The average pack of ham is €4 for 120g, but you can buy a 1.4kg ham for €6 and it’s so much tastier and has less additives and ingredients.Unless you are buying organic nitrate free ham, all ham will have some additives and nitrates, but making your own can reduce the add ins! And of course if you can afford organic, go for it!Ingredients:1.4kg ham (mine was €6 in @supervalu_irl)1 cup of apple/pineapple juice or stockMy kids like it plain but you can add herbs, or a honey glaze or peppercorns, bay leaf etc, it’s very versatile!Method:Just pop it into your slow cooker, add the liquid and cook on high for 4 hours.Remove from your slow cooker and allow to cool. Then the key to perfect slicing is to wrap it in baking paper or tinfoil, refrigerate and then slice it up the next day! Homemade Kefir Milk 🥛
Save on expensive probiotics and make your own! Kefir milk is magic stuff for your gut health! It’s rich in probiotics, it supports your digestive health, boosts your immune system, and enhances nutrient absorption. It’s also packed with essential vitamins and minerals like calcium, vitamin D, and B vitamins, making it a super nutritious addition to your family’s diet.

What you need:
1 tsp kefir grains
100ml of whole milk
The ratio is 1 tsp to 100ml so as the grains grow so does the amount of milk you use.
How to make:
Ensure all your utensils, jars, and lids are fully clean.
Place the kefir grains in a clean glass jar.
Pour the milk over the kefir grains, and cover with a clean muslin cloth or paper towel. This allows the kefir to breathe while keeping out any contaminants.
Place the jar in a warm, shaded spot and let it ferment undisturbed for 24-48 hours.
The fermentation time depends on the temperature and your taste preference. A shorter time produces a milder kefir, while a longer time produces a tangier, thicker kefir, or a yogurt.
After the kefir has fermented, pour it through a plastic or stainless steel strainer into another clean jar/jug, using a spoon to help it sieve through. This separates the kefir grains from the finished kefir milk. Do not use anything metal as it reacts with the grains.
Transfer the strained kefir milk to a jar with a lid and refrigerate. It can be stored in the fridge for up to a week.
The kefir grains can be reused then to make a fresh batch! I always have one on the go and some kefir milk in the fridge.

Air Fryer Popcorn Chicken 🍿🍗
This recipe was featured in a few news articles as a healthy homemade KFC option!
My kids love popcorn chicken and this is a nice healthier version in the air fryer that still tastes finger licking good!
Ingredients:
500g chicken breasts, cut into bite-sized pieces
1 cup buttermilk or dairy/plant milk
1 ½ cups plain flour
1 tsp garlic powder
2 tsps smoked paprika
Salt & pepper
1-2 tbsp olive oil
Instructions:
Marinate the chicken pieces in the milk with 1 tsp of the paprika and salt and pepper and cover and leave in fridge for ideally 1-2 hours or longer!
In a bowl, combine the flour, garlic powder, remaining smoked paprika, salt, and black pepper to create the coating mixture.
Preheat your air fryer to 200°C on the air fry setting.
Remove each piece of chicken from the milk, dunk each piece in the flour mixture, then back in the milk then the flour again.
Brush some olive oil onto base of Air fryer and add the chicken pieces in a single layer leaving space between them to allow for even cooking.
Lightly brush the top of the chicken pieces, this helps to achieve a crispy texture.
Air fry for 8-10 minutes until golden brown and cooked through. You may need to shake the basket halfway through to ensure even cooking.
Serve the with your favorite dipping sauces and enjoy! I make a spicy mayo mix with mayonnaise, ketchup, sriracha, lemon and paprika.
Note: Cooking times may vary slightly depending on your air fryer model, so it’s recommended to check the chicken’s internal temp to ensure it’s fully cooked.

Air Fryer Sausage & Cranberry Balls 🎄
One of my favourite east Christmas nibbles and perfect for Christmas morning with a yummy cranberry mimosa!

Ingredients
1/2 large onion diced
5-6 sprigs of rosemary the leaves separated from stems
I pack of high quality sausage meat
1 cup of grated cheese, I used a mix of cheddar and mozzarella
1 heaped tbsp of cranberry sauce
Salt & pepper
1 tbsp butter
Sauté the onion and rosemary in the butter until soft, then leave to cool.
Then add to remaining ingredients in a bowl and just use your hands to combine and roll into bite sized balls!
Cook in your airfryer for 10-12 minutes until browned and then serve with some cranberry sauce.
Deliciously cheesy and festive and make a double batch as they won’t last long!!

Air Fryer Bubble & Squeak
This is a great way to use up leftover vegetables, perfect for a weekend brunch with a poached egg on top!
You need need exact measurements just use up what you have, but mine was roughly the below.
Ingredients:
280g mashed potatoes,cold
3-4 bacon slices, cooked & chopped
100g cooked carrots, chopped
80 g cooked cabbage, chopped
1-2 tbsp olive oil
Method:
Preheat Air fryer to 200c.
Add a liner or baking paper.
Mix all the bubble & squeak ingredients together and use an ice cream scoop to make even sized parties.
Brush them with sone olive oil and pop them oil sizes down into your Air fryer. Then brush the top with some oil.
Air fry for about 8 minutes, then flip them, be careful as they are still soft at this stage, then do another 8 minutes then until nice and crispy! You can do a couple of minutes max crisp at the end either.
They are crispy on the outside and soft and fluffy on the inside, enjoy!!

Homemade Pizza Friday 🍕🍕
It’s always Pizza Friday here and it’s actually really easy to make at home and contains just a few basic ingredients. You don’t have to use a mixer but if you have one it literally makes it for you.
It’s healthier, cheaper and tastes amazing!
Ingredients:
4 cups (500g) of good quality 00 Flour
1.5 cups (350 ml) of water
1.5 tsp of sea salt
2 tsp of active dry yeast
2 tbsp of extra virgin olive oil
Method:
Add all ingredients into your mixer and attach the dough hook, mix the ingredients on low speed for about 1-2 minutes until they come together into a dough.
Increase the speed to medium and knead the dough for 5-7 minutes until it becomes smooth and elastic.
If mixing my hand, add all ingredients into a large bowel and stir with a wooden spoon until a dough starts to form. Continue mixing by hand until the pizza dough comes together in a ball. Place the dough onto a lightly floured surface and knead with both hands for about 10 minutes, until it’s firm and stretchy.
For both above methods, then shape the dough into a ball and place it in a greased bowl, rub a little oil on top too and cover it with a clean damp kitchen towel and let it rise in a warm place for 1 hour, or until it has doubled in size. (Hot press works for me or some appliances have a “prove” setting)
Once the dough has risen, punch it down to release the air. Divide the dough into four equal portions.
Using your hands or on a lightly floured surface, roll out each portion of dough into your desired pizza shape. You can make any shape you prefer.
Preheat your oven on highest setting for 15 minutes, once it’s hot pop pizza in on a stone or baking tray and rotate a couple of times for even cooking. It should only take about 10 minutes.
