Walking Taco Casserole
This bold, cheesy taco bake from deesviral brings all the flavors of a loaded walking taco into one easy, family-friendly casserole. It is quick to make, hearty, and always a crowd favorite.
Ingredients:
• 1 lb ground beef
• 1 small onion, chopped
• 1 packet taco seasoning
• 1 can (15 oz) black beans, drained
• 1 can (15 oz) corn, drained
• 1 can (10 oz) Rotel tomatoes with green chilies
• 2 cups crushed corn chips or tortilla chips
• 2 cups shredded cheddar or Mexican-blend cheese
• ½ cup sour cream
• Optional toppings: lettuce, tomatoes, jalapeños, green onions
Directions:
Brown the ground beef with the onion in a skillet, then drain excess fat.
Stir in taco seasoning, beans, corn, and Rotel, and simmer for 5 minutes.
Spread half of the crushed chips in a greased baking dish, then add the beef mixture.
Top with sour cream and sprinkle with cheese. Add the remaining chips on top.
Bake at 375°F (190°C) for 20–25 minutes until hot and bubbly.
