Chicken seekh kebab
These kebabs are a delicious Indian appetizer made with ground minced meat and a handful of spices and are usually served with a side of green chutney.
A little bit of history:
Legend has it that the dish originated in the open fields by the Turkish soldiers who used to take shelter in the jungle and hunt for wild meat. They would then skewer either the whole or minced meat on their swords and roast it over the fire. The Turks then used the same method to cook their food everywhere they went. And that’s how the lip-smackingly delicious Seekh Kebab came to India.

Let's talk about Indo chinese food today...
It is a distinct fusion culinary style that combines aspects of both Indian and Chinese foods and flavours. The most popular origin story of the fusion food resides with the Chinese of Calcutta, who immigrated to British Raj India looking for work. Opening restaurant businesses in the area, these early Chinese food sellers adapted their culinary styles to suit the tastes of the Indians in order for Chinese food sellers to keep earning money from the Indians.
Chinese Indian food is generally characterised by its ingredients: Indian vegetables and spices are used, along with a heavy amount of pungent Chinese sauces, thickening agents, and oil.Stir-fried in a wok, Sino-Indian food takes Chinese culinary styles and adds spices and flavours familiar to the Indian palate. This idea of flavourful, saucy Chinese food cooked with Indian spices and vegetables has become integral to the mainstream culinary scenes of India, Pakistan, Bangladesh, and Afghanistan, and its diffusion to nations like America, Britain, Canada, and the Caribbean has shaped and altered the global view of Chinese, Indian, and Asian cuisines.

Chicken rezala is a very popular mughlai dish which was introduced in bengal by the last Nawab of Awadh Wajid Ali Shah.
When he exiled to Calcutta, bought along with him his trusted "bawarchis". Some believe that Wajid Ali's cooks bought the "rezala" with them. It was cooked on slow coal fires and served with biryani to the royal household. I can only imagine how much it must have been appreciated! “The chunks of chicken in a rich and aromatic white based gravy” is mostly served in restaurants. The white gravy is made with curd, cashew nut and poppy seeds paste, flavored with subtle spices which are not commonly used in normal dishes. Variety of attars (essence) such as kewra water, meetha attar and rose water are used, which ultimately make this dish, “Chicken rezala” very royal. Rezala has a very unique flavor for which it is so distinctive from other mughlai dishes. The secret behind a successful Rezala is the use of homemade sweet yogurt that nicely compliments the dish giving a prefect sweet taste. But if sweet yogurt is not available, you could add little sugar and regular yogurt. Chicken rezala curry goes well with rice or biryani. The Rezala is a thin or medium thick gravy. It doesn't score too high on looks but don't be fooled, it carries a punch way beyond expectation.

Kolkata Chicken Biryani
The history of Kolkata biryani dates all the way back to 1856, when the last Nawab of Awadh , Wajid Ali Shah was deposed by the British ruler. He travelled to Kolkata,from where he intended to visit Queen Victoria in England to pleas his case. But he couldn't go to England and fell ill and so he ended up staying in Kolkata in this process. He was later granted an estate in an area to the west of Kolkata, known Metiabruz, where he built his mini Lucknow palace. There he started maintaing his awadhi culture and tradition.So in the kitchen of his Metiabruz estate the famous awadhi biryani were also started cooking. A slow cooked, aromatic rice and meat dish that some say was first served during the construction of Bara imambara of Lucknow in the late 18th century.
But rhe deposed Nawab had fallen hard times and couldn't afford the vast amounts of meat required for Biryani.So to cut the cost the proportion of meat was replaced with potato and so the story goes of The Presence of famous Alu in Kolkata biryani....
This special style of biryani with meat and potato can only be found in Kolkata, outside Kolkata you can only find biryani with meat.
Here in this reel I have presented a plateful of Chicken Biryani cooked by me with some raita ( spice flavoured youghurt) and some Coriander chutney.
