Here's a recipe
Ingredients:
- 2 cups whole wheat flour
- 2 tablespoons ghee or melted butter
- 1 teaspoon salt
- Water, as needed
- 6-8 garlic cloves, finely chopped
- 2 tablespoons pizza seasoning (a mix of dried herbs like oregano, basil, thyme, etc.)
- Ghee or oil for cooking
Instructions:
1. In a large mixing bowl, combine the whole wheat flour, ghee or melted butter, and salt. Mix well until the ghee is evenly distributed in the flour.
2. Gradually add water and knead the dough until it becomes smooth and pliable. The dough should not be too stiff or too soft. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
3. After the resting time, divide the dough into small lemon-sized balls. Take one dough ball and roll it into a thin circle using a rolling pin. Brush some ghee or oil on the surface of the rolled dough.
4. Sprinkle a generous amount of chopped garlic and pizza seasoning evenly over the surface of the rolled dough.
5. Now, start making pleats or folds from one end of the rolled dough. Roll the pleated dough tightly, forming a spiral shape. Tuck the end of the dough underneath to secure the layers.
6. Gently press the spiral-shaped dough and roll it again into a circle, taking care not to press too hard. Repeat the process with the remaining dough balls.
7. Heat a tawa or a flat griddle over medium heat. Place the rolled paratha on the hot tawa and cook for a minute or until small bubbles appear on the surface.
8. Flip the paratha and brush some ghee or oil on the cooked side. Cook for another minute, then flip again and brush ghee or oil on the other side. Press the edges of the paratha with a spatula to ensure even cooking.
9. Continue cooking and flipping the paratha until both sides are golden brown and crispy. Remove from the tawa and place it on a plate.
10. Repeat the process with the remaining rolled parathas.
