ರಾಮನವಮಿ ವಿಶೇಷ/Rama Navami recipes/karbujada paanaka/neeru majjige/bellada panaka/kosambari

Ingredients to make kosambari:
Moong dal 1 cup
Chopped cucumber 1 cup
Minced green chilli and ginger 1 tsp each
Coriander
Salt
Sugar 1/2 tsp
Lemon 1
Fresh coconut 1/2 cup

For tempering:
Ghee 1 tsp
Mustard 1 tsp
A pinch of Asafoetida
Curry leaves
Broken red chilli

To make bellada panaka:
Powdered jaggery 1/2 cup
Water approximately 3-4 cups
Cardamom,black pepper & dry ginger powder
Salt a pich
Lemon 2 nos

To make Muskmelon juice
Chopped muskmelon 2 cups
Powdered jaggery 1/2 cup
Water approximately 3-4 cups
Cardamom,black pepper & dry ginger powder
Salt a pich
Lemon juice

To make Neeru majjige:
Fresh buttermilk 3-4 cups
To crush and make a coarse paste if ginger,green chilli,coriander and asafoetida

ಕೊಟ್ಟೆ ಕಡುಬು/mavinakayi chutney/mango chutney/kotte kadubu

Ingredients:
Urad dal whole 1 cup
Idly rava 3 cups
Salt
Jackfruit leaf pockets (i got it from mangalore stores)

For mango chutney:
1/2 of a Raw mango (sour variety)
Fresh coconut 2 cups
Salt
Asafoetida
Green chilli
Red chilli

Tempering:
Oil
Mustard
Curry leaves
Asafoetida

ದಿಢೀರ್ ಬೆಣ್ಣೆ ಚಕ್ಕುಲಿ । ganesha chaturthi instant chakli | chakli recipe | butter chakli recipe | chakkuli recipe

Ingredients :
Rice flour 1 cups
Urad dal powder1/4th cup
fresh coconut paste 1/3rd cup
Butter/hot oil 2 tb sp
Sesame one tb sp
Hing 1 tsp
Salt as needed
Oil to deep fry.
Method: 1. if urad dal powder is not available Dry roast urad dal, make fine powder in mixie once cooled.
2. In a basin add rice flour, urad dal powder,coconut paste,sesame,hing,salt and butter
3. Mix well, using water and form dough as shown in the video
4. No need to rest, go on stuffing dough to the chkali maker and press on tissue paper.
5. Heat oil and deep fry these chaklis on medium heat. Till they turn golden

Note:
1. Bring butter to room temperature and use.
2. Instead of butter hot oil can also be used.
3. Imp step while making this chakli is to knead each dough portion really really well before stuffing inside the chakli maker . This helps to prevent chaklis from breaking while pressing.
4. Make sure oil is hot enough before you start frying or else chakli may break into pieces.
5. Don't use excess butter or oil for this preparation, as chaklis may break.

Ingredients :

Thin poha 1 cup
Fresh coconut 1/2 cup
Jaggery powder 1/3rd cup
Cardamom powder 1 tsp
Black sesame 1 tsp
Ghee 1 tsp
Honey 2 tsp

Ingredients :
At first fry black sesame in ghee and transfer to a wide mixing bowl. To this add coconut, jaggery, honey, cardamom powder and mix well. To this add thin poha as needed and mix again. Quick naivedyam for krishna janmashtami and ganesha chaturthi is ready.

ಗಣೇಶ ಚತುರ್ಥಿಗೆ
ಕರ್ಜಿಕಾಯಿ/ಕರಿಗಡುಬು/ಮೋದಕ ಮಾಡುವ ವಿಧಾನ/Karjikayi/karigadubu/kaaranji/modaka recipe

Ingredients

To make Hoorana or filling :
Grated kopra 1.5 cups
Sugar 1/2 cup
Cardamom powder 1/2 tsp

Mix everything together in a bowl and keep ready.

To make the outer cover:
Chiroti rava 2 cups
Maida 2 tb sp
Hot ghee 2 tb sp
Baking powder a pinch(to get that extra crisp )
Salt a pinch
Oil to deep fry

Method :
At first take chiroti rava,maida in a wide basin. Add melted ghee, salt and a pinch of baking powder. Rub well with fingers so that everything gets incorporated well. Add in water little by little and form dough. knead well for minimum 5 minutes while making dough. Cover and rest for 45 miniutes to 1 hr. After one hour knead the dough well once again and make equal size balls. Roll it to a round shape by dusting flour, add 1 tb sp full of horana inside, fold and seal the edges using a fork or by twisting it give a shape, or simply use a karjikayi mould which is easily available and it holds proper shape in no time. Deep fry in medium flame until they turn golden in color.

Tip:
1.fry them in a big batch at once. This helps to fry them evenly without getting burnt soon after putting in the hot oil.
2.to the filling you can also add poppyseed, fried gram powder, sesame and chopped nuts. Sugar can be powdered and used.
3. to prepare the cover you can also use 2 cups maida and 2 tb sp chiroti rava.

ದಿಢೀರ್ ಪುಳಿಯೋಗರೆ/ಹುಣಸೆ ಗೊಜ್ಜನ್ನ /instant tamarind rice/instant pulihora/instant puliyogare recipe

Ingredients :

Rice 1 cup
Tamarind pulp 1 /2 cup
Turmeric 1/2 tsp
Rasam powder 1 tb sp
Coarse powdered sesame seeds 1/4th cup
Salt
Jaggey 1 tb sp

For tempering :
Oil 2 tb sp
Peanuts 1 tb sp
Mustard1 tsp
Urad dal 1 tsp
Channa dal 1 tsp
Curry leaved a few
Hing 1/4th tsp
Slit green chilli 3-4
Red chilli 3-4

Method :
1.cook rice and put it into a basin. After sometime add some oil and mix well.
2.soak tamarind in hot water and extract pulp.
3.in a pan add oil, at first fry peanuts and take out to a plate.to the same pan add in tempering ingredients one by one. also add in tamarind juice, turmeric, salt, jaggery and rasam powder. Mix well and cook on low flame for 3-4 minutes or until you see oil floating on top. Switch off the flame.
4.take required quantity of gojju and mix it with the rice.add fried peanuts and coarse powdered sesame seeds now.mix everything very well.adjust salt if needed.
Yummy tamarind rice is ready to serve.

Note:
1.use long grain or sona masuri rice.
2.cook it normally how you cook rice at home. I add 3 cups water to the rice.
3.do not try to mix rice when hot, it gets mushy. Let it cool completely before mixing.
4.this gojju can be stored in fridge and used as needed.
5.at the time of mixing gojju with rice you can also add grated coconut or dried coconut powder.

ಗುಡಾನ್ನ ಪ್ರಸಾಧ/ ಗುಡಾನ್ನ/ಬೆಲ್ಲದ ಅನ್ನ/gudanna/bellada anna/navratri recipe

Ingredients:
Rice 1/4th cup
Water 3/4th cup
Jaggery powder 1/2 cup
Water 1/2 cup
Cardamom powder 1/2 tsp
Cashews a few
Ghee 1/4th cup

Method:soak rice for 15 minutes.
Pressure cook for 3 whistles.
Take jaggery in a vessel add equal quantity water. Melt jaggery ,strain it to a kadai. Add in cooked and mashed rice to it. Cook on medium flame until it reaches halwa consistency. Add ghee at this stage and mix well.Now add cardamom powder and cashews fired in ghee. Add a final dollop of ghee and switch off the flame. Gudanna prasada is ready.

Ingredients :
Soft dates 400 gms
Sugar or jaggery powder 1/2:cup
Rice 1 cup
Salt
Turmeric

Method :
Rinse and soak rice for 2 hrs. Check out the excess water add little salt and turmeric, grind it to a fine paste. Consistency is little watery than regular dosa batter. Keep it aside.
If you're using regular dates steam cook it for 10-15 minutes. Then grind with jaggery or sugar.
If using soft dates, add jaggery use kuttani to make paste. Very easily you can make a paste out of it.take it out to a plate. Add 2 rsp ghee, mix well and start making balls. Size is of medium lemom. Heat oil in a kadai. Dip dates balls in the batter prepared and deep fry on both the sides until they turn brown in color. Take out to a plate and tasty traditional sukrunde is ready.
It's an easy recipe compared to regular method as we can avoid making jahgery/ sugar syrup in the recipe.good option to prepare neivedya during festivals.

ನೆನೆಸದೇ ಸುಲಭವಾಗಿ ಕುಕ್ಕರ್ನಲ್ಲಿ ಬೇಯಿಸಿ ಮಾಡುವ ಸಬ್ಬಕ್ಕಿ ಪಾಯಸ/nylon sabudana kheer/sabbakki-sago kheer

Nylon sabudana : 400gms
Sugar 800 gms
Milk 2 ltrs
Saffron strands a few
Ghee 3 tsp
Cashew and raisins a handful
Cardamom powder 1 tb sp

Method:
At first rinse sabudana with water.
Put it directly into the pressure cooker and add required quantity of water. Bring one whistle.
Boil milk separately and keep it aside.
In a small cup take some hot milk and add Saffron strands to it cover and rest .

As soon as the pressure comes down remove the lid and immediately add in boiled milk. Mix very well so that there are no lumps. Once it's mixed properly add in sugar and cook on medium flame for 3 to 4 minutes or until the sugar dissolves.
Now add in cardamom powder and Saffron milk, mix everything together and switch off the flame.
Fry cashews and raisins in ghee separately and add it to the kheer.
Delicious sabudana Kheer is ready to serve..you can serve it as it is or chilled.

Note: important step here is, once the pressure releases from the cooker immediately we need to pour milk otherwise sabudana gets thick and it will be difficult to break the lumps.

ವರಮಹಾಲಕ್ಷ್ಮಿ ನೈವೇದ್ಯಕ್ಕೆ ಅನ್ನದ ಕೇಸರಿ ಭಾತ್ /ಶಾಲ್ಯಾನ್ನ!

varamahalakshmi special rice kesaribhath/ shalyanna!

ingredients list:

Sannakki/gandhasale akki/jeera rice 1 cup
Water 3.5 cups
Sugar 1 1/4th cup
Ghee 3/4th cup
Salt a pinch
Saffron strands a few
Milk 2 tb sp
Food color 2 drops
Cashew and raisins a few

Method:

1.Wash and cook rice in pressure cooker by adding a tsp ghee and pinch salt upto 3 whistles.
2.soak saffron strands in warm milk.
3.as soon as rice is done transfer it to a heavy bottomed kadai. Add sugar, ghee and cook on medium flame.once the sugar dissolves add in saffron milk and food color.keep cooking until it reaches the stage shown in video.it starts leaving bottom and forms a mass, ghee separates. Add in ghee fried cashews and raisins. Delicious rice kesaribath is ready to serve.

Note.
1.Make sure you use exact variety of rice(scented rice) to make this sweet recipe.
2.however if you do not get this rice go ahead with your normal raw rice and add in cardamom powder at the end.taste differs but still you can enjoy the rice kesaribath.
3.you can add 2 tsp lime juice to cooked rice while adding sugar.
4.in case if your rice is not cooked fully, add some water and cook for some time and then add sugar.this will help.

ಅಮ್ಮ ಮಾಡುವ ಹುರುಳಿ ಸಾರು/huruli kattina saaru/huruli saaru/horsegram rasam/bassaru-palya

Fry these ingredients and grind using 2 tb sp

ಹಲಸಿನ ಹಣ್ಣಿನ ಮುಳ್ಕ| Halasina hannina mulka recipe | jackfruit sweet fritters recipe

Ingredients:
jackfruit 1 cup
white rice 1/2 cup (any variety)
jaggery as needed
oil to deep fry

method: soak rice for an hour. grind with fruit and jaggery.no need to add water.if it's difficult to grind then add a very little quantity. consistency should be like as shown in the video. heat oil and deep fry. flame should be low to medium. once they turn golden color take them out on a tissue paper.these are soft and flavourful sweet fritters with ultimate taste. we call this mulka.
note: for this preparation 1/4th cup of grated coconut and a pinch of salt can be added while grinding. its optional .

ಬೇಳೆ ಹೋಳಿಗೆ/ಒಬ್ಬಟ್ಟು /bele holige easy method

ingredients for kanaka :
Wheat flour 1 cup
maida.1/2 cup
salt a pinch
turmeric a pinch
oil 1/4th cup
water as needed to make kanaka

ingredients for hoorana:
channa dal 1 cup(200 gm)
jaggery powder 1.5 cups(200 gm)
elachi 4-5

method :
1. in a basin add wheat flour, maida,salt,turmeric mix once and add water to make slightly loose dough. add in oil now and knead again for 5 to 10 minutes.finally cover it with a tb sp oil and rest for one hour.
2. wash and soak channa dal in warm water for 1/2 an hour. then pressure cook using a tsp oil for 4-5 whistles. once the pressure comes down strain it. the water can be used to prepare holige saaru.
3.add this cooked dal to a kadai. Using a masher mash it to a fine paste.now add jaggery powder .mix until all the moisture gets evaporated.finally add elachi powder and mix once. cool down completely.
4.now make equal size balls from this hoorana. take small portion from kanaka which is half of hoorana size, dip in flour spread using your palm and fingers. fill in hoorana to kanaka and close it gently as shown in video. now dust flour and roll using rolling pin to a thin circle. if you have practice you can directly take it out by hand and put on tawa or use a spatula to place on tawa. cook on both sides by adding ghee. enjoy with ghee and milk.

ಬೇಕಾಗುವ ಸಾಮಗ್ರಿಗಳು
ಕಣಕಕ್ಕೆ:
ಚಿರೋಟಿ ರವೆ ೨೦೦ ಗ್ರ್ಯಾಂ(೨ ಕಪ್)
ಮೈದಾ ೪೦ಗ್ರ್ಯಾಂ
ಎಣ್ಣೆ ೨ ಚಮಚ

ಹೂರಣಕ್ಕೆ:
ಕಾಯಿ ತುರಿ ೩ ಕಪ್(೨ ಕಾಯಿ)
ಬೆಲ್ಲದ ಪುಡಿ ೨.೫ ಕಪ್
ಏಲಕ್ಕಿ ಪುಡಿ ೧ ಚಮಚ

Ingredients:
for kanaka
chiroti rava 2 cups(200 gms)
maida little less than 1/2 cup(40gms)
salt a pinch(optional)
oil 2 tb sp

hoorana:
shredded coconut 3 cups(from 2 coconuts)
jaggery powder/jaggery 2.5 cups or a little more
cardamom 2-3 or powder 1 tsp

ಯುಗಾದಿಗೆ ಕ್ಯಾರೆಟ್ ಹೋಳಿಗೆ/ ಕಣಕ ಮಾಡುವ ಸರಿಯಾದ ಕ್ರಮ/carrot holige/ugadi recipe/holige/obbattu/puran poli

Ingredients:
for hoorana:
Carrot 5-6 nos
Desiccated coconut half cup
Jaggery three fourth cup
Cardamom

For kanaka:
Maida 1 cup
Chiroti rava 1/4th cup
Oil one fourth cup
Turmeric
salt

Method: at first make Kanaka using the ingredients shown above. Mix everything together by adding water and make a slightly thin dough. Apply oil on top cover and rest for 1 to 2 hours. Work on the dough after resting by adding a little oil knead well for another 5 to 10 minutes so that it becomes very thin and very soft as shown in the video. Keep it ready for the next preparation.

How to prepare Hoorna: at first cut carrots into small chunks and steam cook for 5 to 10 minutes. Grind it along with a cup of fresh coconut or dry coconut and a few cardamom to a fine paste. Grind it by adding water to make a smooth paste.
place a Kadai on stove add some ghee and then add this ground carrot paste. cook on medium flame until the moisture goes away slightly. Now add in required quantity of jaggery I am adding three fourth cup of jaggery you can also add equal quantity of sugar to this. Cook again until the mixture turns slightly thick. Finally you can add in some desiccated coconut that is fine coconut powder. I am adding this to give a perfect texture to hoorana. In place of desiccated coconut you can also add badam powder or slightly roasted chiroti rava or Jamun mix etc. Once this hoorana cools down Make medium lemon size balls.
Take equal portion of Kanaka and then spread it on your palm stuff in the hoorana and then close it from all sides to make a round ball again. Roll it over a oiled parchment paper or holige paper or banana leaf to a thin round holige. cook on hot tawa on both sides by applying oil or ghee. Do not stack them over soon after making, spread separately for a while and store in a container.
Enjoy delicious carrot Holige with ghee on this festival day.
