] Salt [ for rice] = 1 tsp
Pressure cook 400 g of old raw rice with 800 ml of water. Allow one whistle and 3 mintute in simmer[low flame]
Let the rice cool down.
Drop 4 tsp of spicy TAMARIND PASTE[Pulikhaichal]over the rice.
[400 g rice : 4 tsp of Tamarind Paste is the ratio ]
Pour all the spicy seasoning oil.
Now........Mix all the three ingredients[rice,oil,paste] gently,evenly and thoroughly.
Serve the YUMMY,YUMMY,SPICY and SAVOURY Puliyotharai[Tamarind Rice] with boiled or roasted channa. Fresh Coconut pieces also another option.
