Arbi patte k bhajiya ki kadhi

It's a authentic up dish
Finely grindd the lentils that have been soaked overnight.

Finely chop the Arabi or kochai leaves (colocasia leaves) and mix with the ground lentils and salt.

Put this paste in a plate and steam cook it. After 10 minutes once mixture is cooked, let it cool for some time and cut into rectangular pieces.

Take oil in the pan and heat it. Once oil is properly heated fry those rectangular pieces until they turn red.

In hot oil put some mustard seeds with full red chillies put 1 chopped tomato, add salt, turmeric powder, coriander powder.

Take 500 g curd, add some water and 2-3 table spoon gram flour and prepare a thin solution. Add this curd solution with prepared tadka in the pan. Let it boil for some time.

Once the curd starts boiling, add Arabi leaf pieces and boil again for some more time. Once it’s cooked, switch off the gas and let the kadi get cold. The Idahar is ready.

"I was 14 when I started cooking because I loved doing so. Never thought that I would end up owning a food outlet --- 'Tasty Wheels' and a digital platform 'Karo na Cooking!' I was looking for engineering colleges after 10+2 but couldn't clear my Maths Board Exam and that was the first time, I faced failure in life. And back then, every college was asking for the 10+2 certificate/marksheet.

Fortunately, I had a backup. I applied for Hotel Management in various Government Institutes. And based on merit, I got selected in IHM, Chennai. And, luckily they just asked for a correspondence degree that time (laughs). In Chennai, life was not as easy as I thought it to be. Gradually, the placements began, I decided not to sit for any of them. I had no idea what to do with my future. I graduated in 2018 and just for the namesake, I took a retail job but didn't work there for long. Then, I went to Mumbai worked there for a week and left that too.

At last, I came back to Bilaspur and started working as an Insurance Broker for three months. And then I thought of following my passion and decided to open a cafe. But because of some financial issues, it couldn't happen. Finally, I thought of coming up with a food truck which can be started with less investment. Worked day and night, with all my heart and soul, to make it work.

During this pandemic, I started my digital platform "Karo na Cooking" for promoting home-chefs too. My channel was appreciated by Celebrity Chefs like Ranveer Brar and Shipra Khanna. I am 23 and still struggling and grinding hard to make things happen. I want to thank my parents who never questioned or restricted me but always supported me in my decisions."
