The Most Delicious Lemon Cake In 7 Easy Steps 🍋

Ingredients:
Egg yolks 2 pcs
Egg whites 2 pcs
Sugar 100 g
Milk 70 g
Butter 40 g
Oil (grape seed oil or refined sunflower oil) 40 g
Flour 130 g
Corn starch 35 g
Baking powder 1/2 tsp
Baking soda 1/2 tsp
Lemon juice 40 g
Zest of 2 lemons
A pinch of salt
Powdered sugar 120 g
Lemon juice 20 g
❗️ Use Room Temperature Ingredients.
🔹 Turn oven on at 360°F (180°C) before cooking.
Step 1.
Separate the egg whites from the yolks, put the whites aside for now, and rub the yolks with sugar until a homogeneous light mixture.
Step 2.
Add milk, butter and oil to the mixture, you can use grape seed oil or refined sunflower oil. Mix up.
Step 3.
Sift flour, cornstarch, baking powder and baking soda into the mixture, mix until smooth.
Step 4.
Grate the zest of two lemons on a fine grater and add to the batter with lemon juice, stir.
Step 5.
Beat two egg whites with a pinch of salt into a white, stable fluffy mass. Add them to the batter and mix gently while maintaining airiness.
Step 6.
Grease a baking dish and line it with parchment paper, pour the batter into the baking dish. Bake in a preheated oven at 360°F (180°C) for about 40-45 minutes. Remove from the oven when done and let cool completely.
❗️ Check for doneness using a wooden skewer or toothpick.
Step 7.
Mix powdered sugar with lemon juice and immediately apply to the cooled cake, sprinkle lemon zest on top.
❗️ Act quickly before the sugar glaze sets.
